Amish Macaroni Salad is a potluck classic! This pasta salad combines cooked macaroni, hard boiled eggs, crispy veggies and a creamy dressing for a side dish your friends will ask for again and again.

Steps:
- Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until tender. Drain, and set aside to cool.
- In a medium bowl, whisk together the Miracle Whip, relish, mustard, sugar, vinegar, salt, pepper, and celery seed.
- In a large bowl mix together the cooked and cooled macaroni with the dressing. Gently fold in eggs, onion, celery and bell pepper.
- Cover and cool for at least 3 hours before serving.

- To make the hard-boiled eggs: Add the eggs to a medium-sized saucepan. Cover with cold water and bring up to a boil over medium heat. Cover with a lid and turn off the heat. Let the eggs sit in the hot water for 14 minutes. Drain and cool under cold running water. Peel the eggs and chop. Reserve.
- While the eggs are cooking, bring a large pot of salted water to a boil over high heat and add the macaroni. Cook until al dente. Drain and rinse with cold water.
- In a large serving bowl, combine the eggs, ham steak, celery, shallots and lemon juice Add the macaroni and stir to combine.
- In a separate bowl, whisk together the mayonnaise, mustard, pickled relish, and salt and pepper, to taste. Add the dressing to the macaroni and toss to coat. Season with more salt and pepper, if needed. Cover and chill for 2 hours for the flavors to meld.

A longtime favorite of my family. We don't have an outdoor summer gathering without this and Hellmann's Original Potato Salad. Can't go wrong with these delicious recipes. This is great for someone with little time and money. I couldn't find anything this simple when I was looking so I thought I would add it. You can add or substitute many different things. My sister puts chopped sweet pickles. My grandma would put cucumber and canned crab meat and shrimp instead of ham.

- Make the dressing: In a large bowl, whisk the mayonnaise, mustard, vinegar, soy sauce and hot sauce until smooth. Drain and dry the red onion and stir it into the dressing along with the bell pepper, scallions and a generous pinch of salt.
- Make the pasta: In a large pot, bring 4 quarts of water to a rolling boil. Add a generous amount of salt.
