Skillet Macaroni and Cheese image

I have another version of Skillet Macaroni and Cheese posted, but this one is different with the cheeses it includes and several other ingredients. In addition, it adds a bit of heat with the hot sauce. This recipe calls for homemade bread crumbs. To make them, pulse 2 slices of hearty white sandwich bread in a food processor until coarsely ground. The recipe is from Cook's Country.

2 tablespoons unsalted butter
2 cups fresh breadcrumbs
salt
pepper
3 3/4 cups water, plus more as needed
1 (12 ounce) can evaporated milk
3 cups elbow macaroni
1 teaspoon cornstarch
2 teaspoons hot sauce
3 cups sharp cheddar cheese, shredded
2 cups monterey jack cheese, shredded

Steps:

  • Melt butter in large nonstick skillet over medium-high heat.
  • Add bread crumbs, 1/4 t salt, and 1/4 t pepper and cook, stirring frequently, until deep golden brown, about 5 minutes.
  • Transfer to bowl and wipe out skillet.
  • Bring water, 1 1/4 cups evaporated milk, and 1/2 t salt to simmer in skillet over medium-high heat.
  • Add macaroni and cook, stirring often, until macaroni is al dente, 8-10 minutes.
  • Whisk remaining evaporated milk, cornstarch, and hot sauce in small bowl, then stir into skillet.
  • Simmer until slightly thickened, about 1 minute.
  • Off heat, stir in cheeses, one handful at a time, adding water as needed to adjust consistency.
  • Sprinkle with toasted bread crumbs.
  • Serve.

8 ounces elbow macaroni
2 tablespoons butter
1 onion, chopped (about 1/2 cup)
1 tablespoon flour
3/4 cup heavy cream (or up to 1 cup cream- use light cream if desired)
3/4 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 garlic clove, minced
2 cups cheddar cheese, grated, divided (choose an aged cheese)
1 tablespoon fresh parsley, chopped

Steps:

  • In a large pot of boiling salted water, cook macaroni 8-10 minutes until al dente. Drain well and set aside.
  • While the macaroni cooks, melt butter over medium heat in an oven safe skillet or saucepan.
  • Add onion and cook, stirring often until soft and golden.
  • Add flour and cook, stirring for 2 minutes until flour is combined and mixture is light brown.
  • Whisking constantly, add cream slowly until well mixed. Stir in pepper, salt, nutmeg and garlic. Bring mixture to a boil, stirring.
  • Stir in 1 1/2 cups of the cheese, a little at a time, until melted.
  • Stir in the macaroni to coat with sauce. Sprinkle with remaining cheese and parsley on top.
  • Place skillet under broiler for 2 or 3 minutes or until cheese is bubbly.

8 ounces extra-sharp cheddar cheese, cubed (the extra sharp is what makes it)

Steps:

  • Cook macaroni, drain, and place in casserole dish.
  • Cook butter, salt, pepper, and flour.
  • Add milk and boil for 1 minute.
  • Add cheese a few cubes at a time until it all blended.
  • Pour over macaroni.
  • Bake at 350 until a "crust" is formed, about 30-45 minutes.

Fannie Farmer's Classic Baked Macaroni & Cheese image

To me Fannie Farmer's recipe is the only "real" Macaroni & Cheese. It's from my 1946 edition of "Fannie Farmer's Boston Cooking School Cookbook". With time on it's side - this recipe is hands down the best for traditional, homemade baked macaroni & cheese - comfort food. Please Note: If you use CHEAP CHEESE you will end up with a BLAND and FLAVORLESS DISH!

1 (8 ounce) package macaroni
4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup cream
1/2 teaspoon salt
fresh ground black pepper, to taste
2 cups cheddar cheese, shredded good quality
1/2 cup breadcrumbs, buttered

Steps:

  • Preheat oven to 400°F.
  • Cook and drain macaroni according to package directions; set aside.
  • In a large saucepan melt butter.
  • Add flour mixed with salt and pepper, using a whisk to stir until well blended.
  • Pour milk and cream in gradually; stirring constantly.
  • Bring to boiling point and boil 2 minutes (stirring constantly).
  • Reduce heat and cook (stirring constantly) 10 minutes.
  • Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.
  • Turn off flame.
  • Add macaroni to the saucepan and toss to coat with the cheese sauce.
  • Transfer macaroni to a buttered baking dish.
  • Sprinkle with breadcrumbs.
  • Bake 20 minutes until the top is golden brown.
  • (You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

This is just good 'ol mac and cheese- rich, creamy and satisfying. Any cheese you like can be put in there, and any shaped noodle will work (though I think elbows, penne and rotini work best). Whole milk makes a richer mac and cheese, but didn't miss it here (and dh only will drink whole milk!). This will serve 8 adults a main course, more if there are kids or as a side.

4 cups 1% low-fat milk
1/2-1 teaspoon ground mustard

  • serve as is or pour into a large casserole dish or 13x9 pyrex and sprinkle with bread crumbs and/or parmesan and bake at 350 for about 30 minutes.
