2 plum tomatoes, halved lengthwise
1/4 cup olive oil, divided
1/8 teaspoon dried oregano
1/8 teaspoon dried basil
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 large zucchini, cut into 1/2-inch slices
1 large yellow summer squash, cut into 1/2-inch slices
4 large portobello mushrooms
4 slices eggplant (1/2 inch thick)
1 package (5.3 ounces) fresh goat cheese
1 teaspoon minced fresh parsley
1 teaspoon minced garlic, divided
4 ounces fresh mozzarella cheese, cut into 4 slices
1 package (10 ounces) fresh spinach
1/4 cup balsamic vinaigrette

Steps:

  • Brush tomatoes with 2 teaspoons oil; sprinkle with oregano, basil and 1/4 teaspoon salt and pepper. Transfer to an ungreased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until tender., Brush zucchini and yellow squash with 2 tablespoons oil; sprinkle with 1/4 teaspoon salt. Place vegetables in a grill wok or basket. Grill, uncovered, over medium heat for 8-12 minutes or until tender, stirring occasionally., Remove and discard stems and gills from mushrooms. Brush mushrooms and eggplant with 1 tablespoon oil; sprinkle with remaining salt. Grill mushrooms, covered, over medium heat for 12-15 minutes or until tender. Grill eggplant, covered, over medium heat for 4-5 minutes on each side or until tender., In a small bowl, combine the goat cheese, parsley, 1/2 teaspoon garlic and remaining pepper., Place mushrooms on a greased baking sheet; spread each with 2 teaspoons cheese mixture. Layer with zucchini, squash, 2 teaspoons cheese mixture, eggplant and remaining cheese mixture. Top with mozzarella cheese and tomato. Bake at 350° for 8-10 minutes or until cheese is melted., In a large skillet, saute remaining garlic in remaining oil for 1 minute. Add spinach; cook for 4-5 minutes or until wilted. Divide among four plates; top each with a mushroom stack. Drizzle with vinaigrette.

3 cups europe's best wild woodland blueberries, frozen, divided
3 tablespoons sugar
2 tablespoons water
1 teaspoon lemon juice
1 1/2 tablespoons cornstarch
2 tablespoons water
1/2 lb puff pastry, thawed (store-bought - 250g)
flour, for rolling
1 teaspoon icing sugar
1 cup whipping cream
1/4 cup goat cheese, crumbled
3 tablespoons pure maple syrup
1 teaspoon vanilla extract
1 1/2 cups europe's best sun ripe harvest peaches, thawed and sliced
icing sugar

Steps:

  • BLUEBERRY MIXTURE: Combine 2 cups blueberries with next 4 ingredients in small saucepan.
  • Bring to a boil. Remove from heat.
  • Combine cornstarch and water and whisk into hot blueberry mixture.
  • Return to heat and bring to a boil, stirring constantly. Mixture will be thick.
  • Remove from heat, stir in remaining 1 cup frozen blueberries and chill while preparing pastry.
  • PASTRY: Preheat oven to 375°F.
  • Line a large baking sheet with parchment paper.
  • Roll puff pastry on well-floured surface to 12x16-inch rectangle.
  • Cut into eight 4-inch squares. Place on prepared pan.
  • Prick all over with a fork and sprinkle with icing sugar.
  • Bake in preheated oven 10 minutes. Pastry will be puffy.
  • Carefully press down with a spatula and continue baking until golden brown, about 3-5 minutes longer.
  • Remove and cool on wire rack.
  • GOAT CHEESE CRÈME: Combine all ingredients in bowl of electric mixer.
  • Whip on high until stiff peaks form, about 3 minutes.
  • ASSEMBLY: Lay one square of puff pastry on dessert plate.
  • Spread with 1/4 cup- goat cheese crème, top with 1/4 cup blueberry mixture, peach slices and garnish with about 1 tablespoons goat cheese crème.
  • Soprinkle with additional icing sugar. Serve immmediately.

