Molasses and strong coffee bring depth of flavor these easy grilled pork chops. The well-balanced marinade does double duty as a thick and flavorful glaze that transforms the humble chop into an entree special enough for company. This recipe first appeared in Season 12 of Good Eats.

1 cup strong coffee, at room temperature
6 ounces molasses, by weight
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon ground ginger
6 to 8 sprigs fresh thyme
1/2 teaspoon freshly ground black pepper
4 (6- to 8-ounce) 1-inch thick, bone-in pork chops

Steps:

  • Combine all of the ingredients in a 1-gallon zip-top bag, seal, and shake to combine. Place in the refrigerator to marinate for at least 2 hours or up to overnight.
  • When ready to cook, heat a grill to medium-high.
  • Remove the pork chops from the marinade. Transfer the marinade to a small saucepan and place over high heat. Bring to a boil, reduce heat to medium-high, and boil gently, stirring often, until reduced to about 1/2 cup, 12 to 15 minutes. Remove the thyme stems after the glaze has reduced.
  • Meanwhile, grill the pork chops until they reach an internal temperature of 145ºF, 3 to 4 minutes per side. Allow the pork chops to rest 5 minutes before serving with the glaze.

Steps:

1 cup strong brewed coffee
1/4 cup molasses
6 fresh thyme sprigs
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon ground ginger
4 bone-in pork loin chops (1 inch thick)

Steps:

  • In a large bowl, combine the first nine ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate at least 2 hours. Cover and refrigerate remaining coffee mixture until ready to cook., For glaze, place remaining coffee mixture in a small saucepan. Bring to a boil; cook until liquid is reduced to about 1/2 cup., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill chops, covered, over medium heat or broil 4-5 in. from the heat 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°). 2 tablespoons firmly packed light brown sugar
Kosher salt and freshly ground black pepper

Steps:

  • Position an oven rack in the top third of the oven and preheat the broiler to high.
  • Combine the coffee, brown sugar, 1 1/2 teaspoons salt, 1 teaspoon black pepper, garlic powder, crushed red pepper, cumin and paprika in a small bowl and mix well. Drizzle the pork tenderloin with 2 tablespoons olive oil and evenly sprinkle the rub all over, patting to adhere. Let marinate at room temperature for 30 minutes.
  • Toss the green beans in a large bowl with 3 tablespoons olive oil, 1 teaspoon salt and 1/4 teaspoon black pepper until well coated.
  • Put the pork in the center of a large cast-iron skillet or heavy ovenproof skillet and scatter the green beans around it. (The pork should be directly on the pan, not on top of the green beans.) Broil for 10 to 12 minutes, flipping the pork and tossing the green beans halfway through cooking. When ready, an instant-read thermometer inserted in the center of the pork should register 145 degrees F and the green beans should be tender and lightly charred.
  • Allow the pork to rest for 10 minutes before slicing across the grain. Serve with the green beans.

1 tablespoon brown sugar
1 tablespoon chili powder

Steps:

  • Marinade with Coffee: In a bowl, mix all ingredients. Set aside.
  • Preheat barbecue to high heat. Oil grill grate.
  • Rub the tenderloins with about 2 tablespoon of dry marinade on each. Let rest 10 minutes. Keep the remaining marinade in an hermetic container at room temperature.
  • Reduce barbecue to medium heat. Grill pork tenderloins about 15 minutes, flipping them at regular interval. Let rest 5 minutes before slicing the meat.
  • Oven Cooking : Brown the pork tenderloins in a non-stick skillet (ovenproof) and cook in center of oven to 350 F about 15 to 18 minutes, depending on the size of your pork tenderloins.

3/4 cup strong brewed coffee
1 cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons Italian seasonings
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 teaspoon kosher salt
3 pound chuck roast

Steps:

  • Make the marinade by combining brewed coffee, brown sugar, Worcestershire sauce, Italian seasonings, smoked paprika, garlic and salt in a saucepan. Cook over medium- high heat, whisking together until mixture comes to a boil. Remove from heat and cool slightly. Pat chuck roast dry with paper towels and place in a shallow dish or zip top bag. Pour marinade over meat, coating all sides. Allow meat to marinate at least 30 minutes before grilling. Prepare grill fire to 300° with hickory wood for smoke flavor. Place marinated roast over an indirect fire and baste with marinade. Cook with the lid closed for 15 minutes. Baste roast once more with marinade and then discard any remaining marinade. Continue to cook with the lid closed, 30-45 minutes or until roast has reached desired doneness. 145° will be medium. Remove from grill and allow to rest 15 minutes before slicing.

1/4 cup low-sodium soy sauce (or tamari)
