These crunchy, crispy crackers have a big, bold cheese flavor. They're vastly superior to anything you can get at the store. You can change up the cheeses and the spices. It's really a fun thing to play around with.

½ teaspoon vegetable oil
2 tablespoons unsalted butter at room temperature
¾ cup lightly packed shredded sharp Cheddar cheese
⅓ cup lightly packed freshly shredded Parmesan cheese
½ teaspoon paprika
1 pinch cayenne pepper, or to taste
¼ teaspoon salt
½ cup all-purpose flour
1 tablespoon cold water, or as needed

Steps:

  • Line a baking sheet with aluminum foil and lightly grease with vegetable oil.
  • Place butter into a mixing bowl; add Cheddar cheese, Parmesan cheese, paprika, cayenne pepper, and salt. Mix together with the back of a spatula until thoroughly combined.
  • Mix flour into cheese mixture with a fork until crumbly. Sprinkle in cold water, 1 or 2 drops at a time, and mix with spatula until it comes together in a dough that holds its shape when squeezed.
  • Transfer dough to a work surface and press into a thick, flattened disk. Wrap in plastic wrap and refrigerate 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll dough out on a floured work surface to about 1/8-inch thick. Use a pizza cutter to cut 1-inch wide strips from the dough. Cut strips crosswise into rectangles about 1 1/2-inches long. Use the back of a bamboo skewer to punch 5 small holes into each cracker. Arrange crackers onto prepared baking sheet.
  • Bake in the preheated oven until crackers are browned and crisp, about 15 minutes. Let stand about 3 minutes for crackers to cool and release from the foil. Let cool completely before serving.

8 oz shredded cheddar cheese
4 tablespoons unsalted butter, room temperature
1 teaspoon salt
1 cup flour
2 tablespoons ice water

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
  • Once combined, mix in the flour and add the ice water one tablespoon at a time.
  • The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
  • Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
  • Roll out dough to ⅛ of an inch (½ cm), pinching the cracks on the ends.
  • Cut into 1 inch x 1 inch (2 ½ x 2 ½ cm) squares and pierce a hole in the middle of each square for ventilation during baking.
  • Place the separated crackers on a parchment paper-lined baking sheet.
  • Bake for 13 minutes, or until golden brown.

1-3/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon paprika
1/8 teaspoon cayenne pepper
1 cup grated Parmesan cheese
1 cup shredded Swiss cheese
1/2 cup cold butter, cubed
1 large egg
1/2 cup heavy whipping cream
1 large egg yolk
1 teaspoon 2% milk
Optional toppings: poppy seeds, sesame seeds, caraway seeds and dried minced onion

Steps:

  • Preheat oven to 375°. In a large bowl, whisk together first five ingredients; stir in cheeses. Cut in butter until crumbly. Whisk together egg and cream; gradually add to flour mixture, tossing with a fork until dough forms a ball., Turn onto a floured surface; knead gently just until combined, about 10 times. Divide dough in half. Roll each portion into a 12x10-in. rectangle; cut into 2-in. squares. Pierce with a fork. Place 2-in. apart on parchment paper-lined baking sheets. In a small bowl, whisk together egg yolk and milk; brush over tops. If desired, sprinkle with choice of toppings., Bake until golden brown, 9-12 minutes. Remove from pans to wire racks; cool completely. Store in an airtight container.

These are tasty little treats, which are more like a savoury cookie than a real cracker. They are great for dipping into sauces and spreads and can easily be varied by topping them with your favourite seeds or salts or whatever else you come up with. Note: Chill time of 30 minutes is not included!

150 g flour
150 g cheese, grated
150 g butter, cut into small pieces
1 teaspoon salt
1 egg
sesame, and
poppy seed, for sprinkling

Steps:

  • Mix flour and cheese in a big bowl. Using your fingers work in butter until mixture resembles coarse crumbs.
  • Add the egg yolk and work into a smooth dough. Wrap with cling film and chill for 30 minutes.
  • Roll out dough on a lightly floured surface and cut out cookies of desired shape (I used a clover cookie cutter, but rounds or animal shapes would be great, too).
  • Brush with egg white and sprinkle with seeds or desired topping.
  • Bake in the preheated oven at 200°C/400°F for 15-18 minutes (the thinner you make your cookies, the faster they are ready--so start checking on them early).

1/2 cup unsalted butter
1 cup all-purpose flour
1 cup grated Parmigiano-Reggiano

Steps:

  • In a food processor, combine ingredients, and pulse until dough comes together. Turn dough out onto a piece of plastic wrap, and form it into a log 1 1/2 inches in diameter. Chill until firm, at least 2 hours.
  • Heat oven to 325 degrees. Grease two baking sheets. Cut log into 1/4-inch-thick crackers, and place them an inch apart on sheets. Bake until firm, about 12 to 13 minutes. Remove baking sheets from oven, and raise temperature to 500 degrees. When temperature comes up to correct heat, return sheets to oven, and bake for 3 minutes more, or until crackers are deeply golden brown all over. Let cool on a wire rack.

2 slices bacon, cooked and crumbled (optional)

Steps:

  • Preheat oven to 350°F
  • With a mixer on medium speed, cream together cream cheese and butter until light and fluffy.
  • Add cayenne, blue cheese, flour, rice cereal, and bacon (if using) and beat on medium-low speed until well blended.
  • The dough will be stiff.
  • Roll 1-tablespoon portions into balls and place slightly apart on baking sheets.
  • Flatten each ball with a fork.
  • Bake until crackers are golden brown, 12 to 15 minutes.

These particular crackers are definitely worthy of their own place on your menu. No weird ingredients or fancy kitchen gadgets needed. You only need some ingredients that you probably have in your kitchen all the time, a cookie cutter, and an oven. That's all! These are super crispy, buttery, and perfect for a snack but if topped and loaded with cheese and herbs, ideal as a side dish.

2 cups all-purpose flour
1 tablespoon white sugar
2 ½ teaspoons baking powder
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon dried dill weed
6 tablespoons unsalted butter, melted, divided
2 tablespoons vegetable oil
⅔ cup cold water
coarse sea salt to taste
¼ cup mascarpone cheese
¼ cup grated Cheddar cheese
¼ cup grated Parmesan cheese
1 ¼ teaspoons chopped fresh parsley
1 ¼ teaspoons chopped fresh oregano
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Place flour, sugar, baking powder, garlic powder, salt, and dill in the bowl of a food processor and pulse to combine or you can mix manually as well. Add 4 tablespoons melted butter and vegetable oil and pulse to combine.
  • With food processor on low speed, slowly drizzle in water until the dough begins to form a ball. Remove dough from food processor and cover with a plastic wrap. Let rest for 10 minutes.
  • Roll out dough as thin as possible on a lightly floured surface; thinner than pie crust if possible, thin like crepes works best. Cut the dough into your desired shapes with a cookie cutter, or cut with a knife or pizza cutter and arrange on the prepared baking sheet. Let it rest for another 10 minutes.
  • Using a toothpick, prick several holes in each cracker. Don't skip this step; you will not have nice, flat crackers if you skip.
  • Bake in the preheated oven until golden brown, about 10 minutes. Remove from the oven, brush the tops with remaining melted butter, and immediately sprinkle with coarse sea salt. Remove from baking sheets and allow to cool completely on a wire rack.
  • While crackers cool, prepare cheese topping: Mix mascarpone, Cheddar, and Parmesan cheeses with parsley, oregano, thyme, rosemary, and pepper. Sprinkle over crackers and serve.
