Steps:
- Combine all marinade ingredients.
- Soak uncooked and unshelled shrimp in marinade for 1 to 1 1/2 hours turning periodically.
- Place on hot grill and cook until just pink and blackened on the outside.

SIMPLE SHRIMP ON THE BARBIE
A very easy, healthy and delicious way to grill your shrimp. You can also skewer the shrimp if you want to. Just make sure to soak wooden skewers in warm water for 30 minutes. I didn't include the 1 - 2 hour marinating time. Enjoy!

Steps:
- Mix olive oil, wine, lemon juice, salt, pepper, cayenne and garlic in a bowl. Add shrimp and toss to coat. Marinate in the fridge for an hour, two hours at the most. If you leave it longer, the lemon juice will start to "cook" the shrimp.
- Heat barbeque to medium heat. Cook shrimp until just cooked through, about 3 minutes on each side.
- Sprinkle shrimp with parsly and garnish with lemon wedges.
AUSTRALIAN SHRIMP ON THE BARBIE
Steps:
- Gather the ingredients.
- Peel and devein the shrimp , leaving the tails intact.
- Mince the fresh parsley, thyme, cilantro , and shallots. Crush the garlic cloves.
- Combine the melted butter , olive oil, parsley, thyme, cilantro, lemon juice, cloves, shallots, salt, and black pepper in a large bowl.
- Mix in the shrimp. Marinate at room temperature for 15 minutes or in the refrigerator for 30 minutes. Discard the marinade after the 30 minutes, as it will not be safe to reuse due to contact with the raw shrimp.
- Prepare the barbecue with medium-hot coals.
- Thread the shrimp on narrow skewers . Grill until just opaque (or pink in color and firm to touch), about 2 minutes per side.
- Line a platter with fresh spinach leaves. Arrange the skewers on the platter. Garnish with lemon.
- Serve and enjoy!

CITRUS SHRIMP
Steps:
- In a blender or food processor, combine the orange juice and zest, lime juice and zest, olive oil, garlic and salt. Be careful with the salt - the shrimp really suck it up! Cover, and puree until smooth.
- Place shrimp in a bowl, and pour the citrus marinade over them. Let them marinate for 20 minutes at room temperature.
- Heat a non-stick skillet over medium-high heat. Fry the shrimp about 3 minutes per side, in batches if necessary, until opaque. Spoon a little of the marinade in with them for extra flavor while they cook if you like.

- Place shrimp in large sealable plastic bag.
- In a mixing bowl, combine the marinade ingredients.
- Pour over shrimp and seal bag.
- Marinate for 15 minutes.
- Meanwhile preheat barbeque grill on high heat.
- Remove shrimp from bag and pat dry.
- Lightly oil the grill and place shrimp directly on grill.
- Cook for 1 1/2 to 2 minutes per side.

CITRUS MARINATED SHRIMP
My Mom served this as a starter to dinner last week. I don't know where it was originally published but it's accredited to Peter Dorsey of Warwick, Rhode Island The preparation time does not include the 24 hour marinating time. My Mom didn't marinate the shrimp for the full 24 hours and the dish was still delicious.

Steps:
- Combine first 5 ingredients in a saucepan and bring to a boil.
- Add shrimp and boil them, covered, for 1 to 2 minutes, or until pink and just firm to the touch.
- Drain shrimp in colander, refresh them under cold water, and shell and devein them.
- In a bowl, combine ketchup, garlic, vegetable oil, lemon juice, sugar, celery seeds, mustard seeds, Tabasco, organe, onion and salt and pepper.
- Toss shrimp with marinade and chill mixture, covered, for 24 hours.
- Drain shrimp and arrange on lettuce leaves on serving plates.

- Combine coconut milk, curry paste and garlic in a saucepan and bring to boil, reduce heat and simmer for 8 to 10 minutes or until coconut milk has thickened slightly.
- Stir in lime juice and fish sauce, cool then toss with shrimp and marinate for 1 hour.
- Remove shrimp from marinade and thread shrimps onto lemon grass stalks, spearing shrimps in 2 places so that they don't turn on the skewers. Season with salt and pepper. (Reserve marinade.).
- Preheat grill to high.
- Brush shrimp with extra oil and grill about 2 minutes per side or until shrimps are cooked.
- While shrimp is cooking, place reserved marinade in a small pot over high heat, bring to a boil and boil for 3 minutes or until quite thick (like mayonnaise).
- Remove from heat, stir in extra lime juice and sugar.
- Drizzle over grilled shrimp and sprinkle with mint.

Steps:
- Heat an outdoor grill, stovetop grill pan or broiler. Have ready four 4-6 inch skewers.
- Mix sauce ingredients in a bowl, cover and refrigerate until serving.
- Thread 6 shrimp close together on each skewer.
- Melt butter with garlic. Brush 1/2 the mixture on each bread slice.
- Brush 1 side of shrimp with 1/2 the remaining garlic butter, then sprinkle with 1/2 the Spice Rub.
- Grill or broil shrimp 3 minutes; turn and brush with remaining garlic butter; sprinkle with remaining spice rub.
- Grill shrimp and bread 3 minutes, or until shrimp are cooked and the bread is toasted.
