OVERNIGHT PRALINE FRENCH TOAST RECIPE BY TASTY
Here's what you need: eggs, half & half, brown sugar, vanilla extract, salt, bread, butter, brown sugar, pecan, ground cinnamon, ground nutmeg, salt, maple syrup

Steps:
- In a large bowl, add the eggs, half & half, brown sugar, cinnamon, nutmeg, and pinch of salt. Whisk to combine.
- Line bread in a greased 9x13-inch (23x33 cm) baking dish, overlapping slightly.
- Pour the egg mixture over the bread.
- Cover the baking dish in foil and refrigerate overnight.
- Preheat oven to 350˚F (180˚C).
- In a bowl, add the butter, brown sugar, pecans, cinnamon, nutmeg, and salt. Stir to combine.
- Remove the baking dish from the refrigerator and remove the foil. Top the French toast with the praline, and place foil back on
- Bake for 40 minutes. Remove foil, and bake for an additional 20 minutes, or until puffed and slightly golden.
- Serve with maple syrup.

- In a bowl, beat cream cheese and 1 teaspoon vanilla until fluffy. Stir in nuts; set aside. , Cut bread into 1-1/2-in. slices; cut a pocket in the top of each slice. Fill each pocket with about 2 tablespoons cream cheese mixture. In another bowl, beat eggs, cream, nutmeg and remaining vanilla. Dip both sides of bread into egg mixture, being careful not to squeeze out the filling. , Cook on a lightly greased griddle until lightly browned on both sides. Steps:
- Praline Rum Syrup.
- Melt butter and add brown sugar, stirring until dissolved.
- Add orange juice, rum and Simmer lightly.
- Take off heat when consistency is a thick syrup.
- French Toast.
- Cutting through top crust of each bread slice, make a pocket.
- Carefully spread in a teaspoon apricot jam into each pocket.
- In a pie plate whisk the eggs, then add the milk, cinnamon and nutmeg.
- Soak each slice on both sides without becoming heavy and soggy with batter.
- Then dip into coconut flakes pressing lightly on both sides.
- Fry in a lightly oiled preheated pan until golden brown on both sides.
- Serve with a dollop of cool whip and drizzle syrup over.

- Whisk the eggs, coconut milk and vanilla together in a wide, shallow bowl. Dunk the brioche slices into the mixture, letting each sit in the bowl for 1-2 mins on each side to soak up the liquid. The mixture should be completely absorbed by the brioche before cooking.
- Heat the oven to 200C/180C fan/gas 6. To prepare the pineapple, cut away the skin, leaves and any eyes, then slice the flesh into long, chunky pieces (you'll need about three per person). Cut out the tough core and discard. Place the pineapple pieces in a small baking dish, drizzle over the maple syrup and sprinkle with allspice. Roast for 15 mins, turning halfway through and brushing with the sticky syrup in the dish.
- Meanwhile, melt the butter in a frying pan over a low-medium heat until foaming. Scatter the desiccated coconut over a plate, and dip in each side of the soaked brioche slices to coat. (The bread will be very delicate, so do this carefully.) Cook the brioche slices for 3-4 mins on each side until golden and cooked through. Divide between two plates, then top each with a dollop of yogurt, three of the roasted pineapple pieces, then drizzle over any juices from the roasting tin.

APRICOT FRENCH TOAST
Fix this Christmas Eve and have a wonderful Breakfast ready to go in the oven Christmas Morning. I melted in the microwave equal amounts of butter and Apricot Marmalade to serve as a "Syrup" to pour over this when served. The original recipe came from Cooking Light, with a few changes, we fixed it more to our liking - and love the way it turned out.

Steps:
- Spread butter on one side of each bread slice. Arrange 12 bread slices, buttered side down, slightly overlapping in a single layer in 13 X 9 inch baking dish coated with cooking spray.
- Spread marmalade evenly over bread; top with remaining 12 bread slices, butter side up.
- Combine milk and sugar, vanilla extract, nutmeg and eggs, stirring with a whisk.
- Pour egg mixture over bread. Cover and refrigerate for 8 hours or overnight.
- Preheat oven to 350 degrees.
- Sprinkle casserole with pecans. Bake at 350 degrees for 45 minutes or until golden brown. Let stand 5 minutes before serving.

Just a wonderful combination of apricots, coconut, condensed milk to make a delicious fruity bar cookie. Sometimes I use a 6 ounce package Sunkist Fruit Bits instead of the apricots.

- Preheat oven to 350 degrees.
- Place butter, sugar and 1 cup flour in a large bowl.
- Cut butter in with a pastry blender until coarse crumbs form.
- Press crumbs firmly into bottom of a greased 9 inch square pan to make a crust.
- Bake for 25 minutes.
- Remove pan from oven to a wire rack to cool.
- Combine the remaining 1/3 cup flour, baking powder, salt, eggs, condensed milk, coconut, and apricots in a medium bowl.
- Mix well.
- Spread mixture evenly over crust.
