2 teaspoons vegetable oil
4 shallots, finely chopped (about 3/4 cup)
2 1/2 teaspoons red curry paste*, or 2 teaspoons curry powder (See Cook's Note)
2 cups low-sodium chicken broth
1/2 cup light coconut milk
1/2 teaspoon salt, plus 1/4 teaspoon, plus more for seasoning
4 (6-ounce) pieces halibut fillet, skin removed
5 cups baby spinach, washed
1/2 cup coarsely chopped fresh cilantro leaves
2 scallions, green part only, thinly sliced
2 tablespoons fresh lime juice
Freshly ground black pepper
2 cups cooked brown rice, for serving

Steps:

  • In a large saute pan, heat the oil over moderate heat. Add the shallots and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Add the curry paste and cook, stirring, until fragrant, about 30 seconds. Add the chicken broth, coconut milk, 1/2 teaspoon salt and simmer until reduced to 2 cups, about 5 minutes.
  • Season the halibut with 1/4 teaspoon salt. Arrange the fish in the pan and gently shake the pan so the fish is coated with the sauce. Cover and cook until the fish flakes easily with a fork, about 7 minutes.
  • Steam or microwave the baby spinach for 2 minutes.
  • Arrange a pile of steamed spinach in the bottom of 4 soup plates. Top with the fish fillets. Stir the cilantro, scallions, and lime juice into the sauce and season, to taste, with salt and pepper. Ladle the sauce over the fish and serve with rice.

If you can't find halibut, another white fish like cod, haddock, or red snapper would work well. This sheet pan dinner is a filling meal in one, but if you want to make the most of the zesty Mediterranean-style sauce, serve the halibut and veggies over a bed of barley or bulgur.

Zest of 2 lemons
Juice of 2 lemons
1 cup extra virgin olive oil
1 1/2 tablespoon freshly minced garlic
2 teaspoon dill weed
1 teaspoon seasoned salt, (more for later)
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
1/2 to 3/4 teaspoon ground coriander
1 pound fresh green beans
1 pound cherry tomatoes
1 large yellow onion, (sliced into half moons)
1 1/2 pound halibut fillet, (slice into 1 1/2-inch pieces)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.
  • Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.
  • Lightly sprinkle the halibut and vegetables with a little more seasoned salt.
  • Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.
  • When ready, remove the baked halibut and vegetables from the oven. Serve immediately.

1 lemon, juiced
1 tablespoon butter
2 (10-ounce) bags baby spinach
3 cloves garlic, crushed

6 Roma tomatoes, diced
1/2 cup olive oil
1/2 cup chopped kalamata olives

Steps:

  • Fresh basil leaves, as garnish
  • In a large saute pan over medium-high heat add the olive oil and heat. When oil is hot, place the halibut steaks in pan and cook 3 to 4 minutes each side, or until a fork can be easily inserted into the fish. Season, to taste, with salt, pepper and lemon juice. Remove from the heat and keep warm.
  • In another large saute pan over medium heat, add the olive oil and butter. Add the spinach gradually along with the crushed garlic and salt. Saute until the spinach

2 tablespoons olive oil, divided
1 (24-ounce) bag fresh spinach, rinsed and dried*
3 medium shallots, diced
2 heaping teaspoons Thai red curry paste
1 1/2 cups low sodium chicken broth
1 can lite coconut milk
3/4 teaspoon kosher salt, divided
4 {6 to 8-ounce} white fish fillets, thawed and skin removed (I used fresh halibut, but you can use Barramundi)
1/4 cup fresh cilantro, chopped
1/4 cup fresh parsley, chopped
2 green onions, sliced thin on the bias
1 whole lime, juiced
3 stalks fresh lemongrass, optional
Note: I don't have any problems wilting baby spinach, but I wilt it low and slow with olive oil. Using frozen spinach really doesn't work with this dish, as there is a LOT of water-- and the texture of wilted fresh spinach is hard to beat!

