CHEESY SMOKED SAUSAGE CASSEROLE

My version of my grandmother's layered elbow, smoked sausage, stewed tomato, and cheese casserole.

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

My Mom used to make this for us, after she was just a little too old to stand in the kitchen for too long...It was one of her favorites that was easy to make, yet tasted like good old-fashioned comfort food...Sure do miss my Mom!!!

2 cups macaroni, cooked and drained, and tossed with
2 tablespoons butter
1 lb sage sausage, browned, broken into chunks and drained of grease (Weber brand was my Mom's favorite, but I prefer Jimmy Dean's)
1 (16 ounce) jar spaghetti sauce (Classico was the only brand Mom would use for this.)
1 (6 ounce) jar sliced button mushrooms, drained
1 (16 ounce) package shredded mozzarella cheese
1/2 cup romano cheese, grated (Kraft)

Steps:

  • In a 2 quart, ungreased casserole dish, layer twice: 1/2 cooked macaroni, 1/2 cooked sausage, then 1/2 sauce, 1/2 mushrooms, 1/2 shredded cheese. Do the same layering again.
  • Sprinkle Romano cheese on top.
  • Bake in a preheated 350 degree oven for 30-40 minutes, until cheese is slightly browned and casserole is bubbly.

1 lb skinless smoked sausage (ham or hot dogs will work too)
⅛ tsp paprika

Steps:

  • Preheat oven to 350°.
  • Cut sausage in half, lengthwise, and chop into bite size pieces.
  • Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked potatoes in a 2 qt casserole dish. Add cooked meat and toss.
  • Mix remaining ingredients (minus the cheddar cheese & paprika) in a saucepan over medium heat until warm, creating a roux). Cook until cheese is melted and sauce is smooth. Use a whisk and stir constantly.
  • Pour sauce over potatoes and meat and gently mix until incorporated.
  • Sprinkle cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake for 35-45 minutes, or until golden brown on top.

Potatoes, smoked sausage and corn enveloped in a cheddar and sour cream sauce. A perfect dinner or a side dish for a potluck.

1 cup chicken broth
1 ½ pounds Russet potatoes, peeled and cubed
1 (12 oz) package of precooked smoked sausage, sliced into thin quarter inch slices
1 (12 oz) package frozen corn
1 tsp kosher salt
1 tsp garlic powder
½ tsp black pepper
1 tsp onion powder
1 cup sour cream
1 cup grated sharp cheddar cheese
2-3 Tbsp cornstarch or instant potato flakes

Steps:

  • Pour chicken broth into bottom of Instant Pot. Then add in the potatoes, sausage, corn, salt, garlic powder, pepper and onion powder.
  • Cover the Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When the time is up let the pot sit for 5-10 minutes then move the valve to venting. Remove the lid.
  • Stir in the sour cream and the cheddar.
  • Then thicken the potatoes by adding in a cornstarch slurry or the potato flakes. To make a slurry mix equal parts cornstarch with cold water and stir until smooth. Stir the mixture into the Instant Pot and turn the Instant Pot to the saute setting. It will thicken within a couple of minutes. You can also use potato flakes to thicken . Turn Instant Pot to saute and add in potato flakes a tablespoon at a time until potatoes reach your desired consistency.
  • Scoop potatoes and sauce onto serving plates and enjoy.
