HONEY MUSTARD GLAZED HAM

One 9-pound bone-in spiral-sliced ham
1 cup honey
1/3 cup brown sugar
4 tablespoons unsalted butter
3 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
2 teaspoons finely chopped fresh thyme

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the ham in a small roasting pan, cut-side down, and pour 1/2 cup water into the bottom of the pan. Cover the pan tightly with foil. Bake until the ham is heated through, about 1 1/2 hours.
  • Meanwhile, combine the honey, brown sugar, butter, Dijon mustard, whole-grain mustard and thyme in a small saucepan. Cook over medium-low heat until the sugar has dissolved, about 2 minutes.
  • Increase the oven temperature to 375 degrees F. While the ham is still hot, remove the foil and carefully pour off the water from the roasting pan; it is fine if a little water remains. Brush about half of the glaze over the ham. Return to the oven, uncovered, for 5 minutes, until the ham is golden brown and beginning to glaze. Brush with the remaining glaze and bake for another 7 to 10 minutes, until the ham is well-browned and glazy; be careful not to let the glaze burn. Serve warm.

I came up with the glaze for this ham using ingredients on hand and it's the best I've ever tasted. If you have any glaze left over, you can add it to the pan drippings with a little flour or cornstarch and make a nice sauce to accompany the meat. Use the bone and ham trimmings to make soup afterwards.

1 (10 pound) fully-cooked, bone-in ham
1 ¼ cups packed dark brown sugar
⅓ cup pineapple juice
⅓ cup honey
⅓ large orange, juiced and zested
2 tablespoons Dijon mustard
¼ teaspoon ground cloves

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.
  • In a small saucepan, combine brown sugar, pineapple juice, honey, orange juice, orange zest, Dijon mustard, and ground cloves. Bring to a boil, reduce heat, and simmer for 5 to 10 minutes. Set aside.
  • Bake ham in preheated oven uncovered for 2 hours. Remove ham from oven, and brush with glaze. Bake for an additional 30 to 45 minutes, brushing ham with glaze every 10 minutes.

One 8- to 10-pound bone-in, smoked, fully-cooked ham, butt or shank portion
2/3 cup fresh lemon juice (3 to 4 lemons)
1/3 cup fresh lime juice (about 4 limes)
1/2 cup hot pepper jelly
1 teaspoon Worcestershire sauce
1 jalapeno, halved, seeded and sliced

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, whisk together the lemon and lime juices, pepper jelly, Worcestershire sauce and jalapeno in a small saucepan. Bring to a simmer and reduce until thickened to about 3/4 cup, about 20 minutes.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush half of the glaze all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze until glossy, glazed and well browned, about 45 minutes more.

3 tablespoons fennel seeds, lightly toasted
3 tablespoons coriander seeds, lightly toasted
2 teaspoons whole black peppercorns
3 Ruby Red grapefruits, 2 cut into wedges, 1 zested and juiced
6 limes, 3 halved, 3 zested and juiced
1/4 cup coarse salt

Steps:

  • Score fat on ham in a 3/4-inchwide diamond pattern. Finely grind fennel, coriander, and peppercorns in a spice mill or clean coffee grinder. Transfer to a bowl; stir in zests and salt. Rub mixture over ham, wrap in plastic, and refrigerate 1 to 3 days.
  • Unwrap ham; let stand at room temperature 1 to 2 hours. Preheat oven to 325 degrees. Combine 2 cups water, grapefruit wedges, and lime halves in a roasting pan. Set ham on a wire rack in pan. Bake, basting every hour, and covering with parchment-lined foil after 1 hour, until a thermometer inserted into bottom part (avoiding bone) reads 140 degrees, about 4 hours, 30 minutes (about 20 minutes per pound).   • Meanwhile, increase heat to 400 degrees. On a rimmed baking sheet, toss assorted cut citrus with oil and sprinkle generously with sugar. Roast, turning once, until browned, about 40 minutes.
  • While meat is resting, cook honey, sugar, and 1/4 cup water in a saucepan over medium-high heat, stirring, until deep golden, about 8 minutes. Remove from heat; slowly stir in citrus juices. Bring to a boil; cook until reduced to 1 cup, about 3 minutes. Brush 3 tablespoons glaze over ham.
  • Serve ham with roasted citrus, pomegranate, fennel crowns, and remaining glaze.

