MIKAEL'S WASSAL
Apple cider, cranberry juice, and pineapple juice are spiced with cinnamon and served hot. This is a nice cold day beverage that pumps the family up with vitamin C and warms them from the inside out. Great for anyone from 1 to 99!

Steps:
- Pour the pineapple juice, cranberry juice and apple cider into a large pot. Heat until almost boiling, then stir in the red hot candies. Continue stirring until they dissolve so that they do not end up stuck to the bottom of the pot. Set the heat to low, and let it simmer all day if you like. Ladle into glasses or cups, and dust with cinnamon before serving.

CINNAMON "RED HOTS" PINEAPPLES
This is an amazing looking and tasting dish. It tastes exactly as the name says! Kids absolutely love it because of the Red Hots flavor and the fact that it's made with candy! It goes with just about everything, but I like to make it at the holidays. I also make it and put it into small mason jars to give away as gifts. My sister-in-law loved hers so much she decided to use the liquid as the base for a Pineapple/Red Hots Martini. She also puts some of the fruit on a toothpick as a garnish. Obviously, for adults only on that one! Recipe note: 1. Buy the pineapple chunks (not rings or pieces) in juice (not heavy syrup.) 2. I buy the cinnamon imperials by the bag, 2 for $3, in the grocery store candy isle but I have since seen it at the local dollar store so shop around. 3. This is a make-ahead recipe. It usually takes 5-7 days for the red liquid to saturate the pineapples. They are ready when the red goes all the through the pineapple chunk.

- Serve cold or at room temperature.

Steps:
- 1. Mix apples, sugar and flour. Roll out half of dough; fit into 9-inch pie pan, allowing dough to overlap edges by an inch or so. Turn apple mixture into pastry. Dot with butter and red cinnamon candies. Drizzle on lemon juice.
- 2. If desired roll out remaining dough and cut 1/2-inch strips with pastry wheel. Lay lattice strips across top, weaving over and under if desired. Fold bottom pastry over strips and crimp edges to seal. If you do not wish to make a lattice top crust you may use a standard top pie crust but be sure to make cut outs or large slits in this crust to allow steam to escape while baking.
- 3. Bake at 425 degrees for 45 minutes, or until apples are tender.

RED HOT FLUFF
Red Hot Fluff is a vintage "salad" featuring cinnamon along with those classic ingredients of crushed pineapple, Cool Whip and mini marshmallows. Cinnamon Imperials (also known as Red Hots) melt into crushed pineapple to form a sweet, cinnamon base before adding the fluffy marshmallows and whipped topping.

Steps:
- Cut peeled & cored apples into wedges.
- Place the apple wedges into a large enameled cast-iron pot or Dutch oven. Add water and cinnamon candies.
- Over medium-high heat, bring to a boil, stirring constantly.
- Reduce the heat to medium, stirring constantly until the candies have dissolved and apples are soft but not mushy. Continue to boil until 1/2 cup of the liquid remains. Taking care not to break up the apples. The more concentrated the liquid, the more intense the color and flavor of the apples.
- Serve warm or at room temperature.
