For a fun twist on pancakes, try adding some pandan extract-the vanilla-coconut tasting extract that has a natural green color! To take it up a notch, we topped our pandan pancakes with toasted coconut and stuffed them with homemade coconut custard for a sweet and creamy surprise!

5 large egg yolks, room temperature
⅓ cup sugar
3 tablespoons cornstarch
1 can unsweetened full fat coconut milk
1 teaspoon McCormick® vanilla extract
2 teaspoons coconut extract
3 cups buttermilk
2 large eggs
1 teaspoon pandan extract
4 tablespoons unsalted butter, melted
2 cups all purpose flour
¼ cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon kosher salt
nonstick cooking spray, for greasing
butter
maple syrup
toasted coconut flake

Steps:

  • Make the coconut custard: In a medium bowl, whisk together the egg yolks, sugar, and cornstarch.
  • Pour the coconut milk into a small saucepan and bring to a simmer over medium-low heat.
  • Once the coconut milk is simmering, very slowly pour into the bowl with the egg mixture, whisking constantly to combine and temper the eggs.
  • Return the mixture to the saucepan over medium heat and cook, whisking constantly, until thickened, 2-3 minutes. Scrape the mixture into a clean medium bowl and whisk in the vanilla and coconut extracts.
  • Set the bowl over another bowl filled with ice water (make sure the water level is not so high that it gets into the custard) and let the custard cool for 10 minutes.
  • Line a baking sheet with parchment paper.
  • Once the custard has cooled, scoop onto the prepared baking sheet in 1-tablespoon discs, spacing evenly. You should have at least 20 custard discs. Transfer to the freezer for 90 minutes, until frozen.
  • Make the pancakes: In a medium bowl, whisk together the buttermilk, eggs, and pandan extract. Add the melted butter and whisk to combine.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Pour the wet ingredients into the dry ingredients. Mix until just combined, being careful not to over-mix; some lumps are okay. Let the batter rest for 5 minutes.
  • Heat a large nonstick skillet or a pancake griddle over medium-low heat and grease with nonstick spray. Pour ¼ cup of batter into the pan and cook the pancake halfway, about 2-3 minutes. Place a disc of frozen coconut custard in the center, cover the custard with about 1 tablespoon more batter and flip. Cook until golden brown, 2-3 minutes more. Remove from the pan and repeat with the remaining batter and coconut custard to make 20 pancakes total.
  • Serve with butter, maple syrup, and toasted coconut flakes.

¼ cup coconut flour
1 ¼ oz wheat flour
1 ¼ oz coconut flakes
¾ teaspoon baking powder
1 pinch salt
½ cup coconut milk
2 tablespoons coconut liqueur
1 drop almond essence
2 eggs
¼ cup sugar
1 oz butter
1 tablespoon butter
cinnamon
powdered sugar
coconut icecream, if desired

Steps:

  • Mix the coconut milk with the coconut liqueur in a cup, and in a separate medium bowl, mix the dry ingredients.
  • Melt the butter, add to the coconut milk mixture, and microwave thoroughly. Mix well.
  • Preheat the oven to 200°C. Meanwhile, heat a frying pan on the stove and add 1 tbsp butter.
  • Fill the pan with batter, fry for 3-4 minutes, then place in the oven.
  • Bake for 10 minutes.
  • Retrieve from oven, plate, and serve with cinnamon, powdered sugar, and coconut ice cream if desired.

Coconut flour is a flavorful and fragrant gluten-free alternative but can be a bit tricky to work with. We've smoothed out the kinks to ensure that these pancakes come out golden brown, tender and packed with coconut flavor. Since coconut flour is high in fiber, it retains a significant amount of liquid, which can make pancakes dry. The Greek yogurt in this recipe provides extra moisture and fat to ensure the pancakes stay plush and moist. Because there's no gluten to provide strength or structure to the batter, we call for an extra egg white, baking powder and a little elbow grease when whisking the wet ingredients to make the pancakes fluffy while also being sturdy enough to flip. Just be sure to keep the pancakes small so they can be easily flipped. With a little patience and a quick turn of the wrist, these coconut flour pancakes are sure to satisfy.

3/4 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
2 large eggs plus 1 egg white
1/2 cup unsweetened coconut milk
1/4 cup plain Greek yogurt
2 tablespoons maple syrup, plus more for serving
1 tablespoon coconut oil, melted and cooled, plus more as needed
1/2 teaspoon pure vanilla extract
1/3 cup large unsweetened coconut flakes, toasted, plus more for serving (optional)
Butter, for serving

Steps:

  • Sift the coconut flour, baking powder, salt and baking soda into a medium bowl.
  • Vigorously whisk the eggs and egg white in a large bowl until combined and just starting to foam on the surface, about 1 minute. Whisk the coconut milk and Greek yogurt in a separate glass measuring cup or a small bowl until combined. While whisking, add the coconut milk mixture, maple syrup, coconut oil and vanilla extract to the eggs and whisk until combined and bubbly.
  • Fold the flour mixture into the egg mixture until just combined (it's OK if there are some lumps).
  • Heat a large nonstick skillet over medium heat and lightly brush with coconut oil. Making 2 pancakes per batch, pour 1/4 cup of the batter into the skillet for each pancake and top with toasted coconut flakes if using. Cook until the bottom is golden brown and the edges are just beginning to set with some small bubbles forming, 2 to 3 minutes. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden brown on the other side, about 2 more minutes. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more coconut oil as needed. Serve with butter, syrup and more toasted coconut.

1/2 cup sweetened shredded coconut

  • Preheat oven to 425°. In a large bowl, combine pancake mix and coconut. Stir in milk just until dry ingredients are moistened; let stand 10 minutes. Meanwhile, line a 15x10x1-in. baking pan with parchment; grease parchment with coconut oil., Spread batter into prepared pan; sprinkle with macadamia nuts. Bake until puffy and golden brown, 15-20 minutes. Cool in pan on a wire rack 5 minutes. Lifting with parchment, remove from pan. Top with bananas; serve with butter and syrup.

I found these so tasty that I didn't even bother putting syrup on them... Just ate them with my fingers straight off the griddle! I used Pamela's Ultimate Baking and Pancake Mix, so the measurements are for that particular product. You may need to adjust the measurements slightly if you use a wheat-based pancake mix or a different brand of gluten-free pancake mix. Just remember that you're basically following the instructions on the package, but adding shredded coconut and replacing the milk or water with coconut milk. You are also eliminating any additional oils the recipe on the box/bag might call for, since the coconut milk provides enough fat. I think you'll agree these are mmm mmm good!

2 eggs , separated
3 tbsp coconut flour
1 tsp gluten-free baking powder
1 tsp cinnamon
150ml milk of your choice
2 tsp maple syrup
150g frozen berries

Steps:

  • Whisk the egg whites in a clean bowl until they reach stiff peaks. Put the coconut flour, baking powder, cinnamon, egg yolks, milk, 1 tsp maple syrup and a pinch of salt in a bowl and whisk to a smooth batter. Carefully fold in the egg whites, trying to keep in as much air in as possible.
  • Heat a non-stick pan over a medium heat. Add tablespoons of the batter at a time to create small pancakes. Cook for 1-2 mins until bubbles appear on the surface. Flip and cook for another 30 seconds. Repeat with the remaining batter.
  • Meanwhile, microwave the berries and remaining syrup for 2 mins, stirring halfway, to make a compote. Serve with the pancakes.
