1/2 cup Crisco shortening
1/4 cup butter (softened)
1 cup packed light brown sugar
1 3/4 cups sifted flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups Quaker Oats
3 cups pitted chopped dates
1/4 cup sugar
1 1/2 cups water

Steps:

  • Mix shortening, butter and brown sugar together until light and fluffy.
  • Sift together flour, baking soda and salt.
  • Mix oats into flour mixture.
  • Mix oat mixture into shortening mixture until crumbly.
  • Put half of the oat mixture in a 9" x 13" greased and floured pan and press and flatten in pan.
  • Date filling:.
  • Place dates, sugar and water in medium saucepan over low heat, stirring constantly until thickened - about 10 minutes. Let cool.
  • Spread date filling onto oat crust.
  • Cover with remaining crumb mixture, press lightly.
  • Bake at 400 degrees for 30 minutes.
  • Let cool and cut into bars.

Boil together:
1 cup of chopped (pitted dates)
1/2 cup brown sugar
1 cup water
1 tsp fresh orange zest
Mix together:
2 1/2 cups oatmeal
2 cups whole wheat pastry flour (*can use gluten-free all-purpose flour)
1/2 cup brown sugar (*original recipe calls for 3/4 cup but I cut the sugar amount to 1/2 cup)
1 tbsp real maple syrup
1 cup butter (softened (I use olive oil butter blend sticks))
1/2 tsp vanilla extract
1 tsp sea salt
1/2 tsp baking soda dissolved in 1 tbsp boiling water

Steps:

  • Combine dates, 1/2 cup brown sugar, orange zest and 1 cup water in a saucepan over medium-high heat.
  • Bring to a boil, reduce heat and cook until thickened to a spreadable texture.
  • Cool mixture completely and combine remaining ingredients in order given.
  • Mix thoroughly.
  • Pack one half of mixture in a 9x13 pan sprayed with cooking spray or lightly greased with butter, pressing lightly.
  • Spread date mixture over top.
  • Top with the other half of oatmeal mixture, pressing lightly.
  • Bake at 350 degrees for 30-40 minutes until lightly golden on top.
  • Remove from the oven
  • and cut into squares while warm.

1/3 cup sugar
1/4 cup molasses
1/8 cup vegetable oil (I use peanut oil)
1 egg
1 teaspoon vanilla (I also add 1/2 tsp maple extract)
1 1/2 cups large-flake rolled oats
1 cup whole wheat flour
1/4 cup wheat germ
1/4 cup skim milk powder
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup dates, chopped

Steps:

  • In a large bowl stir together applesauce, sugar, molasses, oil, egg and vanilla until smooth.
  • Stir in oats, flour, wheat germ, milk powder, cinnamon, baking powder and baking soda; mix thouroughly; stir in dates.

2 1/2 cups (1 pound) pitted and chopped dates
1 cup water
Scant 1 cup sugar
1/3 cup lemon juice
3 cups rolled oats
2 1/2 cups all-purpose flour
1 3/4 cups brown sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon salt
1 3/4 cups unsalted butter, melted

Steps:

  • In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
  • Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
  • Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize. Cool on a rack, to room temperature. Run a knife around the inside edge of the pan to release, and cut into 12 squares.

Steps:

  • In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  • Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
  • In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
