1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon ground chilli powder
800 gram diced pork
1 tablespoon vegetable oil
1 large (200g) brown onion, chopped
2 clove garlic, chopped
4 centimetre piece (20g) fresh ginger, grated
1 tablespoon water
400 millilitre can coconut cream or coconut milk
2 tablespoon brown sugar
1 teaspoon salt
1 tablespoon lemon juice
1/4 cup fresh coriander leaves, to serve

Steps:

  • Combine spices, add pork and toss to coat.
  • Heat half the oil in a large frying pan. Cook the pork in 2 batches, using the remaining oil, until browned all over. Remove from pan.
  • Add onion to same pan with garlic, ginger and water. Cook, stirring, over medium heat until softened.
  • Return pork to pan with coconut cream, sugar and salt. Simmer, covered, stirring occasionally, 1 hour - 1 hour 30 minutes, or until pork is tender and sauce is thickened.
  • Stir in juice. Season to taste with salt and pepper. Sprinkle with coriander.
  • Serve pork curry with steamed rice, pappadums and a tomato and onion salad, if desired.

Pork - 500g
Onion - 100g
Curry leaves - Few
Thin milk - 250ml
Water - 400ml
Curry powder - 2 tablespoons
Turmeric powder - ½ teaspoon
Mustard seeds - ¼ teaspoon
Fennel seeds - ½ teaspoon
Lime - ½
Salt - As you need
Cooking oil - As you need

Steps:

  • Take the pork and cut it into small pieces.
  • Add turmeric powder, salt, and water. Rinse it well. Repeat the same for one more time. (Refer Note 1)
  • Drain all the water and add turmeric powder and salt. Mix it well and leave it to marinate for 15 to 30 minutes.
  • Get ready with sliced onions, curry leaves, lime, curry powder, mustard seeds, fennel seeds, and coconut milk. (Refer Note 2 and Note 3)
  • Heat the oil and add mustard seeds. Let it splutter.
  • Add the onions and sauté it until it gets soft and translucent.
  • Add fennel seeds and curry leaves. Stir and cook until the onion turns into golden color.
  • Now, add the marinated pork.
  • Add the water and mix everything well.
  • Cook covered under the high flame for 13 to 15 minutes.
  • Take off the lid, stir and mix everything. Cook covered again under high flame until all the water disappears. For me, it takes about 5 minutes.
  • Now, take off the lid, cook uncovered and stir occasionally until the pork gets frying.
  • Add curry powder and coconut milk. (Refer Note 3)
  • Mix everything well and cook covered under low flame for 5 to 7 minutes. (Refer Note 4)
  • Finally, switch off the flame, add lime juice and mix everything.
  • Taste the gravy and add salt if needed.
  • Serve and enjoy this delicious and easy pork curry with coconut milk recipe in Sri Lankan style.

1 boneless pork butt (approximately 7 pounds)
50 fluid ounces coconut milk (recommended: Chaokoh)
250 grams yellow curry paste (recommended: Mae Ploy)
5 tablespoons finely chopped ginger
5 tablespoons finely chopped garlic
1 tablespoon Chinese fermented black beans, rinsed and chopped
1/4 cup sesame oil
8 to 10 kaffir lime leaves
1/4 bunch fresh cilantro
1/4 jalapeno pepper
4 cloves garlic
2 cups basmati rice
3 tablespoons butter
Salt and pepper
1 jalapeno pepper
1 poblano pepper
1 tablespoon cumin seeds
1 red onion
6 to 8 tomatoes
1/2 bunch fresh cilantro
2 limes, juiced
Salt and pepper
Corn tortillas, for serving

Steps:

  • For the pork: Preheat the oven to 350 degrees F. Rub the spices into the pork and roast for about 8 hours. Let cool. Pull apart and discard any fat. Put the pork pieces in a large pot and add the coconut milk.
  • Meanwhile, for the curry sauce: Saute the curry paste, ginger, garlic, and black beans in sesame oil until fragrant, 3 to 4 minutes. Add this mixture to the pot with the pork and coconut milk. Add the lime leaves. Braise on low heat for 1 to 2 hours.
  • For the rice: Blend the cilantro, jalapeno, garlic, and 1 cup of water. Put this mixture in a pot on the stove. Add the basmati rice. Add 2 1/2 cups water. Bring to a boil, and then simmer, covered, until the rice absorbs the liquid, 20 to 25 minutes. When done, add the butter and salt and pepper, to taste.
  • For the salsa: Roast the jalapeno and poblano peppers, peel, and remove the seeds. Toast the cumin seeds and then grind. Dice the tomatoes and red onion and mix together in a bowl with the other salsa ingredients.
  • Heat the corn tortillas on a griddle. Plate the rice, put the pork with sauce on top, and finish with salsa and tortillas.

