Pastry for double-crust pie (9 inches)
6 cups thinly sliced peeled apples, divided
1/2 cup sugar
1/4 cup packed brown sugar
1/2 cup crushed gingersnaps
1/2 teaspoon ground cinnamon
1/2 cup chopped walnuts or pecans
1/4 cup butter, melted
1/4 cup maple syrup

Steps:

  • Line a 9-in. pie pan with the bottom crust. Place half of the apples in the crust; set aside. , In a bowl, combine sugars, gingersnaps, cinnamon, nuts and butter; sprinkle half over apples in crust. Top with remaining apples and sugar mixture. Roll out remaining pastry to fit top of pie. Cut a few slits in the top and place over apples; seal. Cover loosely with foil and bake at 375° for 35 minutes. , Meanwhile, bring syrup to a gentle boil in a small saucepan. Remove pie from oven; remove foil and brush hot syrup over pie and into vents. Return pie to oven and bake, uncovered, 20 minutes longer. Serve warm.

110 g brown sugar
95 g all-purpose flour
1/4 teaspoon salt
1/8 teaspoon cinnamon
60 g rolled oats

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place the apples in an 8x8 inch baking dish. Pour the maple syrup over the apples.
  • In a bowl, cream together the butter and brown sugar. Stir in the flour, salt and oats. Sprinkle the oat mixture over the apples.

1 prepared unbaked 9-inch deep dish pie pastry
3 1/2 lbs granny smith apples, peeled, cored and sliced 1/4-inch thick
2/3 cup sugar
2 tablespoons flour (use semi-heaping tablespoons)
2 1/2 teaspoons cinnamon
2 1/2 tablespoons melted butter
1 cup flour
1/2 cup white sugar
1/4 cup brown sugar, packed
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
6 tablespoons cold butter, cut into small pieces

Steps:

  • Set oven to 400 degrees F (oven rack set to lowest position).
  • Prepare a 9-inch deep-dish glass pie plate.
  • Fit the pastry into the pie plate and flute edges.
  • For the filling; mix together all ingredients making sure that the apples are coated well; set aside.
  • For the topping; in a processor blend first 5 ingredients; Add in cold butter pieces and process using on/off turns until the mixture resembles wet sand.
  • Toss the filling ingredients again to redistribute the juices, then transfer to the prepared pie shell, mounding the apple filling in the center
  • Using your hands pack topping over and around the apples.
  • Place the pie plate on a baking sheet.
  • Bake at 400 degreesF for about 35 minutes or until topping is golden (cover with foil if topping is browning too quickly).
  • After 40 minutes REDUCE the oven temperature to 350 degrees.
  • Bake until apples in the center are fork-tender and the filling is bubbling thickly at edges (about 30 minutes longer).
  • Cool until warm (about 1-1/2 hours).
  • Serve with ice cream.

1 1/2 cups warm water (105 to 110 degrees F)
3 teaspoons granulated sugar
4 cups all-purpose flour
2 tablespoons vegetable or canola oil
1 teaspoon table salt
1/2 cup (1 stick) butter
2 pounds Granny Smith apples, peeled, cored and cut into 1/4-inch round slices
1 cup dark brown sugar
3 tablespoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1/4 teaspoon table salt
1 tablespoon all-purpose flour
One 7-ounce bag hard cinnamon candy
Melted butter, for brushing
Cinnamon sugar, for sprinkling
Vanilla ice cream, for serving

Steps:

