1 tablespoon corn, peanut or vegetable oil
1 cup granulated sugar
1/4 cup water
1 1/4 cups whole blanched almonds or hazelnuts

Steps:

  • Rub a marble, glass or Formica surface with the oil.
  • Use a saucepan with a very heavy bottom to prepare this candy. Put the sugar and water in saucepan, and bring to boil. Cook over moderate heat, stirring constantly, about 5 minutes or to a temperature of about 250 degrees on a candy thermometer.
  • Remove syrup from heat and add nuts, stirring constantly with a wooden spoon until syrup becomes grainy. Return saucepan to heat and cook, stirring, until syrup hardens and becomes white. Continue to cook, stirring, until sugar grains melt and become liquid again. This requires time and patience. The cooking time will vary, depending on the intensity of the heat. Cook, stirring, until syrup takes on a dark, translucent, caramel color. This may require 10 to 15 minutes. Do not allow syrup to scorch or burn, or it will become bitter.
  • Immediately pour and scrape the candy onto the lightly oiled surface. Smooth over the top. Let stand until cool and totally hardened.
  • Candy may be broken into pieces or left whole; pieces may be pulverized in a food processor for use on top of ice cream or as a garnish or ingredient in such things as souffles in butter creams.

Brown sugar, cream, and pecans combine to produce delicious pralines. This recipe only calls for four ingredients, so it's easy to whip up.

1 cup cream (heavy)
2 cups sugar (brown, packed)
1 teaspoon vanilla extract
2 cups pecans (halves, lightly toasted)

Steps:

  • Prepare a sheet tray by covering it with waxed paper.
  • Combine brown sugar and cream in a medium heavy-bottomed saucepan over medium-high heat.
  • Stir with a wooden spoon until sugar is dissolved, then do not stir anymore.
  • Insert a candy thermometer and boil until the sugar reaches 240 F (soft-ball stage).
  • Remove from heat and stir in vanilla. Continue to stir until the mixture thickens and becomes opaque.
  • Stir in all pecans, and drop by teaspoonfuls on a prepared sheet tray.
  • Allow to cool completely at room temperature before removing from waxed paper.
  • Serve and enjoy!

1 ½ cups toasted pecans
1 ½ cups white sugar
⅜ cup butter
¾ cup brown sugar
½ cup milk
1 teaspoon vanilla extract

Steps:

  • Line a baking sheet with aluminum foil.
  • In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Drop by spoonfuls onto prepared baking sheet. Let cool completely.

  • In a heavy bottomed medium saucepan, stir together the brown sugar, granulated sugar, molasses, and cream over medium high heat. Stir with a wooden spoon until the sugar dissolves.
  • Bring to a boil and continue to cook for about 5 minutes, until the mixture begins to thicken and form a soft ball when a small amount is dropped from a spoon into a bowl of cold water, about 5 minutes. (Or using a candy thermometer; the temperature needs to reach 240F.) . Be very careful through this process, as the mixture is very hot and can burn severely.
  • Remove the pan from the heat and use a wooden spoon to stir in the butter, pecans, salt and vanilla. Continue to stir vigorously until thick, 2 to 3 minutes. Working quickly, spoon heaping tablespoons of the mixture onto the lined baking sheet. Allow the pralines to cool completely. Store in an airtight container.
