Another good recipe from local news chef, Chef Walter. A nice change from the usual lemon pepper marinade on store shelves. This recipe is enough for 2 pounds of boneless skinless chicken breasts. Prep time is marinade time. Note: feel free to cut back or eliminate the salt in this marinade. Low-sodium soy sauce also works well for this. (Thanks for the tip, Nif!)

1/3 cup lemon juice
1/4 cup soy sauce
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground black pepper

Steps:

  • Mix everything together well. Pour into a shallow dish or large zip top bag.
  • Add chicken. If using a dish, cover. Zip the bag if using a bag. Stash in the refrigerator for at least 2 - 3 hours, turning occasionally.
  • Drain off the marinade and grill, or bake at 325 F for about an hour in a greased baking dish.

4 chicken breasts, bone in
1 tablespoon mild chili powder
1 tablespoon paprika
2 teaspoons ground cumin
1 orange, juice and rind
3 limes, juiced
1 pinch sugar
8 -10 garlic cloves, finely chopped
1 bunch cilantro, coarsely chopped, plus a few sprig to garnish
2 tablespoons extra virgin olive oil
1/2 cup beer, tequila (optional) or 1/2 cup pineapple juice (optional)
salt and pepper

Steps:

  • Place the chicken in a nonmetallic dish.
  • Mix the remaining ingredients together in a bowl and season to taste.
  • Pour over the chicken and turn to coat well, then cover and let marinate at room temperature for at least 1 hour.
  • If possible, let marinate in the refrigerator for 24 hours.
  • Preheat the broiler to medium.
  • Remove the chicken from the marinade and pat dry with paper towels.
  • Place the chicken on a broiler rack and cook under the hot broiler for 20-25 minutes, turning once, until the chicken is tender and the juices run clear when a skewer is inserted into the thickest part of the meat.
  • Brush with the marinade occasionally, but not for the last few minutes of the cooking time.
  • Garnish with cilantro springs.

8 boneless, skinless chicken breasts
Juice of 1 orange
Juice of 1 lemon
Juice of 2 limes
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground coriander
1 teaspoon ground cumin
1 tablespoon fine sea salt (or 2 teaspoons table salt)
1/4 cup olive oil

Steps:

  • Whisk the marinade ingredients in a large bowl. Reserve 1/4 cup of the marinade, then pour the rest into a gallon zip-top bag. Add the chicken breasts to the bag, squeeze out as much air as possible, and seal the bag. Refrigerate for 1 to 4 hours, flipping the bag every now and again to make sure the chicken is evenly marinated. (Or, marinate in a shallow baking dish just large enough to hold the chicken in one layer.)
  • Set your grill up for direct medium heat, 350°F. I preheat my gas grill on high for 10 minutes, then brush the grates clean and turn the burners down to medium. In my kettle grill, I light a chimney starter 3/4 full of coals; when the coals are lit and covered with gray ash, I pour them in a loose single layer on half of the charcoal grate. Then I put on my grill grate and brush it clean.
  • Put the chicken on the grill grate directly over the heat. (Keep the lid closed as much as possible). Grill the chicken until it has good grill marks on the bottom, about 3 minutes, then flip the chicken. Grill until it has good grill marks on the other side, about 3 more minutes. Flip the chicken and rotate each piece 90 degrees (for a crosshatch of grill marks), then grill until you have another good set of grill marks. Flip the chicken one last time - it is done when it reaches an internal temperature of 160°F, about 3 more minutes.
  • Put the chicken breasts on a serving platter and drizzle with the reserved marinade. Let them rest for 5 minutes, then serve.

1/4 cup olive oil
2 cloves of garlic (finely minced)

salt and pepper to taste

Steps:

  • Place the olive oil, garlic, lemon and orange zest, lemon and orange juice, basil, oregano and thyme in a resealable plastic bag. Seal and shake to combine.
  • Place the chicken in the bag, seal and shake until chicken is coated with the marinade.
  • Refrigerate for at least 30 minutes or up to 4 hours.
  • Preheat the grill or a grill pan over medium high heat.
  • Remove the chicken from the marinade and season both sides generously with salt and pepper.
  • Grill for 4-5 minutes on each side or until chicken is cooked through.
  • Remove from grill and let the chicken rest for 5 minutes. Sprinkle with parsley and serve, with lemon wedges if desired.

