1 sheet puff pastry, thawed
1/4 cup cream cheese with chives, softened
1/4 lb smoked salmon
1 teaspoon fresh dill, chopped
1 teaspoon capers, chopped
2 eggs, beaten

Steps:

  • Preheat oven to 400 degrees.
  • Spread cream cheese over puff pastry, covering it to the edges.
  • Arrange slices of salmon in one layer over cream cheese.
  • Sprinkle evenly with dill and capers.
  • With the long edge of the dough facing you, roll the top and bottom edges toward each other until they meet in the middle. Roll as tightly as possible, working quickly.
  • Wrap in parchment paper and refrigerate for 5 minutes.
  • Using a serrated knife, slice the roll into 18 even pieces. Arrange pieces on a baking sheet lined with parchment paper. Brush with beaten egg.
  • Bake for 15 minutes. Rotate pan in oven and cook an additional 10 minutes or until pastry is golden brown.
  • Serve palmiers (pahlm-YAY) hot from the oven or at room temperature.

320g sheet puff pastry
1 egg , beaten
1 tbsp poppy seeds
5 tbsp cream cheese
100g smoked salmon
small bunch chives , snipped

Steps:

  • Unroll the pastry and brush one side all over with the beaten egg. Sprinkle over the poppy seeds, then flip over the pastry. Spread the cream cheese over the pastry and top with the smoked salmon, then scatter over the chives. With one of the longer sides facing you, mark a line roughly down the centre, but don't cut all the way through. Tightly roll each end in towards the middle until you reach the centre. Slice into 1cm-thick pieces and place, cut-side up, on a baking tray lined with baking parchment. Chill until ready to bake, or freeze for up to 2 months.
  • Heat oven to 200C/180C fan/gas 6. Bake for 20-25 mins until puffed up and golden brown (if baking from frozen, cook for an extra 5 mins). Leave to cool on a wire rack before packing for your picnic.

1 yellow onion, diced
1 tablespoon pureed garlic
1 yellow peppers, diced
1/2 cup white wine
2 cups bechamel, recipe follows
1 cup cream
8 ounces brined smoked salmon
4 tablespoons capers, plus 2 tablespoons, fried for garnish
Salt and pepper
1 1/2 limes, juiced
1 tablespoon fresh chopped dill
Serving suggestions: over cooked pasta
Saute the onions, garlic, and yellow peppers. Deglaze the pan with white wine, add the bechamel, cream, smoked salmon, and 4 tablespoons capers. Slowly bring to a boil.
Season to taste.
Add the lime juice and fresh dill just before serving over pasta. Garnish with deep fried capers.
3 tablespoons butter
3 tablespoons flour
1 quart half-and-half, at about 150 degrees F
1 onion whole, with a bay leaf attached with 2 cloves

Steps:

  • Melt the butter add all the flour at one time and cook until a sandy texture is achieved. Slowly add the half-and-half, mixing well, and bringing to a boil after each addition. Add the onion with the bay leaf and clove, and simmer for 45 minutes.
  • Strain before using.

150g smoked salmon, trimmings are fine
200g tub soft cheese
1 tbsp crème fraîche, only if you have some
juice half a lemon
small bunch dill or chives, chopped
breadsticks or granary toast, to serve

Steps:

  • If you aren't using smoked salmon trimmings then chop the salmon into small pieces. Tip the soft cheese, crème fraîche (if using) and lemon juice into a food processor, season generously with black pepper and blitz to your liking. Add the smoked salmon and pulse a few times if you want the paté chunky or blitz some more if you want the paté smooth and pink.
  • Stir the herbs into the paté and spoon into a large or four smaller bowls and serve with warm toast as a starter or with breadsticks as a dip.

These are SOOOOOOOOOOO quick and easy to make and are really lovely to have with coffee or as a very LIGHT dessert! The beauty of these are that they can be made well in advance and stored in an airtight container!

