PASSOVER APPLE CAKE

Passover Apple Cake image

Passover apple cake. A classic from the astoundingly awesome cookbook author, Arthur Schwartz. Kosher for Passover yet still tastes like any traditional apple cake. Talk about a godsend.

Provided by Arthur Schwartz

Categories     Dessert

Time 1h40m

Number Of Ingredients 9

1/2 cup coarsely chopped walnuts or pecans
1/2 to 3/4 cup granulated sugar
1 tablespoon ground cinnamon
3 large eggs
3/4 cup granulated sugar
1/3 cup vegetable oil or mild olive oil
3/4 cup matzo cake meal*
5 cups (24 to 34 oz) apples, peeled, halved, and cut into 1/4-inch-thick (6-mm) slices, preferably Golden Delicious or Crispin (Mutzu)
1/3 cup raisins ((optional))

Steps:

  • Preheat the oven to 350°F (175°C). Position an oven rack in the center of the oven and lightly oil an 8-inch square glass baking dish.
  • In a small bowl, mix together the walnuts, sugar, and cinnamon.
  • In a large bowl with a stand mixer or handheld mixer on medium speed, beat the eggs until well combined. Beat in the sugar, about 2 tablespoons at a time, mixing until the mixture is thick and foamy. Beat in the oil, adding it in a steady stream. Scrape down the bowl with a rubber spatula. With the spatula, stir in the matzo cake meal, blending well. The mixture will be VERY thick.
  • Spread half the cake mixture in the prepared baking dish. Sprinkle about half the topping mixture evenly over the batter. Arrange half the apples on the batter, making layers if you need. Sprinkle with the raisins. Scrape the remaining batter over the apples, spreading it out to cover the apples. Arrange the remaining apples on the batter and sprinkle evenly with the remaining topping mixture.
  • Bake for 1 hour and 15 minutes, or until the sides of the cake pull away very slightly from the baking dish and the topping has begun to caramelize. (A cake tester is not reliable. It will not come out clean due to the moist richness of this cake.)
  • Let the cake cool in the baking dish for several hours until room temperature before cutting it into serving portions. This cake is yet another Yiddish food that improves with age. Keep the cake in its dish, covered tightly with plastic, and the next day the topping will have become a moist, candy-like coating.

EASY PASSOVER CAKES

Easy Passover Cakes image

Passover, with its flour ban, creates difficulties for even the most adept of bakers, and many people crave inspiration. Here are a series of traditional cakes, along with some new, more tempting ideas.

Provided by Ruth Joseph

Categories     Cake     Dessert     Bake     Passover     Kosher for Passover     Kidney Friendly     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves 8

Number Of Ingredients 11

9 tablespoons Passover margarine or butter
2/3 cup superfine sugar
1 tablespoon vanilla sugar
4 organic free-range eggs
2/3 cup cake meal
2/3 cup potato flour
1 1/2 teaspoons Passover baking powder
a pinch of salt
3 tablespoons milk or water
6-8 tablespoons jam of your choice
superfine sugar, for dusting

Steps:

  • Preheat the oven to 350°F and line a 7-inch round cake pan with parchment paper.
  • In a mixing bowl, cream the margarine or butter with the sugars until light and fluffy. Separate the eggs and beat in the yolks only. Sift in the cake meal, potato flour, and baking powder, and fold in carefully. In a separate bowl, whisk the egg whites with a pinch of salt until soft peaks form. Add a spoonful of the egg white to the cake batter and mix in thoroughly. Now fold in the rest of the eggs whites, taking care not to knock out any air. Spoon the mixture into your prepared pan and bake for 35-40 minutes until risen and golden.
  • After the cake has cooled, slice in half horizontally and spread the bottom half with jam. Replace the top half and sprinkle superfine sugar over the top.

DELICIOUS PASSOVER APPLE CAKE

Delicious Passover Apple Cake image

one of those it's too good to be pesach recipes that has been a standard in my family for decades. The recipe is very forgiving, and is delicious in all its forms. Enjoy!

Provided by Sarah Chana

Categories     Dessert

Time 1h5m

Yield 18 serving(s)

Number Of Ingredients 11

6 large baking apples, peeled and sliced thin or grated on the largest side of the grater
6 eggs
1 1/2 cups sugar
1 teaspoon salt
1 cup oil
2 lemons, peel grated and juiced
1 1/2 cups matzo meal or 1 1/2 cups cake crumbs
1/2 cup potato starch
cinnamon
raisins
chopped nuts

Steps:

  • Preheat oven to 375F, and grease a 9" x 13" pan. (If you are feeling virtuous, dust it with cake meal, but I never do -- ).
  • Peel, slice or grate apples and set aside.
  • Beat eggs in mixer for about 5 minutes.
  • Beat in sugar and salt, then oil, lemon juice and lemon peel.
  • Mix together the cake/matzo meal and the potato starch, and add to the batter, still beating.
  • Spoon or pour half of the batter into the greased pan.
  • Top with all of the apples and raisins, if desired. (Don't worry, there aren't too many apples!).
  • Sprinkle with cinnamon.
  • Top with remaining batter, and sprinkle with chopped nuts, if desired.
  • Bake at 375F for 35-45 minutes (or more).

