1 tablespoon extra-virgin olive oil
1 ounce linguica sausage or fresh chorizo, removed from the casing
1 1/2 tablespoons sliced shallot, optional
1 1/2 tablespoons chopped garlic
1 pound fresh manila clams
1 1/2 ounces medium-size shrimp, peeled and deveined
1/4 cup crushed vine ripe tomatoes, fresh or canned
2 tablespoons white wine
Smoked paprika
Hawaiian sea salt and freshly ground black pepper
1 tablespoon chopped fresh parsley
1 lemon, cut into wedges, for serving

Steps:

  • In a cataplana pan or shallow-sided pot with cover, heat 1 teaspoon of the olive oil over medium-high heat. Add the sausage and cook until lightly browned. Add the shallots, if using, and garlic. Cook until softened and fragrant, 1 to 2 minutes.
  • Add the clams, shrimp, tomatoes, wine and some paprika. Season with salt and pepper. Cover and steam gently over medium to medium-low heat just until the clams open and the shrimp are pink, 4 to 5 minutes.
  • Taste for seasoning. Sprinkle with the remaining oil, chopped parsley and a squeeze of lemon. Serve directly out of the pan.

3 medium Spanish onions, peeled and sliced thin
3 large garlic cloves, peeled and minced
2 large sweet green bell peppers, cored, seeded, and cut in thin strips
1/4 cup olive oil
1 large dried bay leaf, crumbled
1 (16-ounce) can water-packed tomatoes (do not drain)
1 (6-ounce) can tomato sauce
2 ounces lean prosciutto, cut into small dice
1/4 pound lean smoked ham, cut into small dice
1/4 pound chourico, chorizo, or pepperoni, cut into small dice
4 dozen uniformly small clams in the shell, scrubbed clean
1/2 cup dry white wine
1/4 cup coarsely chopped fresh flat-leaf parsley
Accompaniment: Pao or other rough country bread

Steps:

  • Meanwhile, prepare the sauce: Cook the onions, garlic, and green peppers in the oil in a large heavy skillet over moderate heat for 8 to 10 minutes, or until limp and golden. Add the bay leaf, tomatoes, and their juice. Break up any large clumps of tomatoes, bring mixture to a simmer, cover and cook slowly for 30 minutes; add the tomato sauce, prosciutto, smoked ham, and chourico; cover, and cook 30 minutes longer. The sauce can be made as much as 2 days ahead of time but do not buy the clams until the day you plan to serve the cataplana. The sauce should be covered and refrigerated until you are ready to proceed.
  • To assemble the cataplana: Spoon 1/2 the tomato mixture into the bottom of a very large cataplana pot, and bring to a simmer over moderate heat. Adjust the heat so that the mixture barely boils, arrange the clams on top, spoon in the remaining tomato sauce and wine, cover tightly, cook 10 minutes over moderately low heat, do not lift cover. Open the cataplana or kettle, scatter the parsley evenly on top, and then toss the clams lightly. If clams have not opened, cover and cook slowly for 5 to 10 minutes longer or until the clams open. Discard any that do not.
  • Carry the cataplana or kettle to the table, take off lid, and ladle into large soup plates. Cook's note: Types of small clams to use are West Coast butter clams or small Littleneck clams. Also, be sure to put out a large bowl for empty clamshells.

8 ounces fresh chorizo sausage (about 1 link), removed from casing
1/2 cup diced white or yellow onions
2 cloves garlic, minced
Salt and freshly ground black pepper
1 pound littleneck clams (about 12 clams), cleaned and soaked in water to remove impurities
1 cup dry white wine, plus more if needed
1/2 cup fresh cilantro, coarsely chopped
3 to 4 tablespoons cold unsalted butter, cubed
Crusty bread or baguette, for serving

Steps:

  • Heat a large saucepot over medium heat. Add the chorizo and cook, using a spoon or spatula to break up the sausage into small pieces, until the sausage begins to brown. Add the onions and garlic and sprinkle lightly with salt and pepper. Continue to cook until the sausage has browned, 3 to 4 minutes, taking care not to burn the garlic.
  • Add the clams to the pot and let settle for a minute, then add the white wine and cilantro. Re-season with salt and pepper and cover tightly with a lid. Let cook about 5 minutes, making sure that the broth at the bottom is at a simmer during that time. After 5 minutes, the clams should have opened or be mostly open; if not, or if the mixture is dry, add another 1/4 cup or so of wine, cover and simmer until the clams are open, 1 to 2 minutes longer. Taste the broth for seasoning and add salt or pepper if necessary. Add the butter to the broth and stir to combine.
  • Transfer to a large serving bowl, making sure to pour the broth over the clams. (Remove any unopened clams and discard them.) Serve with crusty bread or baguette.