1 cup fresh orange juice
Juice from one medium lemon (about 3 tablespoons)
3 tablespoons olive or avocado oil
½ teaspoon kosher salt
½ teaspoon black pepper
3 garlic cloves (sliced)
4 sprigs fresh thyme
1 fresh orange (quartered, to squeeze over chicken at serving (clementines work great))

Steps:

  • In a small bowl, combine orange juice, lemon juice, oil, salt, pepper, garlic and thyme. Pour into large zip-log bag or a bowl.
  • Pierce chicken breasts with a fork and add to the marinade.

2 whole lemons, one juiced and one sliced

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl whisk together olive oil, garlic, sugar, lemon juice, orange juice, Italian seasoning, paprika, onion powder, red pepper flakes, and salt and pepper.
  • Place chicken in a rimmed 13-in. x 9-in. baking dish. Place parts skin side up and spread them out evenly in the pan. Pour olive oil mixture all over chicken, turning pieces to coat all sides. 1/2 cup orange marmalade (look for marmalade with small rinds)
1/4 cup sweet chili sauce
1 tablespoon white balsamic vinegar
1/4 cup reserved marinade, strained

Steps:

  • Combine all the ingredients in a large resealable plastic bag and refrigerate for 6 to 8 hours.
  • Preheat the oven to 350 degrees F.
  • Remove the chicken from the marinade, reserving 1/4 cup for Glaze and put the chicken in a 13-by-9-inch pan and bake for 45 minutes. Baste with the Glaze, turn the pieces over and bake for an additional 15 to 25 minutes, basting every 7 minutes. Remove from the oven and arrange the chicken on a serving platter.

1 ¾ pounds boneless skinless chicken breasts, thighs, or tenders*
6 garlic cloves (minced or grated (about 2 tablespoons))
Juice and zest of 1 medium lemon (about 1 teaspoon zest and 1/4 cup juice)
2 tablespoons extra virgin olive oil
2 tablespoons low sodium soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • If making chicken breasts, place them on a cutting board, cover with plastic wrap, and with a meat mallet or rolling pin, pound into an even thickness. (If using tenders or thighs, you can skip the pounding).
  • With a fork, poke holes all over the chicken (this will allow the marinade to absorb).
  • In a large ziptop bag, combine the garlic, lemon zest and juice, olive oil, soy sauce, Worcestershire sauce, thyme, oregano, salt, and pepper.
  • Add the chicken. Seal the bag, removing as much excess air as possible.
  • "Squish" the bag to coat the chicken, then place the bag on a plate or inside a shallow baking dish to guard against leaks.
  • Marinate the chicken at room temperature for 15 to 30 minutes (the longer the better), or refrigerate for up to 12 hours (I find about 5 to 6 hours is ideal-since this is a small amount of lemon juice, you can push to 24 hours if absolutely necessary). Do not let marinade for longer, or the meat will start to break down. Let the chicken stand at room temperature for 15 minutes prior to cooking.
  • When ready to cook: Preheat your grill to medium high (425 to 450 degrees F) or preheat your oven to 425 degrees F. Remove the chicken from the marinade, shaking off any excess.
  • To grill: cook chicken over high heat until charred in spots and the internal temperature reaches 160 to 165 degrees F on an instant read thermometer, flipping halfway through, about 8 to 12 minutes total for breasts or thighs or 4 to 8 minutes for tenders. Do not overcook!
  • To bake: Arrange the chicken in a single layer in a foil- or parchment-lined baking dish large enough to hold it comfortably without the chicken touching. Bake the chicken until it reaches 160 F to 165 degrees F on an instant read thermometer inserted at the thickest part. Don't overcook! For breasts you will need about 14 to 16 minutes (for small/medium breasts that are about 6 to 7 ounces), 16 to 20 minutes (for medium/large breasts that are 8 to 10 ounces), or 20 to 25 minutes (for larger breasts). Bake thighs or tenders for 15 to 20 minutes.
  • Remove the chicken to a plate and cover. Let rest for at least 5 minutes. Serve!
