Spiced apple syrup with clementine & cloves image

Mix this syrup into hot apple juice or wine for a sweet and fiery burst of Christmas flavour. It's also delicious drizzled over ice cream for dessert

200ml apple juice
1 cinnamon stick
1 tsp whole allspice
1 mace blade
2 whole cloves
small strip fresh ginger
1 clementine , zest finely peeled with a vegetable peeler
100g golden caster sugar

Steps:

  • Heat the apple juice with the whole spices, ginger, zest and sugar. Bring to the boil, then simmer for 10 mins.
  • Remove from the heat and leave to cool, then strain the syrup into small bottles.

12 lbs firm tart apples, no more than 2 1/2-inch diameter
12 cups sugar
6 cups water
1 1/4 cups white vinegar, 5
3 tablespoons whole cloves
3/4 cup red hot cinnamon candies or 8 cinnamon sticks
1 teaspoon red food coloring (optional)

Steps:

  • Wash apples. Peel and slice one apple at a time. Immediately cut crosswise into 1/2" slices, remove core area with a melon baller and immerse in ascorbic acid solution to keep the apples from discoloring.
  • In a 6 quart saucepan, combine sugar, water, vinegar, cloves, cinnamon candies, or cinnamon sticks and food coloring (if using).
  • Heat to a boil, stirring constantly until sugar dissolves then lower heat and simmer 3 minutes.
  • Drain apples and add to hot syrup, and cook for 5 minutes.
  • Fill prepared jars with apple rings and hot flavored syrup, leaving a 1/2" headspace.
  • Check for air bubbles and add more liquid if needed to maintain the 1/2" headspace.
  • Process pint or quart size jars in a boiling water bath for 20 minutes .
  • Adjust time according to your altitude.
  • NOTE: This can also be pressure canned. Pressure Canner - Hot pack pints or quarts and process for 8 minutes at the pressure specified according to your altitude and / or style of canner.

1/8 c stevia
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground cloves
2 Tbsp chopped almonds ( optional)
4 medium tart apples
3/4 c boiling water
1 pt nonfat vanilla frozen yougart

Steps:

  • 1. Preheat oven to 375 degrees Mix brown sugar and stevia together, add cinnamon, allspice, cloves and chopped almonds. Core apples and fill the cavities with the brown sugar mixture. Place the apples upright in the baking dish and pour the water around them. Bake until tender about 30 min. Transfer the apples to individual serving plates and serve with frozen yogurt.

Old Fashioned Spiced Crab Apples is a vintage pickled apple recipe that makes the perfect side to any fall meal and is a must at Thanksgiving!

a quart of crab apples
1 3/4 cups cider vinegar
1 1/2 cups water
3 cups sugar
1 Tbsp cardamom pods
1 tsp whole cloves

Steps:

  • Wash the apples well, and leave the stems intact.
  • Gently prick the apples all over with a fork or the tip of a small sharp knife. This is so that they don't burst as they cook.
  • Combine the vinegar, water, and sugar in a pot.
  • Roll over the cardamom pods with a rolling pin or the side of a wine bottle to gently crack them open. Don't lose any of the black seeds. Add the cardamom (seeds and pods) and cloves to the pan and bring to a boil
  • Turn down the heat and add the apples to the pot. Simmer for about 5 to 10 minutes, depending on the size of your apples. Use your judgement, you don't want the apples to get soft and mushy.
  • Carefully remove the apples from the hot liquid and pack them into your jar or jars.
  • Strain the pickling liquid and then pour into the jars, completely immersing the fruit. Let cool and then cap and refrigerate.
  • The apples can be canned, as well, for longer storage.
  • Makes 1 quart

1 cup apple cider
1/4 cup orange juice
1 cinnamon stick, broken in half
3/4 cup (packed) golden brown sugar
2 teaspoons grated orange peel
1/2 teaspoon ground cloves

Steps:

  • Combine apples, cider, orange juice and cinnamon stick in heavy large saucepan. Bring to boil. Reduce heat to medium-low. Cover and simmer until apples are very tender, stirring occasionally, about 10 minutes. Discard cinnamon stick.
  • Puree apple mixture in processor. Return to same saucepan. Stir in brown sugar, orange peel and cloves. Simmer over medium-low heat until mixture is dark in color and thick, and mounds on spoon, stirring frequently, about 45 minutes. Transfer to large bowl. Cool completely. (Can be prepared 1 week ahead. Cover and refrigerate.)

Steps:

  • Gather the ingredients.
  • In a large nonreactive pot, mix vinegar and sugar until brown sugar is dissolved. Bring to a boil.
  • Put cloves and cinnamon sticks in a cheesecloth bag, and tie with a string.
  • Add crab apples and spice bag to the pot, and boil until apples are tender.
  • Remove the fruit with a slotted spoon, and pack into hot sterilized jars . Add the boiling syrup to within 1/2-inch of the top. Seal.
  • Process crab apples in a boiling water canner for 20 minutes.
  • Remove from canner and place on a towel-lined counter and let come to room temperature. Listen for the suction pop indicating a good seal. When cool, tighten the bands and store in a cool, dry, dark place for up to one year.