CHORIZO WITH SHRIMP, CLAMS AND MUSSELS



Chorizo with Shrimp, Clams and Mussels image

½ lb(s) chorizo sausage
4 Tbsp olive oil
2 clove garlic, minced
1 Tbsp shallots, chopped fine
6 shrimp peeled, and deveined- tail on 2½5's
6 fresh mussels, cleaned
6 clams, soaked and washed
¼ cup white wine
3 Tbsp chopped Italian parsley
Salt and pepper to taste
Basil cress for garnish

Steps:

  • Preheat a sauté pan with olive oil over medium heat.
  • Remove the meat from the chorizo sausage and add to the hot pan. Add the shallots and minced garlic and continue to cook for approx. 5-7 minutes.
  • Add the fresh clams and cover for 2 minutes. Add the shrimp, mussels and deglaze the pan with white wine. Cover the sauté pan and continue to cook until the clams and mussels open.
  • Add the fresh parsley and season with salt and pepper. Remove from heat and discard any unopened mussels or clams.
  • Divide the sausage and seafood onto two plates and garnish with the fresh basil cress. Serve while hot with crusty bread.

BRAISED CLAMS WITH SHRIMP AND CHORIZO



Braised Clams with Shrimp and Chorizo image

1 tablespoon oil
2 garlic cloves, minced
4 shallots, sliced thin
1/2 cup chopped chorizo
32 clams rinsed
32 shrimp, 16/20 per pound, peeled, cleaned
1 cup white wine
4 cups clam juice
2 tablespoons butter
1 tablespoon chopped herbs (thyme, parsley, and rosemary)
Garlic bread, recipe follows
2 cloves garlic, sliced very thin
1/2 cup olive oil
8 slices crusty Italian bread

Steps:

  • In a saute pan on medium, heat olive oil. Add cloves, shallots, and chorizo, and cook for 30 seconds. Add clams and shrimp. Add white wine and reduce by half. Add clam juice and cover with another pan and steam until all clams open. Finish with butter and herbs. Serve in a large bowl with Garlic Bread.
  • Preheat the oven to 275 degrees F.
  • In a saute pan over medium high heat, heat the olive oil. Add the garlic and cook until the garlic is a toasty brown color. Remove the garlic oil from the heat and brush onto both sides of the bread. Place the bread on a baking sheet and place in the oven. Bake for 10 minutes, or until bread is golden brown.

2 tablespoons olive oil
1 green bell pepper, chopped
1 onion, chopped

1 lb dried white bean (such as cannellini or Great Northern)
7 cups water
1 bay leaf
1 teaspoon kosher salt, plus more to taste
fresh ground black pepper
2 tablespoons olive oil

1 1/4 cups crushed tomatoes
1 lb large shrimp, peeled deveined and cut into bite-size pieces

Steps:

  • Preheat oven to 350 degrees F.
  • In a Dutch oven, cook the chorizo in oil, over medium heat, until the chorizo has rendered some fat and begins to brown, about 5 minutes; add bell pepper and cook until it starts to soften, 3 minutes more.
  • Add the onion and cook until it softens, 5 minutes; add garlic and cook until fragrant, 3 minutes.
  • Stir in the dried beans, water, and bay leaf; bring to a simmer, stirring occasionally.
  • Cover tightly and bake in oven for one hour; add salt, stir, and continue cooking, covered, until beans are tender, 45 minutes to 1 hour.
  • The consistency should be like a thin stew, if not, stir in a little water; remove bay leaf and discard.
  • Season to taste with more salt and pepper.
  • NOTE: The dish can be prepared to this point a day ahead of time and refrigerated.
  • In a large skillet (that has a tight fitting lid) heat oil over medium heat and cook garlic and parsley 3 minutes; add white wine and reduce to a thin syrup, about 3 minutes.
  • Add crushed tomatoes and cook until slightly reduced, 5 minutes.
  • Add in shrimp and clams, cover tightly, and raise heat to high; cook, shaking pan often, until clams open, about 5 minutes.
  • Stir clams and shrimp into warm beans and heat through; taste and adjust seasoning.
  • Ladle stew into shallow soup bowls and garnish each with 2 teaspoons chopped pepperoncini and parsley, if desired.

2 tablespoons olive oil
1 green bell pepper, chopped
1 onion, chopped

3 lbs clams
2 tablespoons olive oil
2 large onions, chopped
2 garlic cloves, smashed
2 lbs pork fillets, cut into 1 inch cubes
2/3 cup dry white wine
4 -5 fresh tomatoes
1 cup finely chopped coriander or 1 cup finely chopped parsley
1 teaspoon cayenne pepper
salt
fresh ground pepper

Steps:

  • Wash clams thoroughly under running water, and discard any that do not close when tapped, which means they are dead.
  • Soak overnight in salt water, to expel sand.
  • Heat olive oil in a (cataplanda) cast iron dutch oven.
  • Fry onions and garlic until soft and golden.
  • Add pork and brown on all sides.
  • Add clams and dry white wine.
  • Increase heat, and cook briskly, shaking pan until wine has reduced.
  • Add tomatoes, coriander or parsley, cayenne pepper,salt, and black pepper.
  • Cover tightly and simmer for 30-40 minutes or until pork is tender.
  • Traditionaly the"Cataplana" (cast iron dutch oven) is brought to the table for serving.