  • Matzoh Pizza. Just because pizza dough isn't kosher for Passover, it doesn't mean you can't improvise. Place as many squares of matzo as you want on a large pan, spread over them some tomato sauce, sprinkle on some mozzarella, and pile on all the veggies you want.
  • Matzoh Brie. Matzo brie is a slight variation of a Kosher for Passover French toast. Break matzo into little one inch pieces, soak in cool water, dry, mix with eggs, then to the frying pan the matzo goes.
  • Matzoh Ball Soup. This is a classic you can't go through Passover (or life) without. Make the matzo balls first by mixing matzo ball mix with egg and vegetable oil, roll them into 1-inch balls, then drop them into salted boiling water.
  • Ungar's Gefilte Fish. This easy Passover recipe is one of the simplest and quickest recipes to make all Passover. All you have to do is boil water, unwrap the loaf, and drop it in.
  • Charoset. A necessity on the Seder plate and a yummy snack, charoset is something you always want in your fridge during Passover. Mix together peeled and chopped granny smith apples with crushed walnuts, cinnamon, a tiny dash of ginger, and red wine.
  • Matzoh Caramel Crunch. Melted caramel over crispy matzoh, all covered with melted semi-sweet chocolate. Put it in the oven at 375ºF for 20 minutes, then take out and refrigerate until it hardens.
  • Tzimmes. The perfect balance of sweet and sour flavors, Tzimmes is the best side to pair with chicken, brisket, or any meat dish. Chop up carrots, sweet potatoes, and green apples.
  • Noodle Kugel. You may be wondering how to make noodle kugel since noodles aren't Kosher for Passover. It turns out that they sell K for P noodles, and they're perfect for this easy Passover recipe.
  • Salmon. Even though it's something you can eat year-round, why deny yourself the delicious taste of honey teriyaki glazed salmon on Passover? All you have to do is marinate a piece of salmon (whatever size you want) with honey and teriyaki sauce and then cook the salmon at 350ºF for half an hour.
  • Blueberry Muffins. Kosher for Passover blueberry muffins are surprisingly delicious. Switch out flour for cake meal and potato starch, fold that in with blueberries, and add a mixture of sugar, oil, and eggs until blended.

  • Coconut Custard and Rhubarb Tart. Dairy-free, flourless, and kosher for Passover—this rhubarb-topped tart is just the thing to bake this spring. It's also one of the prettiest, most delicious Passover desserts we know of, thanks to the luscious coconut custard, the fragrant coconut crust, and the lovely pink topping.
  • Chocolate Macaroon Cake. Chocolate-dipped coconut macaroons go big in this rendition of flourless chocolate cake. Topped with a luscious ganache and sprinkled with unsweetened coconut flakes, it's sure to please everyone at the table.
  • Bibingkang Cassava (Cassava Cake) Grated cassava takes the place of flour in this classic Filipino cake, which soaks up the rich coconut milk, and lends a sweet, nutty flavor and a sticky, chewy texture.
  • Meringue Sundae with Peppery Berry Sauce. Store-bought meringue cookies and frozen berries make this elegant sundae come together in a snap. Get This Recipe.
  • Chocolate Mousse. Since it needs at least six hours to set up—and can be made up to 24 hours in advance—this creamy chocolate mousse is the perfect make-ahead option.
  • Chocolate, Pistachio, and Tahini Truffles. Tahini replaces the traditional heavy cream in these orange-scented treats for a nuttier but equally rich flavor.
  • Candied Kumquats. A simmer and soak in sugar syrup glazes kumquats and liquifies their interiors so they taste like delicious shots of marmalade. Get This Recipe.
  • Fallen Chocolate Cake. To make the cake Passover-friendly for a meat meal, use pareve margarine instead of butter, and skip the mascarpone cream in favor of non-dairy whipped topping.
  • Classic Crème Brûlée. If you've never tried crème brûlée at home, a small Passover gathering might be the perfect occasion—and this classic Gourmet recipe is the one to try.
  • Strawberry Rhubarb Compote with Matzo Streusel Topping. Think of this as the perfect spring cobbler. Matzo cake meal and potato starch form the buttery streusel topping, tangy strawberries and rhubarb (plus a touch of lemon) make a luscious, zingy filling.

  • Charoset. Any recipe that calls for apples, walnuts, brown sugar, cinnamon, and wine is a recipe I can support. The trick to turning this recipe into the best charoset recipe you’ve ever had is to chop the apples and walnuts by hand.
  • Brisket. Brisket is a traditional Passover dish that tastes great year-round. As you already know, it takes a while to cook, but nothing beats a flavorful smoked brisket, no matter how long it takes.
  • Matzo Ball Soup. Whether you want to make this traditional Jewish soup for Passover, Rosh Hashanah, or a cold, rainy weekend, this recipe is one of the best.
  • Tzimmes. Tzimmes means “to make a fuss,” and everyone will make a fuss over this beautiful, colorful, slightly sweet side dish at your next seder. It features root vegetables, including orange yams, white sweet potatoes, and carrots, and dried fruits like apples, prunes, cranberries, and more.
  • Matzo Brei (Fried Matzah) Matzo Brei is basically scrambled eggs with some fried matzo thrown in for good measure. You can also make omelet-style or cake-style eggs and matzo, but I prefer mine scrambled.
  • Apple Matzo Kugel. This is an incredible dish, full of sweet, apple-cinnamony goodness. It’s also filled with raisins, dried apricots, butter, orange juice, and brown sugar.
  • Roast Chicken. This roast chicken has perfectly crispy skin slathered with mouth-wateringly good garlic and lemon butter. It’s tender, and the inside is moist and unbeatably juicy.
  • Homemade Horseradish. “Lookin’ for some hot stuff, baby, this evening!” With this homemade horseradish, you’ll have all the hot stuff you can handle.
  • Matzo Lasagna. This kosher, vegetarian lasagna is so good; it’s something you’ll want to eat regularly, so bookmark this recipe. It has all your favorite herbs and veggies in it, including onions, spinach, mushrooms, zucchini, garlic, basil, and more.
  • Pot Roast. I love anything I can throw in a slow cooker and forget about until it’s done. It’s the ultimate in cooking convenience. Plus, pot roast is something homey and comforting.
