GRANDMA'S ANYTHING GOES STRATA
Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
- Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
- Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.
COCO'S STRATA
This is a really simple breakfast or main dish egg strata. It is my daughter's (Coco) favorite. It isn't fancy, but easy to do, great for a make-ahead meal and tastes great! I hope you like it.

Steps:
- Pre-heat oven to 350.
- Grease 9 x 13 pan.
- Fry sausage, breaking it up (like ground beef) as it cooks then drain on paper towels.
- Tear bread into bite-sized pieces and place in pan.
- Sprinkle cooked sausage then cheese evenly over bread.
- In a medium bowl, combine eggs, salt, Worcestershire sauce and milk, and whisk together with wire whisk until combined.
- Pour over bread mixture then sprinkle bacon over the top.
- Bake 35-40 minutes at 350, checking bacon after 25 minutes- if it looks too brown, cover with foil for rest of cooking time.
- This can be prepared up to the night before (just increase cooking time to 55-60 minutes if prepared in advance).
