MONTE CRISTO CASSEROLE
Monte Cristo Casserole is a delicious treat that is great for breakfast or brunch. Now don't get me wrong, we may have eaten it a time or two for supper too! Made with delicious French bread and smoky ham it is a delight for any special occasion. And that Raspberry sauce is pretty awesome too!

Steps:
- Grease a 9 x13 baking pan. Place half of the cubed bread in the prepared pan. Sprinkle with the ham and cheese. In a small bowl, whisk the dijon mustard with 1 tablespoon water. Drizzle over ham, cheese and bread. Top with remainder of cubed bread.
- In a medium bowl, whisk eggs, milk, sugar, vanilla, salt and pepper. Pour over top of casserole. Cover and refrigerate at least 2 hours or overnight.
- Preheat oven to 375 degrees Fahrenheit. Uncover casserole and you should find that all liquid has been absorbed by the bread. In a small bowl, mix brown sugar, softened butter and nutmeg. Sprinkle over the top of the casserole and bake at 375 degrees for 30-40 minutes until browned and bubbly.
- While casserole is cooking, melt raspberry jam and water in a small sauce pan. Mix until smooth and thinned. Remove from heat and set aside. Serve casserole with Raspberry sauce or on the side.

- Preheat oven to 375 degrees F. Grease a large, deep baking dish with butter.
- Lay 6-8 slices of bread in an even layer in the bottom of the pan. Fold ham slices in half and place on top of the bread. Sprinkle about two-thirds of the cheese over the ham then top with more bread slices.
- In a large bowl, whisk together egg, milk, salt, pepper and nutmeg. Pour mixture evenly over the bread slices. If you have time, cover the casserole and let it sit in the fridge for 30 minutes. Otherwise, top with remaining cheese and transfer immediately to oven to bake until the cheese is bubbly and the top is golden, about 35 minutes.
- Sift powdered sugar over the casserole. Serve warm with raspberry preserves.
OVERNIGHT MONTE CRISTO CASSEROLE
Always looking for that "one new dish" to add to the Christmas Brunch repertoire, but really, it's good any old time. This may be just a little rich for every day, but whenever you absolutely need to make a party out of breakfast, this'll do it! A basic strata dressed up a little .... easy on the cook, and most of the prep can be farmed out to the kids the night before. Prep time does not include time spent in the refrigerator.

Steps:
- Butter a 9x12 casserole dish and set aside.
- Mix Dijon mustard, softened butter, and grated onion to blend.
- Spread mixture thinly on each slice of bread, and place one slice of ham and one slice of cheese within the crusts of two prepared slices to make a sandwich.
- Cut each sandwich into fourths, and then cut each fourth into triangular halves.
- Place the little triangles marching in rows lengthwise in the prepared casserole, with points up.
- In a separate mixing or batter bowl, beat the eggs just until lemony-looking; add milk and brown sugar, and whisk firmly until no lumps from the brown sugar show.
- Pour egg mix over the prepared sandwiches and cover the casserole with plastic wrap, sealing firmly, and place in refrigerator overnight, or for at least two hours.
- Preheat oven to 375 degrees F.
- While oven in preheating, remove casserole from refrigerator, take off plastic wrap and let rest on the counter to lose the "fridge chill".
- You may want to place the casserole on a rimmed cookie sheet to prevent spills during baking.
- Just before placing in oven, sprinkle lightly with paprika, more for effect than taste, really.
- Bake for 60 minutes, or until the center is set and the sandwich points are a nice golden brown.
- Let rest for ten minutes and then cut into individual serving portions.

- Preheat oven to 375^F.
- Pour milk in a microwaveable container and heat until hot.
- Whisk eggs in small bowl and add hot milk to eggs, blend.
- Cut French toast into 3/4 inch cubes; place in a large bowl.
- Pour egg mixture over bread cubes, toss gently, set aside.
- Combine ham, turkey, cheese and parsley in a bowl.
- Spray a 13x9x2 inch baking pan with cooking spray.
- Layer half the french toast cubes with half the meat mixture in bottom of pan.
- Repeat.
- Let stand for at least 10 minutes (It can be held overnight.) Set at room temperature for a few minutes before baking-or bake a little longer if it's cold.
- Bake 30-35 minutes until golden brown and set in center.
- Cool 10 minutes.
- Sprinkle with powdered sugar.
- Slice strawberries.
- Combine strawberries with strawberry ice cream topping in a small bowl.
- Cut casserole into squares.
- Serve topped with strawberry mixture.

