This recipe takes oatmeal cookies up a notch with its cinnamony, buttery, delicious take on a much-loved classic dessert.

1 cup white whole-wheat flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
⅔ cup packed light brown sugar
6 tablespoons unsalted butter, melted
1 large egg
1 ½ teaspoons vanilla extract
1 cup old-fashioned rolled oats
½ cup raisins

Steps:

  • Preheat oven to 350F. Lightly coat a baking sheet with cooking spray.
  • Whisk flour, baking powder, cinnamon and salt in a medium bowl.
  • Whisk sugar, butter, egg and vanilla in a large bowl. Add flour mixture, oats and raisins and stir with a wooden spoon until well combined. Drop level tablespoons of batter onto the prepared baking sheet, making 12 cookies per batch.
  • Bake until golden brown on the bottom, 12 to 14 minutes. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Repeat with the remaining batter.

I adapted this from a recipe I found on Google. They're the best oatmeal raisin cookies I've ever made, vegan or not.

1 cup vegan margarine
2 cups turbinado sugar (1 cup brown sugar and 1 cup white sugar works too)
2 teaspoons vanilla
2 tablespoons rice or 2 tablespoons soymilk
6 tablespoons applesauce
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
2 cups oats
1 cup raisins

Steps:

  • Preheat oven to 350°F.
  • Combine margarine and the sugars and beat until creamy.
  • Add in vanilla, rice milk, and apple sauce and beat some more until it's all distributed evenly and creamy and yummy.
  • In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon until they're all mixed together evenly.
  • Add the dry ingredients and the wet ingredients and mix together until all is well.
  • Add the oats and raisins and mix 'em inches
  • Evenly place clumps of cookie dough on an ungreased cookie sheet (I use parchment paper. It's amazing and I don't even have to wash the cookie sheets after. I got it at Walmart.)
  • Put in the oven and back for about 8-10 minutes, until they no longer look raw, even in the middles.
  • Eat!

These Cinnamon Raisin Oatmeal Cookies have everything that I want in a cookie: Crunchy, crispy, spot-on-sweet. They are perfect snacks in the morning or whenever you fancy.

68 g (1/2 + 1/4 cup) rolled oats
30 g (1/4 cup) whole wheat flour
3 Tbsp raisins
3 Tbsp walnuts (finely chopped)
1/2 tsp ground cinnamon
1/4 tsp baking powder
2 Tbsp melted coconut oil
2 Tbsp maple syrup

Steps:

  • Preheat the oven to 177 C / 350 F. Line a baking sheet with a baking mat or parchment paper.
  • In a big bowl, add oats, flour, ground cinnamon, and baking powder. Mix all together.
  • Then mix in the rest ingredients. Save some raisins for the topping if you like.
  • Use a tablespoon and a spatula to scoop out a tablespoon of the mixture and place it on a lined baking sheet. Repeat to use up all mixture.
  • Use your palm to press down the cookie mixture to form a cookie. Keep them evenly spaced. They won't spread in the oven so shape them into the ideal cookie size. Place the saved raisins on top if you had picked up some before.
  • Bake in the preheated oven at 177 C for 15~18 minutes. Then transfer the baking sheet onto a wire rack to cool down completely. This step is really important to let the cookies crisp up. Then EAT!

From Joy of Vegan Baking. These are AMAZING!! In this recipe, the eggs are replaced with ground flax seeds. When using ground flax seed to replace eggs in a baking recipe, the ratio is always 1 TBSP flax seed to 3 TBSP water. Ground flax seed has a bit of a nutty flavor and it is best used in recipes like pancakes, waffles, muffins, breads and oatmeal cookies, and as an added bonus, flax seeds are the most concentrated source of omega-3 fatty acids.

2 tablespoons ground flax seeds
6 tablespoons water
1 cup margarine, non-hydrogenated (I use Earth Balance)
1 1/2 cups brown sugar (light or dark)
1/4 cup granulated sugar
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour, unbleached
1/2 cup oat bran
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg, freshly ground
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Spray cookie sheets with non stick spray.
  • In a blender, or using a wisk, whip together the flax seed and water until thick and creamy.
  • Cream together margarine, sugars, vanilla and flax seed mixture until well blended.
  • I another bowl mix flour, oat bran, baking soda, baking powder, salt, cinnamon and nutmeg.
  • Add to the wet ingredients, and mix until well blended and smooth.
  • Stir in rolled oats and raisins until thoroughly combined.
  • Use a tablespoon to scoop up dough and lighty press cookies to form about 1/2" thick rounds.
  • Bake cokies until golden brown, about 12-15 minutes.
  • Remove from oven and let cool 3 minutes on the cookie sheet before transfering to wire rack to cool.

1/2 cup margarine (vegan) or 1/2 cup Crisco
1 1/4 cups whole wheat pastry flour
1/3 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup old fashioned oats
1/3 cup raisins (optional)
1/3 cup vanilla-flavored soymilk or 1/3 cup plain soymilk

Steps:

  • reheat oven to 375°F.
  • Mix flour, sugar, baking powder, baking soda, salt and cinnamon together in a large bowl. Cut in margarine until mixture becomes uniformly crumbly. Stir in oats and raisins.
  • Add soy milk and mix gently until a soft dough begins to cling together.
  • Turn dough out onto a floured surface and pat it into a 7 inch circle. Cut into 8 wedges and place them on an ungreased baking sheet.
  • Bake 15 to 18 minutes until golden brown and firm when pressed lightly in the center.
  • Makes 8 scones.
  • Substitute any other dried fruit you wish: cranberries, chopped dates or apricots, blueberries, cherries, dried apples or pears. Add 1/2 cup chopped nuts of your choice if you wish.
  • Just before baking, sprinkle scone wedges with granulated sugar for a sweeter taste. You may also increase the brown sugar to 1/2 cup if you wish.