5 large red potatoes, scrubbed
Kosher salt
1/4 cup balsamic vinegar
1 clove garlic
2 teaspoons Dijon mustard
1/4 cup fresh basil leaves
3/4 cup olive oil
Freshly ground black pepper
8 ounces fresh goat cheese
3 tablespoons chopped fresh chives (optional)

Steps:

  • Put the potatoes in a pot of salted cold water and bring to a boil. Reduce the heat and simmer until the potatoes are tender, but still firm, 12 to15 minutes. Drain and let cool before cutting each potato in 1/2-inch-thick slices.
  • While the potatoes are cooking, combine the vinegar, garlic, mustard, basil and 1/2 cup of the oil in a blender and blend until smooth. Season with salt and pepper.
  • Heat your grill to medium.
  • Brush the potato slices on both sides with the remaining 1/4 cup oil and season with salt and pepper. Place the potatoes on the grill, close the cover, and grill until lightly golden brown and just cooked through, about 2 minutes per side.
  • Carefully transfer the potatoes to a flat surface. Make stacks by layering the following: 1 slice potato, 1 tablespoon goat cheese, 1 slice potato, 1 tablespoon goat cheese, 1 slice potato. Place the stacks back on the grill, close the cover, and grill until the cheese begins to melt, about 1 minute.
  • Transfer the potatoes to a platter, drizzle some of the vinaigrette on and around the potatoes, and sprinkle with the chives.

NAPOLEON OF BEETS AND HERB GOAT CHEESE WITH GRILLED ASPARAGUS



Napoleon of Beets and Herb Goat Cheese with Grilled Asparagus image

1/2 pound beets
8 ounces goat cheese
2 ounces lemon thyme
1/4 cup chopped chives
1 tablespoon chopped garlic
1 bunch asparagus
1 tablespoon olive oil
Salt and pepper
1-ounce roasted red pepper, julienned
10 yellow pear tomatoes, sliced in half
1 tablespoon truffle oil

Steps:

  • Cook beets in salted boiling water until tender, cool in refrigerator, and peel off skin. Soften goat cheese at room temperature, add in herbs, salt and pepper, and garlic; mix well and place in pastry bag. Slice beets into 1/8-inch thick on mandolin and place on plate, pipe goat cheese in between each layer of beets, repeat beet, goat, and top with beet. Garnish plate with asparagus that has been blanched, shocked, and grilled with olive oil. Top with red pepper, tomato, and drizzle with truffle oil.

2 cups whole milk
2/3 cup granulated sugar
Pinch of salt
5 large egg yolks
1/3 cup cornstarch
For the pastry cream:
1/2 vanilla bean, split lengthwise, seeds scraped out and reserved
For the peaches:
4 peaches, cut into thin wedges
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
For the puff pastry:
Cooking spray
2 sheets frozen puff pastry (one 17-ounce package), thawed
All-purpose flour, for dusting
Confectioners' sugar, for dusting

Steps:

  • Make the pastry cream: Whisk 1/2 cup milk, 1/3 cup granulated sugar, the salt, egg yolks and cornstarch in a medium bowl. Combine the remaining 1 1/2 cups milk and 1/3 cup granulated sugar with the vanilla seeds and pod in a medium saucepan; bring to a low simmer over medium heat. Slowly pour the hot milk mixture into the bowl with the yolk mixture, whisking constantly. Return to the pan and bring to a simmer, whisking; cook, whisking, until thickened, 1 more minute. Transfer to a bowl and remove the vanilla pod. Lay plastic wrap directly on the surface and refrigerate until cold, about 1 hour, 30 minutes.
  • Meanwhile, roast the peaches: Preheat the oven to 400 degrees F. Combine the peaches, granulated sugar, lemon juice, and vanilla seeds and pod in a medium bowl; toss gently to coat. Transfer to a rimmed baking sheet and spread in a single layer. Roast, tossing once, until tender and glossy, about 30 minutes. Let cool.
  • Cook the puff pastry: Coat a baking sheet with cooking spray. Unroll the puff pastry sheets on a generously floured surface and arrange them so they overlap by about 2 inches to make 1 large piece of pastry. Lightly flour a rolling pin and roll out the dough into a 17-by-12-inch rectangle. Carefully transfer the dough to the prepared baking sheet and prick all over with a fork. Bake, pricking it again halfway through, until golden and crisp, 25 to 35 minutes. Let cool completely on the baking sheet, then transfer to a cutting board and cut crosswise into 3 equal pieces.
  • Assemble the napoleon: Lay 1 piece of puff pastry on a platter. Spread with half of the pastry cream, then top with half of the roasted peaches. Repeat with another piece of puff pastry and the remaining pastry cream and peaches, reserving a few peach slices for topping. Top with the remaining piece of puff pastry and dust with confectioners' sugar. Top with the reserved peaches. Slice with a serrated knife.

