EASY ONE-BOWL CHOCOLATE CUPCAKES



Easy one-bowl chocolate cupcakes image

These easy one bowl chocolate cupcakes are rich, moist and delicious topped with swirls of rich, fudgy dark chocolate buttercream frosting.

200 g (1 cup) caster sugar
175 g (1½ cups) flour
50 g (½ cup) unsweetened cocoa powder
1½ tsp baking powder
½ tsp salt
1 extra-large egg
125 ml (½ cup) milk
75 ml (¼ cup) canola oil / melted butter
1 tsp vanilla extract
125 ml (½ cup) boiling water (you can also use coffee)
125 g (1 stick) Butter, softened
400 g (5-6 cups) icing/powdered sugar (sifted)
½ cup unsweetened cocoa powder (sifted)
100 g (3.05oz) dark chocolate (melted)
1 tbsp cold, strong coffee
2-3 tbsp milk

Steps:

  • Pre-heat the oven to 180ºC/350°F. Grease and line a 12-hole muffin tray with cupcake liners.
  • Sift all the dry ingredients into a large bowl.
  • Add the egg, milk, oil/melted butter and vanilla extract and combine with the dry ingredients. Beat until the mixture is smooth.
  • Slowly add the boiling water and mix until combined.
  • Distribute the batter between the cupcake liners and place in the oven.
  • Bake for 20-25 minutes until a skewer inserted comes out clean.
  • Remove from the oven and allow to cool completely before decorating.
  • To make the frosting, beat the butter until light and fluffy then add the icing sugar and cocoa powder and beat until well incorporated. Add the coffee, melted chocolate and 1 tbsp of milk and beat until light and fluffy. You might need more milk to reach the desired consistency.
  • Transfer the frosting to a piping bag and pipe onto the cooled cupcakes.
  • Decorate and serve.

1/2 cup VERY hot coffee OR hot water (I prefer just boiled water or coffee here)
1 stick unsalted butter, cut into small cubes and brought to room temperature
1/2 cup semi-sweet chocolate chips
2 large eggs + 1 large egg yolk, at room temperature
1 cup granulated sugar
1 teaspoon vanilla
3/4 cup + 2 tablespoons all-purpose flour, not packed
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1/2 cup full-fat sour cream
2 tablespoons coconut OR canola oil
1 stick unsalted butter
3 cups confectioners sugar
3/4 cup unsweetened cocoa powder
2 tablespoons sour cream
3 tablespoons half and half (this is sold in the dairy aisle in most stores)
1/4 teaspoon salt
1/2 teaspoon vanilla

Steps:

  • Preheat the oven to 350 degrees (F). Line a 12-cup cupcake/muffin tin with cupcake liners and lightly spray the liners with non-stick spray (optional but it does help them peel right off).
  • In a large bowl combine the hot liquid (coffee or water) with the softened cubes of butter and chocolate, whisk vigorously until completely combined. *The chocolate and butter need to be completely melted into the liquid before moving onto the next step.
  • Whisk in the eggs and yolk, one at a time, then whisk in the sugar and vanilla.
  • Place a fine-mesh strainer over the wet ingredients and to it add the flour, baking soda, baking powder, cocoa powder, and salt; stir together and allow it to fall into the wet ingredient - you're basically sifting the dry ingredients into the bowl with the wet ingredients. Stir with rubber spatula until *just combined.
  • Add the sour cream and oil and fold into the batter, stirring until combined.
  • Divide the batter among the 12 liners in your prepared pan, filling each cup 3/4 of the way full. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean. Cool *completely before frosting.
  • Sift together the confectioners sugar and cocoa powder, whisking well to ensure it's bump and lump free!
  • Using a handheld mixer OR a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until creamy; about 2 minutes.
  • Reduce speed to low and slowly add the sifted sugar/cocoa powder, alternating with the sour cream and half and half, then add the vanilla and salt. Once all of the ingredients have been added, beat on high speed until light and creamy and combined; beat for at least 1 minute on high.
  • Frost cooled cupcakes and top with any decorations if desired.
  • Cupcakes stay fresh at room temperature in an airtight container for up to 4 days.

1 cup whole milk
1/2 cup vegetable oil
1 tablespoon distilled white vinegar
2 teaspoons pure vanilla extract
1/4 cup hot tap water

Steps:

  • Mix the flour, granulated sugar, brown sugar, cocoa powder, baking soda, salt and baking powder in a large bowl with a mixer on low speed until combined. Add the eggs, milk, vegetable oil, vinegar and vanilla. Increase the speed to medium and beat until smooth, about 2 minutes. Beat in the hot water until smooth.
  • Turn this one-bowl chocolate cake batter into three different desserts.
  • Layer Cake:
  • Brush two 9-inch round cake pans with vegetable oil, line with parchment, then brush with more oil and dust with flour.
  • Divide the batter between the pans; tap against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the centers of the cakes comes out clean, 40 to 45 minutes. Let cool 15 minutes in the pans, then turn out onto racks to cool completely; discard the parchment.
  • Sheet Cake:
  • Line a 9-by-13-inch baking dish with foil and brush with vegetable oil.
  • Pour the batter into the pan; tap against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Let cool completely in the pan.
  • Cupcakes:
  • Line 30 muffin cups with paper liners.
  • Pour the batter into the muffin cups, filling them about halfway. Tap the pans against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the centers of the cupcakes comes out clean, 20 to 25 minutes. Let cool 5 minutes in the pans, then remove to racks to cool completely.
