Categories     dessert

Time 55m

Yield 1 (2 layer) cake

Number Of Ingredients 18

500 milliliters egg whites
800 grams granulated sugar
900 grams unsalted butter, room temperature
250 grams white chocolate, melted and cooled
250 grams dark chocolate, melted and cooled
2 teaspoons ground cinnamon
2 teaspoons sweet ancho chile pepper
1 teaspoon cayenne pepper
2 teaspoons vanilla extract
2 sticks butter
2 cups sugar
4 large eggs
3 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup whole milk
1 1/2 teaspoons vanilla extract

Steps:

  • Combine the egg whites and sugar in a stand mixer bowl and whisk to combine. Place bowl over simmering water while whisking regularly until the mixture reaches 140 degrees F on an instant-read thermometer and the sugar is completely dissolved. Remove bowl from heat and whip the mixture at medium to high speed until the meringue has cooled almost completely.

  • Cream the butter in a stand mixer until smooth and light. Add sugar and continue to mix until fully incorporated and fluffy.
  • Add 1 egg at a time, beating well after each addition. In a medium bowl sift together flour, baking powder, cinnamon, and salt.
  • Preheat oven to 350 degrees F.
  • Combine milk and vanilla. Add portions of the flour mixture and milk mixture to the electric mixer, alternating, starting and ending with flour. Pour evenly into 2 buttered and floured 9-inch cake pans.
  • Bake for 40 minutes or until golden - cake should pull away from the side and spring back to the touch.
  • Frost cake and decorate as desired.

CINNAMON FROSTING FOR THAT MEDIEVAL WEDDING CAKE

Cinnamon Frosting for That Medieval Wedding Cake image

When we were making up my mind :o) about what I wanted to do for a cake, I just knew that I wanted something basic and simplistic. We chose a spice cake ( and I found the mix on sale!), but I couldn't find any frosting that I wanted. I wanted a parchment colored frosting. And there just wasn't any out there. Then I thought... CINNAMON! I scooped up a whole armload of white vanilla frosting and went to work on it. This is what came out as a winner and ended up being lovely in color and taste. Excellent with the spice cake by the way.

Time 10m

Yield 2 cups

Number Of Ingredients 2

1 (16 ounce) container vanilla frosting
3 tablespoons ground cinnamon

Steps:

  • Turn frosting out into a large mixing bowl with your scrapper/spatula.
  • Add cinnamon; mix on medium speed with your electric mixer, scraping down the sides often, until cinnamon is throughout.
  • Spread on favorite cake.
  • I am so not a baker by any means, but I baked our wedding cake and after cutting and pasting (ha) with this frosting, our cake looked beautiful.

Provided by southerngrace

Number Of Ingredients 17

CAKE:
2 cups all purpose flour
1 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup whole milk
1/2 cup unsalted butter, room temperature
4 large eggs
1 3/4 cups sugar
2 teaspoons grated orange peel
1 teaspoon vanilla extract
FROSTING:
1/2 cup unsalted butter, room temperature
8 ounces cream cheese, room temperature
2 to 3 cups powdered sugar
1 teaspoon vanilla extract
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350°F. Butter and flour two 9-inch cake pans. Sift first 4 ingredients into small bowl. Stir milk and butter in small saucepan over low heat just until butter melts; set aside. Using electric mixer, beat eggs and sugar in large bowl until thick enough for batter to fall in heavy ribbon when beaters are lifted, about 5 minutes. Beat in orange peel and vanilla. Add flour mixture; beat just until blended. Add warm milk mixture; beat just until blended. Divide batter between prepared pans. Bake cakes until tester inserted into center comes out clean and cakes begin to pull away from sides of pans, about 24 minutes. Cool cakes in pans on racks 20 minutes. Cut around pan sides and turn cakes out onto racks. Turn cakes right side up. For frosting, mix the butter and cream cheese together with an electric mixer until very smooth. Scrape down the sides and bottom of the bowl to ensure even mixing. Add the vanilla extract and cinnamon and mix. Slowly add the powdered sugar. Keep adding until you get to desired sweetness. Spread one cup of frosting onto first layer. Top with second layer. Smooth the rest of the frosting onto the top and sides using your preferred technique.