1/4 cup white wine vinegar
1/4 cup fresh basil leaves, chopped
1/2 cup pure olive oil
4 red potatoes, parboiled and cut into 1/2-inch thick slices
Olive oil
Salt and freshly ground pepper
8 ounces soft goat cheese
Basil leaves, for garnish
3 tablespoons chopped fresh chives, optional

Steps:

  • Place vinegar and basil in a blender with salt and pepper and blend until smooth. With the motor running, slowly add the oil and blend until emulsified, check for seasoning.
  • Heat grill to high. Brush potato slices on both sides with oil and season with salt and pepper, to taste. Make stacks with the following layers: potato, 1 tablespoon goat cheese, potato, 1 tablespoon goat cheese, ending with potato. Line the grill with foil and grill the stacks, covered, about 1 minute or until cheese starts to melt. When the cheese is almost melted, slide the stacks from the foil to the grate of the grill just to crisp the bottom, about 1 to 2 minutes more. Drizzle the basil vinaigrette on and around the potatoes and top each Napoleon with some of the basis leaves and chives, if using.

The Farmer's Market is back in business! My mother-in-law and I go every Saturday to stock up on all kinds of fresh, organically grown produce. The stands are stocked with all of our favorites and a few surprises, like pea shoots and purslane. Since my husband is home I had to get beets, they are one of his favorite veggies, and I try to feed him well. I found this recipe in an issue of Saveur and thought it sounded great.

5 large red beets, roasted, peeled, and cut crosswise into 1/4-inch-thick slices
1 cup rice vinegar
1 cup sugar
9 ounces goat cheese, softened
4 teaspoons fresh chives, minced
4 teaspoons fresh parsley, minced
2 1/2 teaspoons fresh thyme, minced
1 teaspoon fresh ground black pepper
3/4 cup fresh orange juice
1 tablespoon balsamic vinegar
1/4 teaspoon orange zest
1 small shallot, minced
3 tablespoons extra virgin olive oil
3 tablespoons hazelnut oil
kosher salt, to taste
3 tablespoons hazelnuts, chopped

Steps:

  • Using a round cookie cutter (size will depend on size of beets), cut out as many rounds as you can. In a medium-size skillet, bring rice vinegar and sugar to a boil. Reduce heat to medium-low and add beet slices in batches that you can manage, cook beet slices, turning once, about 2 minutes. Transfer slices to a paper towel-lined baking sheet. Pat dry and let chill. The left over scraps can be cooked up the same way to be used later in a salad.
  • Stir goat cheese together with the chives, parsley, 2 teaspoons thyme, and pepper in a bowl. Set aside.
  • Bring orange juice to a boil in a 1-qt. saucepan over medium-high heat. Cook until reduced to 1/3 cup, 4-5 minutes. Be careful to watch this part closely. I burned the first batch, and it didn't taste yummy. Let cool. Transfer juice to a bowl along with remaining thyme, balsamic vinegar, zest, and shallots. While whisking, drizzle in olive oil and hazelnut oil; whisk until smooth. Season vinaigrette with salt and pepper; let chill.
  • To serve: Put 1 beet slice on work surface; spread about 1 tsp to 1 tablespoons cheese mixture over beet depending on the size of your rounds. Top cheese with another beet slice, pressing down so cheese oozes to edge. Repeat to create a stack with 3 to 4 layers of cheese between 4 to 5 beet slices. Make as many stacks as you can with the slices you have. I ended up with 9 stacks because the beets I had were pretty small. Slice each stack into 4 wedges if large, or in half if they are small. Place salad greens on small plates and divide beets among them. Drizzle vinaigrette over each plate; garnish with nuts.
  • I had extra goat cheese left over, which I used to top some pasta a couple of days later -- yum.

200g quinoa
100g chard , finely shredded
4 peaches or nectarines, stoned, 2 quartered and 2 finely sliced
1-2 lemons , juiced
4-5 tbsp extra virgin olive oil
50g hazelnuts , roughly chopped
25g parsley , leaves picked and finely chopped
25g mint , leaves picked and finely chopped, plus extra mint leaves to serve
4 tbsp capers , drained
2 tbsp sumac (optional)
1-2 tbsp red wine vinegar
100g soft goat's cheese , crumbled
2-3 tbsp sesame seeds , toasted

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and cook the quinoa following pack instructions. Drain, mix with the chard, then set aside to cool and wilt.
  • Put the sliced peaches in a bowl, drizzle over the lemon juice and set aside. Put the quartered peaches on a baking tray. Toss with 1 tbsp olive oil. Roast for 10-15 mins until soft. Scatter the hazelnuts over a second baking tray and toast in the oven for the last 5 mins until golden.
  • Combine the quinoa mix, herbs, sliced peaches and any juice from the bowl, the capers, sumac (if using), vinegar and remaining oil. Season. Put on a large serving plate, and top with the roasted peaches, goat's cheese, hazelnuts, sesame seeds and extra mint leaves.
