This is the EASIEST coconut pie I have ever made. Haven't got a clue where I got the recipe, but it's for sure something you can throw together in a hour. NOTE: This makes quite a bit of filling. You may not need it all.

  • Preheat oven to 350 degrees.
  • Mix all ingredients together and pour in pie shell.
  • Bake 30-45 minutes or until firm.

This is a butter/shortening-free pie crust. It is a bit healthier and just as tasty, flaky and buttery tasting. This makes 2 crusts and works for both sweet or savory pies. Just add 1 teaspoon sugar if you're making a sweet pie. Make sure to use refined coconut oil to hide the coconut taste. Unless of course you will use this for a coconut pie!

1 cup refined coconut oil
1 teaspoon salt
5 tablespoons ice cold water, or as needed

Steps:

  • Combine flour, coconut oil, and salt in a food processor and pulse until combined.
  • Add 5 tablespoons ice cold water and pulse. With the food processor running at low speed, add 1 additional tablespoon of water at a time until a dough forms.
  • Using your hands, pat dough to shape into a ball. Cut in half for 2 pie crusts.
  • Flour a work surface and rolling pin and roll out dough.
  • Bake as directed for any pie recipe you are following.

1 large egg white
2 tablespoons granulated sugar

2 firm, ripe bananas

3 tablespoons cornstarch

4 large egg yolks
2 cups whole milk

Steps:

  • For the crust: Adjust an oven rack to the middle position and preheat the oven to 325 degrees F. Spread the coconut flakes on a baking sheet and bake until it begins to turn golden, about 10 minutes. Toss and continue to bake, tossing very frequently, until all of the coconut is evenly golden brown, 6 to 8 minutes more. Set aside to cool for 15 minutes. Leave the oven on.
  • Whisk the egg white, sugar, vanilla and salt in a large bowl until combined. Fold in the coconut. Coat a 9-inch pie plate with cooking spray and press in the mixture, forming a 1/4-inch crust around the bottom and sides. Bake until toasted and brown, 20 to 25 minutes. Cook over medium heat, stirring constantly, until the mixture starts to thicken and simmer, about 4 minutes. Once the mixture is simmering, continue to cook 1 minute longer, stirring constantly. Remove from the heat and pour a third of the custard over the coconut crust. Arrange the banana slices over the custard in an even layer and top with the remaining custard. Chill for 2 hours or up to overnight.
  • For the topping: Beat the heavy cream with an electric mixer until it just starts to thicken. Beat in the confectioners' sugar and continue beating until stiff peaks form, then spoon onto the pie to cover the custard. Serve immediately or chill for up to 2 hours.

2 cups skim milk (or use regular but skim is all I have)
1 teaspoon vanilla
1 cup sweetened flaked coconut
3/4 cup sugar

  • Preheat oven to 350 degrees.
  • Spray a 10 inch pie plate with cooking spray and then dust with flour.
  • (Or grease it and then flour it in your usual method.) In a blender place everything but the coconut.

1 (5 ounce) package vanilla instant pudding mix or 1 (5 ounce) package instant coconut cream pudding mix
1 1/2 cups cold milk
1 1/2 cups flaked coconut
1 (8 ounce) container Cool Whip, thawed

Steps:

  • In a large bowl mix pudding and milk until pudding becomes thick (usually about 2 minutes).
  • Fold in 4 oz (1/2) of the Cool-Whip.
  • Fold in 1 cup of coconut.
  • Spread mix into bottom of pie crust.
  • Spread remaining Cool-Whip on top.
  • Sprinkle with left-over coconut.
  • Serve cooled (about one hour in the fridge).

  • Unroll crust into a 9-in. pie plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice.