1/2 cup light brown sugar
1/4 cup honey

  • Remove the ham from its wrapping and pat dry. Cut two pieces of aluminum foil large enough to wrap the ham, and place the ham on top of the foil.

3 small onions
3 fresh cayenne peppers
3 Thai chiles (any pepper will do here)
3 lbs baby carrots
2 large navel oranges or 4 -5 clementines
1 (16 ounce) jar apricot preserves
3/4 cup white raisins
1 (20 ounce) can crushed pineapple in juice
2 tablespoons brown sugar
3 tablespoons local raw honey
1 tablespoon garam masala (or use your favorite curry)
2 teaspoons allspice
1/2 teaspoon cinnamon
1 teaspoon blood orange olive oil (or olive oil with zest of 1 orange)
1/2 cup cream sherry
whole cloves

Steps:

  • Chop onions and peppers and saute in olive oil until onions are translucent. Add zest of 1 orange and juice from 2. Add apricot preserves, crushed pineapple with juice, sugar,cinnamon, honey, garam masala, allspice, raisins, and cream sherry. Bring to boil then let simmer until thickened/syrupy - about 20-30 minutes.
  • Score ham and stud with clove buds, basting with a portion of the citrus glaze. (depending on ham type - cooking times will vary). For city ham, cook covered at 325 for 40 minutes, basting every 15 minutes.
  • Remove from oven and add baby carrots. Pour remaining glaze over ham and carrots and cook for an additional 30 minutes, covered, basting every 15 minutes - be sure to stir carrots as well for even cooking.
  • Remove foil, baste again, and cook until ham has nice caramel like glaze and carrots are tender - about 15 minutes.
  • Let stand for 15 minutes and remove cloves before serving.
  • For added nutrition - halve brussel sprouts and cook with carrots or try parsnip!
  • For stronger flavor - make your own garam masala fresh or toast ground masala before adding to glaze mixture.

Another brain child of a "bored in the kitchen" day. It's certainly different! I've had ham glazes that I like more, but this one was pretty darn good for a spur of the moment invention. I sort of enjoyed the interesting flavor it had too. The little bit of cayenne gave it just a tiny amount of kick that made it remarkable. If you're in the mood for something ... different this may be worth a try ;) I'll certainly make it again sometime.

4 oranges
2 lemons
2 peaches (skin removed)
2 teaspoons whole cloves
2 teaspoons cocoa powder
1/4 cup red wine
1/4 cup honey
1/2 teaspoon cayenne pepper
2 tablespoons cornstarch (just enough to thicken the glaze. Adjust as necessary.)

Steps:

  • Juice 3 and a half oranges and 1 and a half of the lemons in a medium saucepan. Slice the remaining fruit halves and leave them on the side to bake on the ham later on.
  • over medium heat mix in the cloves, cocoa powder, red wine, honey, and cayenne pepper.
  • While that simmers, Slice the peaches and add them to the pot along with the corn starch. You may need to adjust the corn starch as necessary depending on the juiciness of the fruit. The first time I made this I used 1/4 cup of cornstarch and it was way too much. I'd start with 1 tbsp or so and see how it goes, then add more if necessary. (I'll edit this the next time I make it).
  • stir in the remaining lemon and orange slices, making sure the seeds are taken out.
  • use to baste and glaze a ham for baking. :) I used a 2.5-3 pound butt portion and it was way more than me and my husband could eat for 2-3 days -- I might think a little smaller next time. hehe.