Steps:

  • In a deep 10-inch skillet heat 1 tablespoon of olive oil over medium heat. Use tongs to toss the spinach. Once warm, add in the spinach and allow to begin to "wilt" (the spinach pile will begin to reduce). Once it starts to wilt season with a pinch of kosher salt and coarse black pepper. Remove the wilted spinach to a clean bowl and set aside. Note: I prefer to to make the spinach in a separate cast iron skillet, and the fish in another skillet. I don't mind cleaning two skillets, and I am better able to keep everything hot and ready to serve at the same time. Wipe the skillet out with a paper towel (if using one skillet) and add in the remaining tablespoon of olive oil. Reduce the heat to medium and sauté the shallots until slightly golden around the edges. About 5 minutes. Stir in the Thai red curry paste and then pour in 1-1/2 cups of chicken broth, the can of lite coconut milk and a 1/2 teaspoon of kosher salt. Stir, bring to a simmer and reduce by half. Note: If using the fresh lemon grass, cut off the root end and trim off the tips. Using the blunt end of a knife, "bruise" the lemon grass by pounding it a bit. Set into the broth to infuse with it's delicious lemony fragrance. Season the fish fillets with the remaining 1/4 teaspoon of salt. Next place the seasoned, skinless fish fillets into the coconut curry broth and spoon some of the broth over top. Cover the pan and let the fish poach for about 7 to 8 minutes or until the fish is opaque and flakes easily with a fork. Remove the lemongrass, with tongs and toss. Meanwhile combine the chopped cilantro, parsley, sliced green onions and cut the lime in half. Reserve 1/4 cup for garnishing. Divide the spinach among four shallow bowls, top with the fillets. Quickly add the chopped cilantro/parsley/green onion mixture to the coconut curry broth, squeeze in the entire lime, stir and ladle over the fish and spinach. Serve with cooked Jasmine Rice.

"Describing" the recipe preparation actually takes more time than the actual cooking time itself -- so, don't panic! It's very simple and wonderful! For example, cooking jasmine rice properly has it's own little secret. Using coconut oil, if you can find it, is healthy, nutritious, and really flavorful. However, if you don't have it available, EVOO works fine! And, lastly, you can substitute any flaky white fish, such as sea bass or tilapia, but be sure to adjust the cooking time according to thickness. BON APPETIT!!

2 1/2 cups jasmine rice
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 (6 ounce) halibut fillets (1 to 1 1/2 inches thick)
2 tablespoons all-purpose flour
3 tablespoons coconut oil (or EVOO)
1/2 cup white wine
2 tablespoons fresh lemon juice or 2 tablespoons lime juice
2 tablespoons drained capers
2 tablespoons butter
4 cups fresh Baby Spinach

Steps:

  • Put the rice in a small sauce pan. I like to rinse my rice by placing in a sieve and running under cold water. This rids the rice of excess starch powder and broken rice which makes the cooked rice mushy and sticky. Add just enough water to cover the top of the rice by 1/2 inch (approx. 3 cups) Cover the pot with the lid. Place over medium to medium high heat and bring to a boil. Reduce heat to low. Simmer, covered, for at least another 10 minutes, until the water is completely absorbed. Turn off burner and allow rice to sit, covered, for at least another 5 minutes. Sprinkle with half of the salt and pepper and stir to fluff.
  • IN THE MEANTIME, sprinkle the fish with the rest of the salt and pepper, and dredge in flour.
  • Heat oil in a large nonstick skillet over medium-high heat. Add fish to pan; cook 2 1/2 minutes on each side (less for thinner filets) or until fish flakes easily when tested with a fork.
  • Add wine, juice, and capers to the pan; cook one minute.
  • Add butter to pan, stirring until butter melts. Remove fish and sauce from pan; keep warm.
  • Wipe pan clean with paper towel, add spinach and saute one minute or until wilted.
  • Place 1/4 of the rice on each of 4 plates. Top each serving with 1/4 of the spinach, one fish filet, and 1/4 of the sauce.

15 fl oz canned coconut milk

2 pounds halibut
6 cups spinach
We love to add a red bird's eye chili or red jalapeno to this. If you aren't into the spice you can also use a red bell pepper. This dish works well with any firm white fish.

Steps:

  • Prep: 1. Mince: shallot and ginger. 2. Juice lime. Make: 1. Melt 1 tablespoon coconut oil in skillet over medium heat. 2. Add shallots, garlic, ginger, and red chili (if using, see notes). Cook 1-2 min. until shallots and chilies start to soften. Season with salt and pepper. 3. Pour in coconut milk and lime juice, cook 2-3 min. 4. Add green onions and basil, place fish fillets in pan, spooning coconut milk mixture over each fillet. 5. Increase heat to medium-high, when coconut milk mixture starts to bubble, turn heat low and cover. Cook for about 10 min. or until fish flakes easily with a fork. 6. Meanwhile, heat remaining 1 tablespoon of coconut oil in another skillet over medium heat. Add spinach, season with salt and pepper, and toss well to coat with oil. Cook 2-3 min. or until spinach is wilted. 7. Divide spinach among 4 plates, top each with a piece of fish, and spoon some of coconut milk mixture over top.
