ALMOND MEAL COOKIES WITH CHOCOLATE CHIPS AND COCONUT

Almond Meal Cookies with Chocolate Chips and Coconut image

Gluten-free cookies from the Sprouted Kitchen Cookbook, featuring bits of dark chocolate, shredded coconut, and hearty almond meal.

Provided by Minimalist Baker

Categories     Dessert

Time 55m

Number Of Ingredients 9

1 1/4 cups almond meal or almond flour* ((see notes // not almond pulp from making almond milk))
1/4 cup chopped dairy-free dark chocolate ((Sara used cacao nibs))
1/2 cup shredded unsweetened coconut
1/2 tsp baking powder
1/4 tsp salt ((Sara used sea salt))
1/3 cup brown sugar ((Sara used muscovado))
1 large egg
3 Tbsp coconut oil ((melted))
1/2 tsp vanilla extract

Steps:

  • In a large mixing bowl, stir together almond meal, dark chocolate chips, coconut, baking powder, salt and sugar.
  • In a separate bowl, beat egg using a whisk or large fork until uniform in color and slightly foamy.
  • Whisk in the coconut oil and vanilla, then add to dry ingredients and mix until just combined.
  • Chill in the fridge for 15-30 minutes.
  • Preheat oven to 375 degrees F (190 C) and grease a baking sheet or line with parchment paper.
  • Shape dough into 1-inch discs (we like using this small cookie scoop or a tablespoon) and place on the prepared baking sheet. Make sure the cookies are pressed down because they don't spread much.
  • Bake until edges begin to brown, 8-12 minutes.
  • Remove from oven and let cool completely before serving.

ALMOND FLOUR CHOCOLATE CHIP COOKIES

Almond Flour Chocolate Chip Cookies image

Healthy Almond Flour Chocolate Chip Cookies are slightly crisp on the outside, soft on the inside with a buttery melt in your mouth taste! Naturally gluten free and grain free, these will be your new favorite dessert.

Provided by Olena Osipov

Categories     Dessert

Time 30m

Number Of Ingredients 9

2 eggs (large)
1/3 cup cane or coconut sugar
1 tsp pure vanilla extract
1/2 tsp baking soda
1/2 tsp salt
1/3 cup coconut oil or butter (melted and cooled a bit)
3 cups almond flour
1/2 cup chocolate chips (I like to use mini)
Pecans, raisins, dried cranberries, walnuts, cacao nibs (Optional mix ins)

Steps:

  • Preheat oven to 375 degrees F. Line 2 baking sheets with silicone mats or parchment paper. Set aside.
  • In a medium mixing bowl, add eggs, sugar, vanilla extract, baking soda and salt. Beat with an electric mixer until well combined, about 3 minutes.
  • Add coconut oil and beat a bit more to incorporate. Add almond flour and using a spatula (mixer in the beginning and then spatula at the end), mix until the dough forms. Add chocolate chips and give a few more stirs to incorporate.
  • Using small cookie dough scoop, place small balls of dough on a baking sheet pressing with your hands to flatten them a bit. Leave about 2" between the cookies - cookies spread a bit but not much.
  • For more soft baked with a bit of chew outside almond flour chocolate chip cookies, bake at 350 degrees F for 20-23 minutes. For more crunchy on the outside but still chewy inside almond flour chocolate chip cookies, bake at 375 degrees F for 15 ish minutes. Time is for regular oven. Convection oven bakes twice faster. Check which one you have before baking.
  • Remove from the oven and let cool for 10 minutes before removing onto cooling rack to cool a bit more.

AMAZING COCONUT, ALMOND FLOUR CHOCOLATE CHIP COOKIES

Amazing Coconut, Almond Flour Chocolate Chip Cookies image

I came up with this recipe when I had a sweet tooth that needed tending to, and I wanted to make it a little healthier than your average cookie. So I replaced some of the flour with coconut and almond flour and used 1/2 cup of coconut oil instead of a whole cup of butter. I use all organic ingredients, but that's up to you. This is our family go-to cookie recipe. We've made it so many different ways and loved them all, but our favorites are semisweet chocolate chips with walnuts, or white chocolate chips with macadamia nuts. It's a win-win with these amazing cookies.

ALMOND FLOUR CHOCOLATE CHIP COOKIES

Almond Flour Chocolate Chip Cookies image

These soft, chewy cookies are studded with little morsels of chocolatey heaven. They are also completely gluten-free and grain-free thanks to the almond flour.

Provided by Food Network Kitchen

Categories     dessert

Time 1h15m

Yield 24 cookies

Number Of Ingredients 9

3 cups almond flour (see Cook's Note)
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup packed light brown sugar
2 large eggs
1 tablespoon pure vanilla extract
1 cup semi-sweet chocolate chips
Flaky sea salt, for topping

Steps:

  • Evenly position 2 racks in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Whisk the almond flour, baking soda and salt together in a large bowl. Beat the butter and brown sugar in another bowl with an electric mixer on medium-high speed until light and fluffy, about 4 minutes. Add the eggs to the butter mixture one at a time, beating after each addition to incorporate, then beat in the vanilla. Reduce the speed to low, add the flour mixture and beat until just incorporated. Fold in the chocolate chips.
  • Scoop 12 heaping tablespoons of dough onto each prepared baking sheet, spacing them 2 inches apart. Roll each into a ball with slightly wet hands, then sprinkle the top of each ball with some sea salt. Bake until the cookies are golden but still soft in the center, 10 to 12 minutes. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely, about 30 minutes.

SOFT-BAKED ALMOND FLOUR CHOCOLATE CHIP COOKIES

Soft-Baked Almond Flour Chocolate Chip Cookies image

These bendy melt-in-your-mouth gems are an incredible gluten-free, dairy-free, and low-carb alternative to traditional chocolate chip cookies.

Provided by Kare for Kitchen Treaty

Categories     Dessert

Time 19m

Number Of Ingredients 8

2 tablespoons solid coconut oil
3 tablespoons pure maple syrup
1 large egg
1 teaspoon pure vanilla extract
2 cups almond flour or almond meal ((I have used both with success))
1/2 teaspoon baking soda
1/4 teaspoon fine-grain sea salt
1/2 cup mini semi-sweet chocolate chips + more for topping if desired

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat. Set aside.
  • Add the coconut oil and the pure maple syrup to a large bowl. If the oil is very hard, microwave for a few seconds until soft but not melted. Stir briskly with a whisk until the syrup and oil are mixed together - this may take a minute or two. Add the egg and vanilla and whisk together until combined.
  • In a medium bowl, stir together the almond flour, baking soda, and salt. Add the flour mixture to the wet ingredients and stir together with a wooden spoon until combined. Stir in 1/2 cup chocolate chips.
  • Scoop mounded tablespoonfuls onto the cookie sheet, spacing about two inches apart. Press down gently with your fingers to flatten slightly. Top each with a few additional chocolate chips, if desired.
  • Bake until set and the edges are golden brown, 8-9 minutes. Remove from oven and let cool for about 5 minutes, then transfer to a wire rack to cool completely.
  • Cookies keep well in an airtight container at room temperature for 4-5 days.
