COCONUT-LIME MARINATED AND GRILLED SHRIMP



Coconut-Lime Marinated and Grilled Shrimp image

The quick and easy marinade in this recipe is a great way to use up that leftover coconut milk you have in your refrigerator. It adds a touch of sweetness to grilled shrimp and only takes 30 minutes to infuse tremendous flavor into your next dinner. Serve with steamed white rice or cold rice noodles for a light but delicious meal.

3 large limes (about 10 ounces)
One 1/2-inch piece fresh ginger
2 large cloves garlic
1/4 to 1/2 teaspoon crushed red pepper flakes, to taste
2 tablespoons canola oil
1/3 cup canned coconut milk
Kosher salt
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and 1/4 cup juice) and add to a medium glass bowl. Peel and grate the ginger and garlic and add to the bowl along with the red pepper flakes, canola oil, coconut milk and 1 1/2 teaspoons salt. Stir to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges. Reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels; don't worry if the coconut milk has hardened while it was in the refrigerator. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Top with the sliced scallion and serve with the reserved lime wedges.

1 lb large shrimp, peeled and tails on
1 large papaya, 2-inch bite size pieces
1 medium onion, cut in quarters 2-inch bite size pieces
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup dark rum
1/4 cup orange juice
1 tablespoon lime juice
1 tablespoon vegetable oil
1 teaspoon garlic, minced
1/2 teaspoon ground ginger
1/2 teaspoon red pepper flakes (to taste)
2 cups jasmine rice
1 1/2 cups water
1 cup unsweetened coconut milk
2 teaspoons cilantro, chopped
salt
pepper

Steps:

  • Marinade -- Mix the rum, citrus juice, olive oil, garlic, ginger and red pepper flakes in a large baggie and shake well to combine the flavors. Add the shrimp and marinade 2-3 hours. NO longer. The last 30 minutes add the pieces of onion and papaya.
  • Skewer -- I like to use bamboo, but use anything you like. I don't find it necessary to soak the bamboo other than just a minute or two. The shrimp is so quick cooking, just a quick soak or rinse if fine for me. Alternate shrimp, papaya onion and just keep going. Don't over crowd the skewer. That way each item cook all the way through. Season with salt and pepper. Any leftover marinade I just reheat in the microwave and then use to brush on the skewers as they grill.
  • Grilling -- After making your skewers, let them set and come to room temp before grilling. They can be grilled outside, charcoal or gas or can be done inside on a grill pan. NOW -- make the rice --
  • Rice -- Bring the water, coconut and salt to a boil and add the rice. Most recipes will take about 15 minutes to cook covered. Just follow the recipe on the package. Each rice brand can take different times. Once light and fluffy add the cilantro and any salt and pepper is needed.
  • Serve the skewers over the coconut rice. I love to serve this with simple sauteed sugar snap peas. A little butter, red pepper flakes, salt and pepper. 3-4 minutes and serve. But use any veggie you enjoy. Bok Choy pan seared is also great with this.

3/4 cup dark rum
1/2 cup pina colada nonalcoholic drink mix
1/4 honey
1 teaspoon vanilla extract
1 teaspoon ground allspice

  • Mix the marinade ingredients in a nonreactive bowl
  • Then add shrimp and marinate for at least 10 minutes but no longer than 30.
  • Preheat grill to medium heat and grill shrimp for about 2 - 4 minutes per side, being careful not to over cook them as they will become tough and chewy.
  • ENJOY!

4 ounces peeled precooked, frozen shrimp
3/4 teaspoon lime juice
3 -4 large garlic cloves, crushed
2 tablespoons butter
2 tablespoons olive oil
1 -2 teaspoon white pepper
1 egg
1/2 cup coconut, sweetened

Steps:

  • Turn on a stove to between medium and high, and place a frying pan on the stovetop to preheat.
  • Place the oil on and about a minute later, the butter. Wait until the butter is melted, then drop the garlic in the pan.
  • When it has browned slightly put the lime juice in, and immediatley after, the shrimp.
  • About 2-3 minutes later, when it's about halfway done cooking, put in the white pepper. When it's cooked take the shrimp out of the pan and put it on a plate. Keep the pan hot, but on medium.
  • Place the coconut into a pie pan or bowl. Whisk the egg.
  • A few at a time, dip the shrimp into the egg, and then immediatley dip both sides in coconut. Place back in frying pan. Continue until all shrimp is "coconut coated", while simultaneously flipping, and then taking the shrimp out of the pan as it brown. It will take about 90 seconds per side.

32 shrimp, medium-size (about 2 pounds)
4 limes, juice of (about 8 tablespoons)
1 1/2 cups pineapple juice, canned
1/2 cup dark rum
2 tablespoons cilantro, finely chopped
1 teaspoon garlic clove, chopped
1/8 teaspoon salt, to taste
1/8 teaspoon ground pepper, to taste

Steps:

  • Clean & trim shrimp & make 1/4-inch-deep incision on the top of each one (the side without the feet) from tail to head, then under cold running water, open the incision & wash away any brownish-black matter (including the thin, dark vein).
  • In a large nonreactive) stainless steel or glass bowl, combine lime juice, pineapple juice, rum, cilantro & garlic, then salt & pepper to taste.
  • Add shrimp, cover the refrigerate, allowing shrimp to marinate for as least 2 & not more than 3 hours.
  • Remove shrimp from the marinade & set the shrimp aside, discarding everything else.
  • Run a skewer through each shrimp, skewering it in the tail area & also in the thicker, upper area, fitting 8 shrimp on a 10-inch skewer. IF USING WOODEN SKEWERS, DO NOT LEAVE ANY GAPS BETWEEN THE SHRIMP!
  • Place shewered shrimp on the grill over medium-high heat & grill about 3-4 minutes on each side, until the shells turn bright red & the meat is an even, opaque white.
  • Remove shrimp from the grill & serve on a bed of Mango Lime Relish, either skewered or not, as you prefer.

13 ounces coconut milk
2 teaspoons green curry paste
1 tablespoon chopped gingerroot
1 tablespoon grated lime rind
2 tablespoons fish sauce
1 tablespoon granulated sugar
2 tablespoons chopped of fresh mint
2 tablespoons chopped fresh coriander
2 tablespoons lime juice
1 lb large shrimp
salt
1/4 cup unsweetened coconut

Steps:

  • Place coconut milk in a skillet and bring to boil. Reduce heat to low and simmer for 10 minutes until reduced by a quarter - it should be the consistency of heavy cream. Stir in the green curry paste, ginger, lime leaves, fish sauce and sugar. Cook another 5 to 6 minutes or until sauce is thickened and fragrant.
  • Stir in 1 tbsp each of mint and coriander and all of lime juice. Cool.
  • Divide sauce in half in 2 bowls. Season shrimp with salt and stir into half of sauce.
  • Marinate shrimp in sauce for 30 minutes. Reserve other half of sauce for dipping sauce.
  • Remove shrimps from marinade and discard marinade.
  • Preheat grill on high and grill shrimps about 1½ minutes per side or until pink and slightly curled. Cool. Stir in coconut and remaining mint and coriander to dipping sauce. Serve with shrimps.
  • Place shrimps on bamboo skewers, if desired.
