Steps:
- Beat together the cream cheese and marshmallow cream until creamy and well blended.
- Add half the whipped topping and blend well. Add the remaining whipped topping and fold in to maintain the light texture.
- Transfer the filling to a pie plate or small casserole dish. Spoon cherry pie filling over the top.
- Serve with assorted dippers like sugar wafers, graham crackers, and/or Nilla wafers.

This is a simple cheesecake recipe that I sometimes bring to family occasions. I am posting this recipe for my cousin Amy since she requested the recipe.

Steps:
- Preheat oven to 350 degrees.
- Place the cream cheese in a bowl in the microwave.
- Microwave it on the defrost setting for a couple of minutes to slightly soften the cream cheese (This is so that you don't kill your mixer when beating the cream cheese).
- Add sugar to cream cheese and beat it with an electric mixer until smooth.
- Add eggs and vanilla and blend until smooth.
- Pour into ready made crust.
- Bake at 350 degrees for 25 to 30 minutes.
- Note: The cheesecake is done when the sides are puffed- The center will not be as puffed- It will be possible to jiggle the center slightly but it will not be runny.
- Let cool.
- Top with cherry pie filling and chill.

- It is important to prep for this dip and pull out and unwrap cream cheese to soften on the counter at room temp. This usually takes about 15-20 minutes. Softening cream cheese will help make combining further ingredients easier. I do not recommend microwaving cream cheese to soften it as it can melt quite quickly. Additionally, Cool Whip topping should not be frozen.
- Add softened cream cheese to a mixing bowl and beat until smooth.
- Add marshmallow cream and combine well, beating till smooth.
- Now dump in Cool Whip topping and beat all ingredients together until smooth and spreadable.
- Carefully spread cheesecake dip onto a serving plate.
- Top dip with cherry pie filling.
- Serve cherry cheesecake dip immediately or refrigerate, covered, until ready to serve.
- Dippers usually include shortbread sticks or graham crackers.

- Beat cream cheese until very smooth, about 1 minute. Add sugar, vanilla, and lemon juice and beat until smooth, about 2 minutes. Add sour cream and heavy cream and beat on medium high until smooth, thick and fluffy, about 3-5 minutes.

- Add whipping cream to the bowl of a stand mixer with the whisk attachment. Whip on medium high for 3-4 minutes, or until soft peaks form. Transfer to a separate bowl and set aside.
- Rinse out the bowl for the stand mixer, then add the room temperature cream cheese. Using the paddle attachment, beat the cream cheese on medium speed until light and fluffy. Slowly add the powdered sugar and vanilla extract and mix until light and fluffy again.
- Use a rubber spatula to fold the whipping cream into the cheesecake mixture until well combined, then spread the cheesecake layer evenly into the bottom of a 9" x 9" (or 8" x 8") baking dish.
