HANGER STEAK TACOS WITH CHILE AND HERB OILS

Hanger Steak Tacos with Chile and Herb Oils image

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 17

1 large orange, halved
1 lime, halved
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 teaspoon ground ancho powder
Kosher salt
1 1/2 pounds hanger steak
1 tablespoon apple cider vinegar
1/2 teaspoon sugar
1/2 large red onion, thinly sliced
1 rounded teaspoon paprika
1 cup vegetable oil, plus more for the pan
1 cup lightly packed fresh cilantro sprigs, plus additional leaves for garnish
1/2 cup lightly packed fresh parsley leaves
About 1/4 cup Mexican crema or sour cream
12 corn tortillas, warmed
1 avocado, halved, pitted and sliced

Steps:

  • Bring a medium saucepan filled with water to a boil. Squeeze half of the orange and half of the lime into a large bowl and add the coriander, cumin, 1/2 teaspoon ancho powder and 1 teaspoon salt. Poke the steak all over with a fork and add it to the bowl, turning to coat; marinate at room temperature for 15 minutes.
  • Meanwhile, combine the juices from the remaining orange and lime halves in a medium microwave-safe bowl with the cider vinegar, sugar, 1/4 teaspoon salt and 2 tablespoons water. Microwave until simmering, about 45 seconds. Add the red onion and let stand, tossing occasionally, until ready to serve.
  • In a small saucepan, combine the paprika with 1/2 cup oil and the remaining 1/2 teaspoon ancho power. Bring to just below a simmer over medium-low heat and cook, stirring occasionally, until the oil is hot and bright red, about 3 minutes. Transfer to a small bowl.
  • Prepare a large bowl of ice water. Add the cilantro and parsley to the boiling water and cook until just bright green and wilted, about 20 seconds. Quickly transfer to the ice bath to cool. Remove the herbs from the water and squeeze out as much of the water as possible. Place in a blender with the remaining 1/2 cup oil and blend on high until as smooth as possible. Strain through a fine-meshed sieve into a small bowl.
  • Heat a little vegetable oil in a large cast-iron pan over medium-high heat until very hot. Remove the steak from the marinade and pat dry. Cook the steak, turning once, until well-seared on the outside and medium rare, 5 to 6 minutes per side. Transfer the steak to a cutting board and let rest 5 minutes; thinly slice across the grain. Sprinkle with additional salt.
  • Adorn 4 plates with some crema and the chile and herb oils. Make 3 steak tacos per person, topping the tortillas with pickled onion, avocado, cilantro a drizzle of crema and some chile and herb oils.

Citrus Marinated Steak Taco Bowls Recipe image

Orange and lime juice marinated grilled steak, combined with a serrano chile fueled guacamole, gives these tacos a spicy zestiness that pairs perfectly with a Corona™ Familiar.

Provided by Old El Paso

Categories     Fajitas     Tacos

Time 1h35m

Yield 8

Number Of Ingredients 12

1 beef flank steak (about 1 1/4 lb)
3 tablespoons orange juice
3 tablespoons fresh lime juice
3 cloves garlic, finely chopped
1 package (1 oz) Old El Paso™ original taco seasoning mix
2 large ripe avocados, pitted and peeled
1 medium serrano chile, seeded, finely chopped
1/2 cup chopped red onion
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon salt
1 package (8 count) Old El Paso™ soft tortilla bowls, heated as directed on package
1/2 cup chopped tomato

Steps:

  • Place beef in large, resealable food-storage plastic bag. In small bowl, mix orange juice, 2 tablespoons of the lime juice, the garlic and taco seasoning mix. Pour marinade over beef. Seal bag; refrigerate at least 30 minutes but no longer than 4 hours.
  • Heat gas or charcoal grill.
  • Remove steak from marinade; discard marinade. Place steak on grill over medium heat. Cover grill, and cook 11 to 16 minutes, turning once, until beef is of desired doneness (at least 145°F). Let stand 5 minutes. Cut beef across grain, into thin slices.
  • Meanwhile, to make guacamole, in medium bowl, mash avocados. Add serrano chile, 1/4 cup of the red onion, the cilantro, remaining 1 tablespoon lime juice and the salt; gently stir to combine.
  • Divide steak among tortilla bowls. Top with guacamole, remaining 1/4 cup red onion and the chopped tomato.

CITRUS STEAK MARINADE

Citrus Steak Marinade image

This a great steak marinade that has citrus and spice flavoring. The sugar will burn quickly on the grill so be mindful of the time the steak is on the grill.

CITRUS SIRLOIN STEAK

Citrus Sirloin Steak image

The mild citrus flavor of Carol Towey's marinade offers a nice change of pace from usual steak seasonings. "It's easy to prepare the steak the night before, then throw it on the grill before dinner," says the Pasadena, California cook.
