AMISH WHITE BREAD
This is my favorite home baked bread recipe. I got it from an Amish cookbook years ago and no other bread recipe I have tried beats it. It is a standard in our house with beef stew.

Steps:
- Dissolve yeast in 1/2 cup warm water.
- In large bowl, combine sugar, salt, 2 cups water and shortening.
- Stir in yeast mixture.
- Gradually add flour to form a soft dough.
- Turn onto floured surface and knead until smooth.
- Place in a greased bowl and cover and let rise for about 2 hours.
- Punch down and divide into 2 portions and form loaves.
- Place in greased 9 x 5 loaf pans and prick tops with fork.
- Let rise until higher than pans (about 2 hours).
- Bake at 375 degrees for 25 to 30 minutes.
- Cool for ten minutes.
- Rub butter all over tops of loaves.
- Place pans on sides until loosened.
- Remove bread from pans and cool completely on racks.

Steps:
- In a large bowl, dissolve the sugar in warm water, then add the yeast.
- When yeast is proofed, mix in salt and oil.
- Mix in flour one cup at a time.
- Knead dough adding more flour if necessary.
- Place in a well oiled bowl and turn dough to coat.
- Cover with a damp cloth.
- Allow to rise until doubled in bulk, about 1 hour.
- Punch dough down.
- Knead for a few minutes and divide in half.
- Shape into loaves, and place into oiled pans.
- Allow to rise until dough has risen 1 inch above the pans.
- Bake at 350 degrees for approximately 30 minutes.

Steps:
- Places warm water and sugar in mixing bowl, mix to dissolve.
- Add yeast dissolve in sugar water, let stand 5-15 mins till bloomed.
- Add salt, oil, and half the flour and mix.
- Add remaining flour, use dough hook. Mix til dough pulls away from the sides of the bowl.
- Put on lightly floured surface and knead shortly.
- Place in greased bowl, flip to cover both sides.
- Cover with warm damp towel.
- Set in warm place, let rise till double in size. About an hour.
- Remover towel and punch down.
- Lay out on lightly floured surface, cut in half.
- Flatten out into rectangle and "jelly roll" into loaf and pinch ends. Repeat with second half.
- Cover and let rise 30-50 mins til doubled in size.
- Preheat over to 350 degrees.
- Bake 25-30 mins til brown.
- Pull out and brush with melted butter.
- Let rest 10 mins on cooling rack before removing.

AMISH WHITE BREAD

Steps:
- In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
- Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
- Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
- Bake at 350 degrees F (175 degrees C) for 30 minutes.

AMISH BREAD FOR THE BREAD MACHINE
This bread is very light and airy. It is due to the fact the bread is put through the rising cycles twice.

- Add ingredients in order given.
- Select basic bread cycle. Let it go until the bread completes the 2nd rising. Then turn off the machine and restart it on basic cycle again.
- Let cook as normal.

GRANDMA'S AMISH BREAD
This bread is from my Amish Grandma's recipe collection. My favorite times with Grandma were always centered around the kitchen and this was one of my favorites to make with her. I've updated it slightly, since Grandma didn't have electricity to work with, but it still tastes (almost) the same. This is still a family favorite at holiday gatherings and with Easter coming up it'll be a hit!

Steps:
- In a large bowl combine 2 cups of the flour with the yeast.
- In a small sauce pan heat milk, sugar, butter and salt to 120-130 degrees F.
- Slowly add the milk mixture to the flour mixture beating well.
- Add the eggs and beat well.
- Slowly add the remaining flour 1/2 cup at a time until dough is moderately stiff.
- Knead dough until smooth and elastic using stand mixer with dough hook at medium speed for 2 to 3 minutes or 6 to 8 minutes by hand on a lightly floured board.
- Place dough into a lightly oiled bowl, turning once to coat.
- Cover bowl with a warm cloth that is slightly damp.
- Let rise 30 to 45 minutes or until double in size.
- Punch down and divide in half.
- Cover portions with the cloth and let rest 10 minutes.
- Shape dough into 2 loaves and put into greased loaf pans.
- Let rise again until double.
- Bake in a pre-heated oven at 375 degrees F 25 to 30 minutes.
- Remove from pans and cool completely on a wire rack.
- When completely cool wrap and store in a cool, dry place.

- In the bowl of an electric mixer, mix together the sugar and warm water. Sprinkle the yeast over top, and let it set for 10-15 minutes, or until foamy and bubbly.
- Stir in the salt, vegetable oil, and half of the flour. Add the remaining flour and use the dough hook to mix the dough together on medium high speed for several minutes. The dough will be pretty sticky.
- Generously flour a clean surface and your hands. Turn the dough out onto the flour and knead it for 2-3 minutes. Place the dough in a clean, oiled bowl and cover it with saran wrap. Place in a warm place to rise for 1 hour, or until doubled in size. Grease two 9 inch bread pans.
- Punch the dough down with your fist, re-flour your surface and turn the dough out again. Divide the dough into two even sections (weigh it if you want to be really precise). Press each section into a rectangle, about 9 x 13 inches in size. Roll the dough, starting on the short side. Fold the ends down and pinch the seams together. Place each section of dough in the greased pans. Cover with saran wrap and let rise until doubled again, about 45 minutes.
