These easy chocolate muffins, made with flour, sugar, cocoa, eggs, oil, and vanilla, have a not-too-sweet but intense cocoa flavor. For those of us with more adult chocolate cravings.

Nonstick spray or paper muffin cups
2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup Dutch process cocoa powder
1 tablespoon baking powder
1/2 teaspoon table salt
2 large eggs (at room temperature)
1 1/4 cups milk ((whole or low-fat but not nonfat))
1/3 cup mild vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 400°F (200°C). Position an oven rack in the center of the oven. Spray the muffin tin or line them with paper muffin cups.
  • In a medium bowl, whisk the flour, sugar, cocoa powder, baking powder, and salt.
  • In a large bowl, whisk the eggs until lightly beaten, then whisk in the milk, oil, and vanilla until smooth. Stir in the flour mixture with a wooden spoon until moistened.
  • Fill the prepared tins about 3/4 full. Reserve any leftover batter for a second batch. Bake for 20 to 23 minutes, or until the muffins have firm, rounded tops, and a toothpick inserted into the center of one muffin comes out with a few moist crumbs attached.
  • Set the pan on a wire rack to cool for 10 minutes.
  • Gently rock each muffin back and forth to release it. Remove the muffins from the pan and let them cool on the rack for 5 minutes.
  • Make them disappear. You can keep them in an airtight container or in resealable plastic bags for up to 24 hours at room temperature or stash them in the freezer for up to 2 months.

1 cup white whole wheat flour (plus 2 tablespoons)
1/3 cup unsweetened cocoa powder
3/4 teaspoon baking soda
3/4 teaspoon instant espresso powder (optional; will result in a more intensely chocolaty muffin)
1/4 teaspoon kosher salt
1/8 teaspoon ground cinnamon
1/2 cup semi-sweet chocolate chips (plus optional additional for sprinkling on top)
2 large eggs (at room temperature)
1/2 cup nonfat plain Greek yogurt (at room temperature)
1/2 cup honey ( or pure maple syrup)
1/3 cup unsweetened almond milk (or milk of choice)
1/4 cup canola oil (or melted, cooled coconut oil, light extra virgin olive oil, or melted, cooled unsalted butter)
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 325 degrees F. Lightly coat a standard 12 cup muffins tin with nonstick spray or line with paper liners.
  • In a large mixing bowl, whisk together the dry ingredients: white whole wheat flour, cocoa powder, baking soda, espresso powder, salt, and cinnamon. Stir in the chocolate chips.
  • In a medium bowl, briskly whisk together the eggs, yogurt, honey, milk, oil, and vanilla. Make a well in the center of the dry ingredients and add the wet ingredients. Gently stir by hand, just until the dry ingredients disappear.
  • With a muffin scoop or similar, fill the muffin cups 2/3 of the way to the top with batter. If desired, sprinkle on some extra chocolate chips. Bake for 18 to 22 minutes, or until a toothpick inserted in the center of a muffin comes out without any wet batter clinging to it. Place the pan on a wire rack. Let the muffins cool in the pan for 5 minutes, then gently remove them from the pan and place them on the rack to finish cooling completely (don't leave the muffins in the pan or they will start to steam and become a little soggy). I devised this recipe one day when I wanted to use my friendship starter, but wanted to make muffins instead of the usual bread. I also made them with a slight chocolate flavor instead of cinnamon. Quite tasty!

1 egg
⅓ cup vegetable oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, stir together 1/4 teaspoon of cocoa and 1/4 cup of sugar. Grease 10 cups of a muffin tin, and sprinkle each cup with some of the sugar mixture to coat the bottom and sides.
  • In a large bowl, stir together the flour, 1/2 cup of sugar, unsweetened cocoa powder, salt, baking soda, and baking powder. Pour in the friendship starter, egg, oil, and vanilla; mix until well blended. Spoon the batter into the prepared muffin cups, filling each one about 1/2 full.
  • Bake for 20 minutes in the preheated oven, or until a toothpick inserted into the crown of a muffin comes out clean. Cool in the pans for about 10 minutes before removing to a wire rack to cool completely.

3 eggs
1/4 cup melted and slightly cooled butter OR almond butter
1/4 cup honey or maple syrup
1 teaspoon pure vanilla extract
2 cups lightly packed baby spinach ((optional))
1 cup rolled oats
3/4 cups whole wheat flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F and grease a mini muffin tin.
  • Mash the banana well.
  • Stir together the wet ingredients, including the mashed banana
  • Stir together the dry ingredients in a separate bowl.
  • (Or, to do this step with a blender, place the bananas, eggs, butter, honey, and vanilla into a blender. Add the spinach if you plan to use it. Blend well.)
  • Stir the oats, flour, cocoa powder, baking powder, baking soda, salt, and chocolate chips, if using, to the wet ingredients
  • Fill prepared muffin tin about to the edge of each cup.
  • Bake for 10-12 minutes or until a cake tester inserted into the center comes out cleanly. Use a paring knife to remove from the pan and cool on a wire rack.

25g cocoa powder
1 tsp baking powder
1 large egg
60g caster sugar
2 tbsp vegetable oil
100ml whole milk
50g chocolate chips (optional)
100g icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a muffin tin with six muffin cases. Sieve the flour, cocoa and baking powder into a medium bowl. Mix together the egg, sugar, oil and milk together in a jug, then gradually pour into the dry ingredients (add chocolate chips now to make double chocolate muffins, if you like) and mix until combined.
  • Spoon the mixture evenly into the cake cases and bake for 20-25 mins until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool.
  • Meanwhile, gradually mix ½-1 tbsp water into the icing sugar until you have a loose consistency that's not too runny. Drizzle the icing over the muffins once cool.

1 1/2 cups (180 gr) all-purpose flour
1/2 cup (50 gr) cocoa powder (dutch processed preferred but natural cocoa powder can be used)
2/3 cup (130 gr) granulated sugar
1 TBSP (14 gr) baking powder
1/4 tsp salt
1 large egg, room temperature
1 cup (235 ml) whole milk
1 tsp vanilla extract
1/2 cup (120 ml) vegetable oil or canola oil
1 cup (170 gr) chocolate chips + more for topping if desired

Steps:

  • Prep: Preheat the oven to 425 F (220 C). Line a muffin tin with muffin liners or spray with nonstick spray.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.
  • Mix the Wet Ingredients: In a separate bowl, whisk together the egg, milk, vanilla, and oil until well combined.
  • Combine Wet & Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir with a spoon or rubber spatula until just combined. This process will go quickly, and should only take about 10 stirs to complete. Fold in the chocolate chips at this point. Do not over-mix your batter or your muffins will be dense and dry.
  • Divide the batter between the muffin cups filling them almost all the way up. Top with more chocolate chips if desired.
  • Bake at 425 F for about 10 minutes and then turn the oven heat down to 350 F (175 C) for about 5 more minutes or until a toothpick inserted in the center comes out with moist crumbs.
