2 unbaked pastry shells
1 pound bulk Italian sausage
4 cups (16 ounces) finely shredded part-skim mozzarella cheese
1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
6 large eggs
2 cups 2% milk
1 teaspoon minced garlic
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400°. Line unpricked crusts with a double thickness of heavy-duty foil. Bake 4 minutes. Remove foil; bake 4 minutes longer. Remove from oven; leave oven on., In a large skillet, cook sausage over medium heat until no longer pink; drain. Spoon sausage into crusts; sprinkle with mozzarella cheese. Top with onion and peppers. In a large bowl, whisk eggs, milk and garlic. Pour over peppers; sprinkle with Parmesan cheese., Cover edges of quiches loosely with foil; place on a baking sheet. Bake at 400° 35-40 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting. Freeze option: Cover and freeze unbaked quiches up to 3 months. To use, remove from the freezer 30 minutes before baking (do not thaw). Preheat oven to 400°. Cover edges of crust loosely with foil; place on a baking sheet. Bake 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

1 (16 ounce) carton ricotta cheese

2 (10 ounce) packages frozen chopped spinach, thawed and well drained
1/2 cup yellow onion, chopped
1/4 cup red bell pepper, chopped
1 dash kosher salt
1 dash white pepper
1 teaspoon dried oregano leaves, rub between fingers to waken flavor
1 teaspoon dried basil leaves, rub between fingers to waken flavor
1/2 teaspoon onion powder
hot sauce, to taste (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Bake pie shells for 5 minutes.
  • Meanwhile, in a large mixing bowl thoroughly combine the remaining ingredients.
  • Pour the filling into the pie shells.
  • Bake for 35 to 45 minutes, or until set.

1 tablespoon olive oil
1/4 lb hot Italian sausage
1 clove garlic, minced
1/2 small white onion, chopped
1 ready to bake deep dish pie shell
1 cup broccoli floret
1 cup cheese, any type you wish,i use half cheddar,half monterey jack,divided
3 eggs
1 cup half-and-half

Steps:

  • Heat olive oil in a skillet; add sausage, garlic and onions and saute until brown.
  • Remove from heat and slice sausage into smaller pieces.
  • Arrange meat mixture in the pie crust; add broccoli and 3/4 cup cheese to the pie crust.
  • In a bowl, beat together eggs and half-and-half.
  • Pour egg mixture slowly over ingredients in pie crust, being careful not to pour above the ridge of the pie pan.
  • Sprinkle remaining 1/4 cup cheese on top.
  • Place in center of preheated 350° oven and bake for 45 minutes.

Pastry for double-crust pie
1 pound bulk pork sausage
5 large eggs
1/2 cup 2% milk
1/3 cup mayonnaise
1 teaspoon salt
1 teaspoon pepper
2 cups shredded sharp cheddar cheese
1 can (4 ounces) diced jalapeno peppers, drained
5 green onions, chopped

Steps:

  • Preheat oven to 400º. On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Repeat with remaining dough. Refrigerate 30 minutes. Line unpricked crusts with a double thickness of heavy-duty foil. Bake for 10 minutes. Remove the foil; bake 5 minutes longer. Cool on wire racks., Meanwhile, in a large skillet, cook pork over medium heat until no longer pink, 7-9 minutes; drain. In a large bowl, whisk eggs, milk, mayonnaise, salt and pepper. 1 sheet shortcrust pastry dough (ready rolled)
3/4 lb Italian sausage
2 garlic cloves, crushed
3/4 red onion, finely diced
3 large eggs
3/4 cup heavy cream
1 cup grated cheddar cheese
salt and pepper, to taste

Steps:

  • Preheat the oven to 350°F or 180°C.
  • Lay the sheet of pastry dough over a 9-inch quiche pan, pressing the dough gently into the crimped edges. Cut away any excess dough so the pastry is level with the top of the pan.
  • Prick the base of the pastry with a fork.
  • In a skillet over medium heat, start to cook the italian sausage and crushed garlic. Cook for 8-10 minutes, mashing the italian sausage into small chunks with the spatula.
  • Add the red onion and cook for a further 2 minutes.
  • Remove from the heat. Evenly spoon the italian sausage and red onion into the pastry shell.
  • Scatter the cheese over the sausage mixture.
  • Mix the eggs and cream together and season with salt and pepper to taste.
  • Pour carefully over the other ingredients in the pastry shell, leaving a little space for the mixture to rise slightly in the oven.
  • Bake in the oven for 40-45 minutes or until the egg mixture is cooked and set.
  • Let stand for 5 minutes before cutting.
  • Serve hot or cold!

3/4 pound russet potato, cubed and steamed until tender
1 cup finely grated Parmesan (4 ounces)

Steps:

  • Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. Remove parchment and weights.
