Cinnamon Sugar Donut Muffins - Donut muffins are a super soft, homemade muffins that are easy to make! These buttery treats taste just like an old fashioned donut rolled in cinnamon and sugar!

- Preheat oven to 350 degrees. Grease muffin cups or line with paper liners. Set aside.
- In a large bowl whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a small bowl beat the egg. Add the milk, vanilla extract, and melted butter and mix well to combine.
- Add the wet ingredients to the dry ingredients and stir just until moistened, being careful not to over mix.
- Spoon batter into muffin cups about 1/2 - 3/4 of the way full. Bake in preheated oven for 20-25 minutes. Allow muffins to cool for 5 minutes before removing from pan.
- For the topping: In a small bowl mix together the cinnamon and sugar. In another small bowl melt the 5 Tablespoons of butter.
- Dip the muffins into the butter, then roll in the cinnamon sugar mixture.

CINNAMON SUGAR DONUT MUFFINS

- Preheat oven to 350°F.
- In a large mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
- In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
- Pour the milk mixture into the flour mixture and stir just until no big lumps remain. The batter will be a bit runny.
- Fill prepared muffin pan about ⅔ full of batter per spot. For mini muffins bake 12-14 minutes, for full-size muffins, bake 20-24 minutes.
- Remove from oven and let rest in pan for 5 minutes before placing the muffins on a rack to cool.
- Once cooled, combine sugar and cinnamon topping. Dip tops of muffins in the melted butter then roll the top in the cinnamon sugar to coat. Place back on the rack and repeat with remaining muffins.

- Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini-muffin cups.
- Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
- Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
- While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture. Let cool and serve.

- Preheat oven to 350°. In a large bowl, combine flour, baking powder, salt, nutmeg and cinnamon. In a small bowl, combine sugar, oil, egg and milk; stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups half full; place 1 teaspoon jam on top. Cover jam with enough batter to fill muffin cups three-fourths full. CINNAMON PUFFINS (MUFFINS OR DONUTS?)
My sister and I used to make these when we were kids. I rediscovered the recipe a few months ago in the bottom of a drawer at my mom's and made them for my husband, who now asks for them regularly to have with his tea in the evening or his coffee in the morning. They are a cross between muffins and sugar donuts. Now I have to double this recipe every time I make them because they disappear so fast!

- Preheat oven to 350.
- Combine flour, baking powder, salt and nutmeg.
- In another bowl, beat egg, shortening, vanilla and sugar until well blended.
- Add the flour mixture to the creamed mixture and beat in milk until smooth.
- Fill each cup of lightly greased muffin tin 2/3 full.
- Bake 20 minutes, or until a light golden color, or until an inserted toothpick comes out clean.
- Melt butter.
- In a small bowl, combine 1/2 cup sugar, cinnamon and nutmeg.
- While puffins are still warm, dip each one in butter, then in sugar mixture, coating thoroughly.

- Adjust oven rack to middle position and heat oven to 400 degrees. Spray 12-cup muffin tin with vegetable oil spray. Whisk flour, sugar, cornstarch, baking powder, salt and nutmeg together in bowl. Whisk buttermilk, melted butter and eggs plus the extra yolk together in separate bowl. Add wet ingredients to dry ingredients and stir with rubber spatula until just combined. - Combine oil, egg and milk. Mix before adding to dry ingredients.
- Mix well and then fill muffin cups, regular size, 3/4 full.

- Preheat oven to 350 degrees. Lightly grease a muffin tin with cooking spray or vegetable oil.
- In a large bowl, beat together sugar and egg until light in color.
- In a small bowl, whisk together flour, baking powder, salt and nutmeg.

- Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl. Set aside. Whisk the egg, brown sugar, milk, and yogurt together until smooth. Add the melted butter and vanilla, whisking until fully combined. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. The batter will be very thick.
- Spoon the batter into the donut cavities—I highly recommend using a large zipped-top bag for ease. Cut a corner off the bottom of the bag and pipe the batter into each donut cup, filling 2/3 to 3/4 of the way full.
- Bake for 9-10 minutes or until the edges are lightly browned. Allow to cool for about two minutes and transfer to a wire rack set on a large piece of parchment paper or on a large baking sheet. Bake the remaining donut batter (there is usually enough batter for 1-2 more donuts) and once baked, transfer to the wire rack. Cool donuts for at least 10 minutes before topping.