  • For the dough: Stir together yeast, 1 cup warm water and 1 teaspoon granulated sugar to a stainless steel bowl. Whisk together and let sit for 15 to 20 minutes.
  • Add flour, oil, salt, remaining 1/2 cup water, 2 teaspoons sugar and yeast mixture to a stand mixer and stir to incorporate. Mix together on medium speed until all ingredients have been mixed well, 5 to 8 minutes. Portion dough into four 1-pound pieces and place in 4 freezer bags. Freeze immediately to stop the rising process. Dough is ready to use after 30 minutes in freezer. Thaw fully before using.
  • For the apple filling: Melt 7 tablespoons butter in a 4-quart pot. Add apples, brown sugar, cinnamon, nutmeg and salt. Cook over medium-low heat, stirring mixture frequently to avoid scorching, until al dente.
  • Meanwhile, make a roux by melting remaining tablespoon butter in a small skillet over medium-low heat. Once butter is melted, add flour. Turn the heat to medium and cook, stirring, until golden brown. Remove from heat.
  • Add roux to apple mixture, little at a time, until desired consistency is achieved. Transfer apples to a cookie sheet to cool.
  • For the cinnamon glaze: Place candy in a saucepan and enough water to cover. Let stand until candy has mostly dissolved, then heat mixture to a medium boil, stirring frequently. Cook until a thin syrup-like texture is achieved, about 15 minutes. (Candy mixture is extremely hot and can cause severe burns! Handle with care! If mixture is too thin, cook a little longer; if mixture is too thick, add a little more water.) Let cool and pour into a squeeze bottle.
  • For the doughboy: Preheat oven to 450 degrees F.
  • Roll a 5- to 6-ounce ball of thawed dough into a 4-inch square. Place 2 tablespoons apple filling in center of dough. Stretch opposite sides of dough up and pinch to seal until a rectangular "apple pillow" is made. Brush with butter, dust with cinnamon sugar and bake until golden brown, 12 to 14 minutes, Repeat with remaining dough and filling.
  • Serve immediately with vanilla ice cream; drizzle cinnamon glaze over doughboy and ice cream. Then, enjoy!

1/4 cup butter
1/2 cup oats (quick or old fashioned, uncooked)

Steps:

  • Preheat oven to 400 degrees. Lightly grease a 2 quart glass baking dish (or clay baker is fine too).
  • Combine apples and orange juice in a large bowl.
  • Stir in sugar, cornstarch, vanilla, and 1/2 tsp cinnamon; toss to coat apples.
  • Spoon apple mixture into prepared dish.
  • Combine brown sugar, flour, remaining 1/2 tsp cinnamon and nutmeg in a medium bowl.
  • Cut in butter with a pastry blender until mixture is coarse and crumbly and then stir in oats.
  • Sprinkle topping mixture over apple mixture.
  • Bake for 25-30 minutes until apples are tender.

I have even added in some cranberries with the apples, if you are adding in cranberries, then reduce the apples slightly. Use only Granny Smith apples for this pie, and other kind will become mushy when baked.

1 prepared pastry dough, for one crust (use your own favorite pastry recipe or see my Kittencal's No-Fail Buttery Flaky Pie Pastry/Crust)
4 lbs granny smith apples, peeled, cored and sliced 1/4-inch thick
2/3 cup sugar
3 tablespoons brown sugar (or use all white sugar)
2 tablespoons flour
2 1/2 teaspoons cinnamon
3 tablespoons melted butter
1 cup flour
1/2 cup sugar
1/4 cup light brown sugar, packed
2 teaspoons cinnamon
1/2 teaspoon salt
6 tablespoons cold butter, cut into small pieces

Steps:

  • Set oven to 400 degrees.
  • Prepare a 9-inch glass pie plate.
  • For the filling: Mix all ingredients together in a large bowl.
  • For the topping: in a food processor blend the flour, both sugars, cinnamon and salt until blended.
  • Add in the cold butter using on/off turns process until the mixture blended, but still a little coarse.
  • Place the prepared pie pastry into the bottom of the pie dish leaving about 1-inch overhand.
  • Turn the crust under and flute.
  • Toss the apple mixture once again before mounding into the pastry, then mound the mixture into the center.
  • Pack the topping over and around the apples.
  • Place the pie onto a baking sheet to catch any spills.
  • Bake for about 40-45 minutes (covering top with foil if browning too quickly).
  • After 40 minutes of baking, reduce the oven temperature to 350 degrees.
  • Bake for another 45 minutes, or until the apples feel firm-tender when pierced with a fork and the filling is bubbling around the edges.
  • Cool for 1 hours before slicing.