2 teaspoons Madras curry powder
2 teaspoons packed light brown sugar
Grated zest and juice of 1 lime, plus wedges for serving
Kosher salt and freshly ground pepper
1 pound small red-skinned potatoes, halved or quartered if large
1 small bunch fresh cilantro, leaves whole, tender stems chopped
1 small red onion, halved and thinly sliced
1 13.5-ounce can light coconut milk (preferably Thai)
3 tablespoons Thai red curry paste
1 1/2 cups frozen French-cut green beans (about 6 ounces)
1 1/2 cups mung bean sprouts

Steps:

  • Toss the pork with the curry powder, 1 teaspoon brown sugar, the lime zest and a generous pinch each of salt and pepper in a large bowl; set aside. Put the potatoes in a 6- to 7-quart slow cooker and top with the cilantro stems and half of the red onion slices.
  • Whisk the coconut milk with 1/4 cup water and the curry paste in a small bowl. Pour into the slow cooker. Add the pork and nestle into the vegetables and sauce. Cover and cook on low, 7 hours.
  • Transfer the pork to a cutting board; let rest. Stir the green beans into the slow cooker and let stand, uncovered, 10 minutes. Toss the remaining red onion with the lime juice in a small bowl and let stand 10 minutes. Stir the remaining 1 teaspoon brown sugar into the curry sauce and season with salt and pepper.
  • Divide the green beans, potatoes and sauce among bowls. Slice the pork and add to the bowls. Top each serving with the onion and any remaining lime juice in the bowl, the bean sprouts and cilantro leaves. Serve with lime wedges.

1 tablespoon dried minced onion
1 cube chicken bouillon
½ teaspoon garlic powder
¼ teaspoon dried rosemary
¼ teaspoon dried thyme

½ teaspoon ground red pepper (cayenne), or more to taste
1 pound pork tenderloin, cut into strips
2 ½ tablespoons all-purpose flour
1 cup coconut milk
¼ cup natural peanut butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat water, dried onion, chicken bouillon, garlic powder, rosemary, thyme, and salt in a microwave-safe bowl for 1 minute in the microwave; let stand until onion is rehydrated and bouillon is dissolved.
  • Heat coconut oil, curry powder, and ground red pepper in a large oven-proof skillet over medium heat, stirring constantly, until oil takes on the color of the curry powder, 5 to 6 minutes.
  • Cook and stir pork tenderloin slices in coconut oil mixture until pork begins to brown. Sprinkle flour over pork; cook and stir until slices cook through; 2 to 3 minutes more.
  • Stir bouillon mixture, coconut milk, and peanut butter into pork mixture; bring to a boil, stirring constantly. Cover skillet with an oven-proof lid and transfer to oven.
  • Cook pork in the preheated oven until tender and sauce is bubbling, about 45 minutes. Remove from oven, remove lid, and rest pork for 10 minutes to allow sauce to thicken.

1 tbsp vegetable oil
bunch spring onions, sliced
small bunch coriander, stalks finely chopped, leaves picked
400g pork tenderloin, sliced
4 tbsp Thai red curry paste
4 tbsp peanut butter
1 tbsp soft brown sugar
1 tbsp soy sauce
400ml can light coconut milk
175g pack baby corn
juice 1 lime
steamed jasmine rice, to serve

Steps:

  • Heat the oil in a large saucepan or flameproof casserole. Add the spring onions and coriander stalks and cook for 1 min. Add the pork slices and cook for 5 mins until starting to brown.
  • Stir in the curry paste and peanut butter. After 30 secs, add the sugar, soy and coconut milk, plus ½ can of water. Mix well, put a lid on and leave to simmer for 15 mins, stirring occasionally.
  • Remove the lid, add the baby corn and increase the heat. Bubble for 3 mins until the corn is cooked and the sauce has thickened a little. Stir in the lime juice and check the seasoning. Can now be frozen for up to 2 months. To cook from frozen: thoroughly defrost, then heat in a pan on the hob until curry is hot all the way through. Serve scattered with the coriander leaves and rice.

1/2 lb pork tenderloin, sliced thin stick in freezer for awhile to do this
1 can coconut milk
1 lime, grate the zest,keep the juice
2 tablespoons grated fresh ginger
2 tablespoons Thai fish sauce
1 teaspoon sugar
2 serrano peppers, seeded and sliced thin
1 habanero pepper, same thing
1 (14 ounce) can cut baby corn
3 cloves garlic, chopped fine
1/4 cup basil leaves, chopped
1/4 cup cilantro leaf, and stems chopped

Steps:

  • Heat wok to medium high, add oil, add curry paste, stir fry until heat hits you, up heat and add pork, continue stir frying, for a couple of minutes, then stir in coconut milk, toss in lime zest, ginger and garlic, bring to boil, cut heat and simmer until pork is tender.
  • Stir in fish sauce, sugar, peppers and baby corn, drained-- if this is too runny at this point add 1 tbls corn starch mixed in a little water,cook until thickened then add basil and cilantro leaves-- Serve with any good rice, but fragrant jasmine rice is best with any Thai dish.
