2 large potatoes (about 2 cups mashed), diced, boiled and drained
1 pound white-fleshed fish, COOKED (cod, haddock, pollock, halibut, flounder)
1 large egg
3 tablespoons sour cream
2 tablespoons butter, softened
2 green onions, sliced
3 tablespoons chopped fresh parsley
1 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dry ground mustard
panko breadcrumbs (, for coating)
(Gluten-free use GF panko breadcrumbs)
oil for frying
Homemade Tartar Sauce

Steps:

  • Place all ingredients, except for the breadcrumbs, in a large bowl and mash until thoroughly combined.Form the mixture into 8 equal patties and roll them in the panko breadcrumbs. (You can make smaller patties if you prefer.) Refrigerate the patties for at least 30 minutes or until they've firmed up.
  • Heat some oil in a non-stick pan and fry the patties on each side for 3-4 minutes until lightly browned, being careful not to overcrowd the pan.
  • Serve immediately with our BEST homemade tartar sauce!

This recipe is from Ainsley Harriot's Gourmet Express. It the only one I use to make fish cakes for the family. It's very very easy and a favourite with my kids - the perfect combination for me!

Yield 4-8 Fish Cakes

Number Of Ingredients 9

450 g floury potatoes, cubed
450 g smoked haddock
1 hard-boiled egg, chopped
2 tablespoons snipped chives
salt & freshly ground black pepper
2 tablespoons seasoned flour
1 egg, beaten
100 g white breadcrumbs
vegetable oil, for shallow frying

Steps:

  • Cook the potatoes in boiling, salted water and drain and mash well when tender.
  • Meanwhile, place the fish in a saute or frying pan and cover with boiling water; Bring to the boil and simmer for 5 minutes until just cooked.
  • Drain the fish and remove the skin; Flake the fish with a fork, discarding any bones.
  • Mix together the potatoes, fish, boiled egg, chives and salt and pepper; Using your hands, shape the mixture into 4 or 8 even sized cakes.
  • Dust the fish cakes with the seasoned flour, dip in the beaten egg, then coat in the breadcrumbs, making sure they are fully covered.
  • Heat the oil in a frying pan and shallow-fry for 3-4 minutes on each side until crisp and golden.

Number Of Ingredients 8

1 (6 ounce) package seasoned stuffing mix (your favorite flavor)
3/4 cup water
1/3 cup mayonnaise
2 (6 ounce) cans tuna, drained and flaked
1 tablespoon lemon juice
1 cup cheddar cheese, shredded
1 green onion, chopped
tartar sauce (optional)

Steps:

  • Mix all ingredients together.
  • Cover and refrigerate for 10 minutes.
  • Heat a large non stick skillet sprayed with cooking spray over medium.
  • Using a 1/3 cup measure shaped the tuna mixture into patties.
  • Add to skillet.
  • Cook 3 minutes on each side turning carefully until golden brown on both sides.
  • Can be served with tartar sauce.

12 ounces fresh skinless white fish fillets or 12 ounces frozen skinless white fish fillets (such as haddock or cod)
1 beaten egg
1/4 cup fine dry breadcrumb
2 tablespoons finely chopped onions
4 teaspoons light mayonnaise or 4 teaspoons salad dressing
1 tablespoon dijon-style mustard
1 tablespoon snipped fresh parsley
1 teaspoon lime zest
1/4 teaspoon salt
2 tablespoons cornmeal
1 tablespoon cooking oil
green goddess sauce (in 'zaar)
chives (optional)

Steps:

  • thaw fish, if frozen, rinse fish, pat dry with paper towels.
  • Cut fish into 1/2 inch pieces.
  • Set aside.
  • In a medium bowl, combine egg, bread crumbs, onion, mayonnaise or dressing, mustard, parsley, lime zest and salt.
  • Add fish, mix well.
  • Shape into 1/2 inch thick patties.
  • Coat both sides of the fish patties with cornmeal.
  • In a large nonstick frypan or on a nonstick griddle heat oil over medium heat.
  • Add half the fish cakes.
  • Cook for 4 to 6 minutes or until fish flakes easily when tested with a fork, gently turning once.
  • Remove from frypan.
  • Repeat with remaining cakes.
  • Serve with Green Goddess Sauce.
  • If desired garnish with fresh chives.

8 ounces fish fillets (Walleye or Northern Pike or Crappie)
1 1/2 cups mayonnaise
4 eggs
1/2 cup cooked wild rice
1/2 cup parmesan cheese (shredded)
4 green onions (chopped)
2 garlic cloves (minced)
20 Ritz crackers (crushed)
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon herbs
2 tablespoons butter
1/2 cup mayonnaise
2 garlic cloves (minced)
1 ounce blue cheese (crumbled)

Steps:

  • - Cook the fish in simmering water until fish flakes. (about 5 minutes).
  • - In a large bowl combine the fish (flaked), mayonnaise, wild rice, onions, cheese, and garlic.
  • - Add eggs and mix with a fork.
  • - Crush the Ritz crackers and fold into the batter until firm enough to form into cakes.
  • - Heat oil or buttter over a medium high heat.
  • - Cook on each side for 2 to 3 minutes until nicely browned.
  • - Serve with Aioli Sauce.

I'm a simple man therefore I like simple things and this little recipe is very simple and quick to make. Great for a camping trip where you'll cook your catch the same night. I've done it many times. You can use any type of fish making this. Serve with a Tarter or Hollandaise sauce and enjoy.

1 lb boneless fish fillet
5 large potatoes
3 tablespoons chopped onions
2 eggs
1 tablespoon water
salt and pepper

Steps:

  • Peel and cut up potatoes.
  • Place in pot with fillets and cover with cold water.
  • Boil until the potatoes are"fork done".
  • Drain off the water.
  • Mash the potatoes and fish together.
  • Mix chopped onion, eggs, and 1 tablespoon water.
  • Add this to the fish and potatoes and mix well.
  • Form the mixture into hamburger size patties.
  • Season with salt and pepper and fry in well greased skillet until golden brown on both sides.

2 salmon fillets (240g)
240 g sweet potatoes, cubed
1 lemon zest
1 tablespoon dill, chopped
1 tablespoon parsley, chopped
1 teaspoon mustard
4 tablespoons buckwheat flour
1 egg
6 tablespoons ground almonds
1 teaspoon coconut oil

Steps:

  • Peel and chop the sweet potato into small chunks, then place in a pan of water. Bring to the boil then simmer for 20 mins (until softened).
  • Meanwhile grill the salmon for 10 minutes (until just cooked).
  • Once the potatoes are ready, drain out the water then mash. Mix in the lemon zest, dill, parsley and mustard.
  • Break the salmon fillets into flakes, then mix with the potato mixture.
  • Divide the mixture into 6 cakes.
  • Place the flour, egg and ground almonds in separate bowls.
  • Coat each cake in flour, then the egg then the ground almonds.
  • Heat the coconut oil in a frying pan, then gently fry the cakes for 3-4 minutes on each side, then serve.