1 (375 g) packet puff pastry
2 -3 tablespoons caster sugar, approximately

Steps:

  • Roll the pastry out on a suface sprinkled with castor sigar.
  • (roll pastry out to a rectangle shape- about 20cm x 35cm), and trim the edges with a sharp knife.
  • Sprinkle castor sugar over the top of the pastry.
  • Fold in the LONG sides of the rectangle- (so that they meet in the centre), and sprinkle with a little MORE sugar.
  • Now fold in 1/2 lengthways and press SLIGHTLY.
  • Cover and refrigerate for 30 minutes.
  • Cut the pastry roll into 12mm slices (about 1cm slices), and place about 10cms apart on lightly greased oven trays.
  • Bake in MODERATELY HOT oven (210-230'C) for 10 minutes, then turn Palmiers over and bake for a further 10 minutes- or until crisp!
  • Remove from oven and place Palmiers on wire rack to cool.
  • Sprinkle with sifted icing sugar.

Smoked salmon fillets with dill-pickled vegetables, crème fraîche & salmon roe image

Pickle vegetables and serve with smoked salmon for a fabulous festive starter. Keep the leftover veg in the fridge to have with cold cuts over Christmas

6 lightly smoked salmon fillets
15g unsalted butter , melted
200ml crème fraîche
50g salmon roe
100g cucumber
3 tsp sea salt flakes
350ml white wine vinegar
2½ tbsp granulated sugar
2 tsp celery seeds
1 tsp black peppercorn , bruised
150g carrots
100g radishes
150g cauliflower , cut into small florets
½ red onion , finely sliced
½ small bunch dill , torn into little sprigs

Steps:

  • First, for the pickles, cut the cucumber into rounds and layer it in a sieve, sprinkling with 2 tsp salt as you go. Set over a bowl and leave for a couple of hours - the salt will draw out the moisture.
  • Bring 200ml water to the boil in a pan with the white wine vinegar, sugar, 1 tsp salt, celery seeds and black peppercorns. Leave to cool.
  • Peel the carrots and cut them into batons. Clean the radishes really well, then cut them in half lengthways. Squeeze the drained cucumbers of excess moisture.
  • Put all the vegetables in a 1-litre sterilised jar with the dill and pour the cooled vinegar over them, then seal with a lid. Leave to sit at room temperature for two days before serving, or keep chilled. Will keep in the fridge for four weeks.
  • Heat the oven to 190C/170C fan/gas 5 and put the salmon fillets on a baking sheet. Brush the fillets with the melted butter and scatter with black pepper. Cook for 14 mins.
  • Serve the salmon with some of the pickled vegetables, a generous tablespoon of crème fraîche on each fillet, finished with a spoonful of salmon roe on top.

Egads but I love salmon no matter what way it's served and smoked salmon is a real treat. This makes my mouth water just to think of it.

700 g large jersey royal potatoes or 700 g other new potatoes
1 bunch spring onion, trimmed and sliced
300 g full-fat creme fraiche or 300 g heavy cream
salt and pepper
1 tablespoon butter
200 g smoked salmon
1 tablespoon dill
2 egg yolks
100 ml milk

Steps:

  • Peel the potatoes and slice thinly, cutting lengthways.
  • The quickest way to do this is with a mandoline- a blade set in a wood or steel frame- or with the slicer attachment of your food processor.
  • Rinse the potatoes and shake dry.
  • Place the crème fraîche or cream in a heavy-bottomed saucepan, big enough for both the potatoes and the cream.
  • Gently melt the cream.
  • Stir in the spring onions and season with half a teaspoon of salt and a generous grating of pepper.
  • Add the potatoes and stir them around thoroughly so all the slices are coated with cream.
  • Cover the pan and cook, stirring occasionally and checking that the bottom slices aren't sticking and burning, for 15 minutes.
  • Remove the lid.
  • The potatoes will now be almost cooked and there will be far more sauce.
  • Give everything a good stir and remove from the heat.
  • Preheat the oven to 360F or 180 degrees C.
  • Smear a 1.
  • 5 to two-litre capacity gratin dish with the butter.
  • Whisk the egg yolks with the milk.
  • Chop the dill.
  • Add one third of the potato mixture to the buttered dish and smooth it out.
  • Scatter half the dill over the potatoes, season again with salt and pepper and then cover with half the smoked salmon.
  • Dribble over half the egg mixture.
  • Make another layer exactly the same and then finish the pie with potato, arranging the top so the surface is smooth.
  • Place the dish in the oven and cook for 25 minutes until the top is patched with brown and the pie is cooked through, the potato and salmon held in a creamy, dill custard.
