SIMPLY FABULOUS ARTICHOKE AND CRAB DIP
Have had this recipe for ages and just noticed I don't have it here on Zaar. This is a fabulous, simple and delicious dip great for entertaining. Three cheeses - Cheddar, Jack and Asiago cheese melted with artichoke hearts and crab makes this dip stand out. Serve with chips, sliced baguettes and or vegetables.

Steps:
- Preheat oven to 375 degrees F.
- Drain the cans of artichoke hearts well. Using paper towels, squeeze as much liquid as possible out of the artichoke hearts, then coarsely chop and set aside.
- Mix together sour cream, cream cheese, and mayonnaise until smooth. Fold in artichoke hearts, 1 1/2 cups cheddar cheese, 1 1/2 cups Monterey jack cheese, all of the asiago cheese, crabmeat, 3/4 cup of the green onion, salt, and pepper.
- Spread mixture evenly into a 2 quart casserole dish or baking pan. Sprinkle remaining 1/2 cup cheddar cheese and 1/2 cup Monterey jack cheese evenly over the top. Bake in a 375 degree F oven for 30-40 minutes, or until bubbly. Remove from oven, and garnish with remaining green onion.
- Serve hot.
- (This dip is great with tortilla chips, baguette slices, crackers or raw vegetables.).
FABULOUS SPICY CRAB CANAPES (DIP)
This recipe was found in the New York Times Cookbook. We have been making it for years. It is a wonderful, easy recipe for a party appetizer. You just mix, chill, and serve! It can't get any easier. The original recipe actually called for fresh lump crabmeat, but my husband and I have always used imitation crabmeat and it is awesome. You also add Tabasco sauce and ground pepper according to taste. I love everything to be spicy, but it can definitely be calmed down just by adding less. I usually double, if not triple this recipe. Any leftovers can also be used on bread to make wonderful sandwiches. I put one hour for the chill time, but really, you just want to allow time for the flavors to mix together well. If you like crabmeat, you will definitely like this recipe!

MOM'S HOT CRAB DIP
A great dip for holidays, parties, or just because. This dip has been a staple during family holidays and Mom heard about it the one year she didn't make it. I like things a little on the spicier side so I add a dash or two of cayenne pepper for some kick. A small chafing dish or mini-crock pot is perfect for keeping it at the right temperature.

- Combine all ingredients.
- Taste and make adjustments as needed for your preference. (If you'd like to kick it up a bit like me, add a dash of cayenne pepper.)
- Place dip in a chafing dish or mini-crock pot to heat, stirring occasionally until warmed through. (Option: heat on the stove at medium-low heat until warm, then reduce heat to low to keep warm.).
- Serve with crackers.
