Time 1h

Yield 24 cookies

Number Of Ingredients 15

2 1/4 cups all-purpose flour
1 cup old-fashioned oats
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground allspice
1 1/2 sticks unsalted butter, melted and cooled slightly
1/2 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 Fuji or Gala apple, coarsely grated
2 teaspoons pure vanilla extract
1 cup confectioners' sugar
2 tablespoons milk

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, oats, cinnamon, baking powder, baking soda, salt and allspice in a medium bowl. Combine the butter, brown sugar, granulated sugar and eggs in a separate bowl; whisk until smooth. Stir in the grated apple and vanilla, then stir in the flour mixture until just combined.
  • Scoop heaping tablespoonfuls of the dough onto the prepared baking sheets, about 1 inch apart. Bake until just set around the edges, 10 to 12 minutes, switching the baking sheets halfway through. Let cool 5 minutes on the baking sheets, then transfer to a rack to cool completely.
  • Make the glaze: Whisk the confectioners' sugar and milk in a bowl; drizzle on the cookies.

APPLE BETTY "GRANOLA" WITH BANANA CREME

Apple Betty

Time 2h40m

Yield 6 servings

Number Of Ingredients 21

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup cold shortening, cut into pieces
2 tablespoons ice water (have a glass of ice water handy)
7 to 8 tart apples
2 tablespoons fresh lemon juice
2 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup sugar, divided
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
6 tablespoons cold butter, cut into pieces
1/2 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups whole milk
1 teaspoon vanilla extract
5 egg yolks
4 bananas
2 tablespoons butter
6 sprigs fresh mint leaves, chiffonnade, for garnish

Steps:

  • Preheat oven to 450 degrees F.
  • Combine the flour and salt in a bowl. Add the shortening, and cut in with a pastry blender until the mixture resembles coarse crumbs. With a fork, stir in just enough water to bind the dough. Gather into a ball and transfer to a lightly floured surface. Roll out to about 1/8-inch thick. Transfer to a 9-inch pie pan and trim to leave a 1/2-inch overhang. Fold the overhang under for a double thickness. Flute the edge with your fingers. Refrigerate.
  • For the filling and topping:
  • Peel, core and slice the apples into a mixing bowl. Add lemon juice and stir to coat apples. In a separate small bowl, mix together the cornstarch, salt, and just 1/3 cup of the sugar (reserving the rest for the topping). Add the sugar mixture to the apples and stir to blend.
  • For the crumb topping, combine the remaining sugar, flour, cinnamon and butter in a bowl. Blend with your fingertips until the mixture resembles coarse crumbs. Set aside.
  • Spoon the fruit filling into the pie shell. Sprinkle the crumbs lightly and evenly over the top. Bake for 10 minutes, then reduce the heat to 350 degrees F. Cover the top of the pie loosely with a sheet of foil, and continue baking until browned, 35 to 40 minutes more.
  • In a large saucepan mix sugar, cornstarch, and salt and blend well, before putting on stovetop. Gradually whisk in milk and vanilla extract until combined, then whisk egg yolks in until no yellow streaks remain. Bring to a simmer over low heat whisking to keep smooth. Remove pan from heat, add bananas, and blend using an immersion blender. Finish by whisking in butter.
  • Serve pie topped with banana creme and garnished with mint chiffonnade.

Try making this classic Italian dessert with delicate vanilla and a fresh strawberry topping. The perfect light sweet for a chilled summer gathering

Provided by Elena Silcock

Categories     Dessert

Time 15m

Number Of Ingredients 7

2 ½ sheets gelatine
150ml milk
400ml double cream
60g caster sugar
1 vanilla pod, split lengthways
fresh strawberries, to serve
strawberry compote, to serve

Steps:

  • Add the sheets of gelatine to a bowl of cold water and soak for 5 mins.
  • Pour the milk and cream into a saucepan with the sugar and vanilla seeds (to scrape the seeds out of the pod, use the back of a knife). Stir to combine and bring to a simmer, then remove from the heat. Take the gelatine out of the cold water and squeeze out the excess, then add to the milk mixture. Stir until completely dissolved. Tip into four ramekins and place in the fridge to set for at least a couple of hours.
  • To serve, turn each ramekin upside-down onto a serving plate. If the panna cotta won't drop out, carefully dip the ramekin in a bowl of warm water to loosen it. Serve with a drizzle of strawberry compote and sliced fresh strawberries.

California raisins and other dried fruits in spicy wine sauce for this Italian dessert. Yet one more to stash - those raisin guys have got some good stuff going on! From the California Raisin Marketing Board who credit CIA Greystone. Man, oh man, this sounds good to me! I will update after making (& reducing by 80%). Time is just a guess, not including overnight chill.