- Preheat a griddle and deep fryer to 350 degrees F.
- Butter the griddle. Dunk the Texas toast on both sides in the French Toast Custard and grill until golden brown. Flip and add 1 slice Swiss cheese to each slice of toast. Then add 3 ounces ham on top of 6 of the toast slices, then top the ham with another slice of Swiss cheese. Top each ham and cheese toast with a cheese only toast, to form 6 sandwiches. Cook until the cheese melts, then remove from griddle and cool. Dunk the cooled sandwiches in the pancake batter until fully covered and put into the fryer. Cook until golden brown on both sides, about 8 minutes. Serve with the Strawberry-Rhubarb Syrup.
- Beat the eggs well, then add the sugar and mix until emulsified and all the sugar has dissolved. Add the milk and vanilla and whisk until combined.
- Add the strawberries, rhubarb, sugar and maple syrup to a saucepot. Place over medium heat and cook until fruit is soft, about 20 minutes. Let cool slightly, then carefully puree with a hand blender.

- Make the French toast: Whisk together the eggs, milk and vanilla in a medium bowl until smooth. Place the bread slices in the bowl of egg mixture and coat both sides. Heat 2 skillets (each large enough to hold 2 slices of bread) over medium heat. Add half of the butter to each. When the butter begins to foam and brown slightly on the edges, arrange 2 slices of bread in each skillet. Cook until the undersides have browned, 3 to 5 minutes. Turn the slices over and cook for an additional 3 to 5 minutes, reducing the heat to medium-low if the bread is browning too quickly. Transfer the French toast to a plate and let cool slightly. Wipe out the skillets. Preheat the oven to 350 degrees F.
- Cook the sandwiches: Return the skillets to medium heat and add about 1 tablespoon butter to each. Allow the butter to melt and froth, swirling to coat the bottoms of the skillets. Divide the eggs between the skillets and spread evenly on the bottoms. Arrange two slices of the French toast, slightly apart, in each skillet. Cook, shaking the skillets a little bit so the eggs don't stick, until the eggs on the bottom of the skillet sear and firm up, 1 to 2 minutes.
- Finish: Divide and spread the remaining butter on the tops of the 4 slices of French toast. Slide a spatula underneath the eggs and flip everything over so the buttered French toast slices are now on the bottoms of the skillets. Season with salt. Layer on top of one piece of French toast per skillet with the cheese, ham and turkey. Slide the spatula under one slice of the French toast and fold it over the other so it looks like a sandwich! Repeat with the second skillet. Transfer the skillets to the oven until the cheese melts and the centers get hot, about 3 minutes.
- Transfer the sandwiches to a cutting board and cut each in half. Serve two halves on each plate with maple syrup for drizzling and dunking.
MONTE CRISTO BAKE
This is like Monte Cristo Sandwiches, but is much easier! (It is essentially a strata!) Make sure that you eat these "sandwiches" with a fork (at the least) and enjoy! Note: Cooking time does not include time in the fridge.

- Trim 4 pieces of bread and put in the bottom of a 9 x 9 glass casserole.
- Evenly sprinkle 1 cup of cheese over the bread.
- Layer the turkey and ham evenly over the cheese.
- Evenly sprinkle the remaining cheese over the meat.
- Cover with the remaining pieces of bread.
- Beat together the eggs, milk, mustard, and onion powder, then pour over the bread.
- Press lightly on the bread with a fork, pushing down into the egg mixture.

A great brunch item! One of my husbands favorite filling, baked, french toast style, sandwiches filled with cheese, ham, turkey & mustard. Raspberry preserves is a must for him. Could be eaten for breakfast, lunch or dinner. This is a LESSER FAT Monte Cristo recipe being baked and not fried full of flavor! I also like to buy the low salt cold cuts or use fresh baked turkey leftovers sliced thin.

- Heat oven to 425°F.
- Lightly butter a baking sheet pan. I use the spray.
- Spread 1/2 teaspoon mustard on each slice of bread.
- Layer between mustard sides of two slices of bread, 1 slice cheese, 2 slices ham, 2 slices turkey, and another slice of cheese.
- Repeat to make four sandwiches. Whisk eggs, flour, butter, salt and pepper in a shallow dish until smooth.
- Blend in milk.

- Line a greased 13x9-in. baking dish with half of the bread. Spread mustard over bread.
