These sugar-coated cranberries are a tasty snack, or make a pretty holiday garnish. They are simply made with cranberries, sugar, and water.

1 cup firm red cranberries
1 cup granulated sugar
1 cup water

Steps:

  • After washing and drying cranberries, prick each berry in several places with a needle. Boil sugar and water to 230 degrees F. Add cranberries and cook gently until syrup will jell when dropped from the tip of a spoon. Remove berries. Place on wax paper to cool and dry. Roll cranberries in granulated sugar.

1 cup sugar
2 tablespoons water
1/2 cup cranberries

Steps:

  • Cook 1/2 cup sugar and 2 tablespoons water in heavy small saucepan over low heat, stirring until sugar dissolves. Transfer to top of double boiler. Add cranberries. Cover berry mixture and place over simmering water. Cook 45 minutes, stirring occasionally. Remove from over water. Let cranberry mixture stand at room temperature overnight.
  • Place remaining 1/2 cup sugar on plate. Drain cranberries well. Add to sugar and turn to coat. Let dry at least 30 minutes. (Can be prepared 3 days ahead. Cover and refrigerate.)

2 cups cranberries, fresh or frozen
2 cups superfine sugar

Steps:

  • Combine the granulated sugar and 1 cup water in a saucepan and bring to a boil. Cook until the sugar is dissolved. Add the cranberries and weight with a plate to submerge. Cover the pot and refrigerate for at least 8 hours and up to 48 hours. Strain the cranberries, reserving the syrup. (Refrigerate leftover syrup in an airtight container for up to 1 month.)
  • Spread the superfine sugar on a baking sheet; toss the cranberries in the sugar. Refrigerate on the baking sheet, uncovered, for 1 hour. Toss again in the sugar before transferring to an airtight container. Refrigerate until ready to serve.

2 1/2 cups/500 grams sugar
3 cups/285 grams fresh cranberries

Steps:

  • Combine 1 cup water and 1 cup/200 grams sugar in a saucepan. Cook over medium-high until the sugar dissolves and the mixture comes to a simmer around the edges. Cool the syrup to room temperature.
  • When the syrup is cool, add the cranberries and stir to coat. Work in batches if necessary. Use a slotted spoon to remove the cranberries from the syrup and place them on a cooling rack set over a sheet pan to drain. Let the cranberries dry for 45 minutes. Save the syrup for cocktails or another batch of cranberries.
  • Pour the remaining 1 1/2 cups/250 grams sugar into a shallow dish and roll the cranberries, a few at a time, in the sugar until completely coated. Let them dry completely then store in an airtight container room temperature for up to 3 days. After a few days they may start to soften and weep a bit. Cook them down into sauce or quick jam.

Steps:

  • Heat sugar and water in a small saucepan over medium heat; cook and stir until the sugar has dissolved, about 3 minutes. Remove syrup from heat and allow to cool until lukewarm. Add cranberries to syrup and carefully stir to coat. Cover and refrigerate 8 hours to overnight.
  • Sprinkle a baking sheet with sugar and line a second baking sheet with parchment paper.

  • Heat 1/2 cup water and 1/2 cup sugar over medium high heat in a medium saucepan. The water will be very shallow. Stir to combine and bring to a simmer. Make sure the sugar has fully dissolved. Once simmering, remove from the heat and stir in the cranberries. Stir to coat the cranberries completely in the water. Allow to sit for 10 minutes.
  • Line a baking sheet with wax paper. Using a slotted spoon, transfer the cranberries to the baking sheet and allow to dry for a minimum of 30 minutes. Lay the cranberries as flat (single layer) as possible.
  • After 30 minutes to an hour, pour the remaining sugar over the cranberries, using a wooded spoon, stir the cranberries to coat completely.
