CINNAMON DUMPLINGS WITH APPLE-CIDER SYRUP
This dessert is as sweetly comforting as pulling on a sweater on the first chilly fall day. It features cinnamon dumplings that are generously drizzled with warm, golden apple-cider syrup. They're easy to make: Just drop dough into a simmering sugar-cider mixture. These are best served warm with a cool dollop of creme fraiche.

Steps:
- Sift flour, baking powder, cinnamon, and salt in a medium bowl; set aside. Stir together sugar and 3/4 cup water in a large saucepan over medium heat. Cook, without stirring, until sugar begins to melt and turn light amber, about 14 minutes. Continue to cook, stirring occasionally, until sugar has melted and mixture turns medium amber, about 2 minutes more.
- Meanwhile, work butter into the flour mixture using your fingers or a pastry blender until flour is incorporated but mixture is still crumbly. Whisk together egg, egg yolk, and milk in a medium bowl. Form a well in the center of flour mixture; pour in egg mixture. Stir gently with a fork until combined.
- Remove sugar mixture from heat; slowly whisk in cider. Return to heat; bring to a simmer. Using your hands or a small spoon, divide the dough evenly into 12 pieces, and roll into balls about 1 1/2 inches in diameter. Carefully drop 6 balls of dough into the simmering cider syrup. Cook, turning once or twice to coat fully, until dumplings have tripled in size and are deep golden brown, about 20 minutes. Using a slotted spoon, transfer dumplings to a platter, and cover. Repeat with remaining balls of dough. Divide dumplings among 6 bowls, and drizzle with the remaining cider syrup. Serve with creme fraiche.

- In a large bowl, combine the flour, baking powder and salt; cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough forms a ball. Divide into 24 portions. Cover and refrigerate for at least 1 hour or until easy to handle., On a well-floured surface, roll each portion of dough into a 7-in. square. Place an apple on each square. Combine sugar and cinnamon; place 1 tablespoonful into the core of each apple. Dot each with 1 teaspoon butter., Gently bring up corners of pastry to center; pinch edges to seal. - Melt butter in a saucepan over medium heat until it begins to bubble, about 1 minute. Add sugar and molasses; stir until sugar has absorbed molasses and butter, about 3 minutes. The mixture will be very dry. Add 2 cups apple cider. Mix well and bring to a slow boil. Add cinnamon stick and continue to simmer syrup for about 10 minutes.
- Whisk together 1 tablespoon apple cider, lemon juice, and cornstarch in a small bowl.
- Pour cornstarch mixture into syrup in the saucepan, whisking continuously until fully incorporated. Simmer until thickened, with a consistency similar to warm maple syrup, about 5 minutes. The syrup will thicken upon cooling.
- Serve warm. Store leftovers in an airtight container in the refrigerator for up to 3 weeks.

GRANDMA'S OLD FASHIONED APPLE DUMPLINGS
These apple dumplings are so good served warm with a little bit of vanilla or butter pecan ice cream. If someone you know needs a little something to make them smile, bring on a big happy face with these dumplings.

- 1. Preheat oven to 400 degrees F (200 degrees C)
- 2. Butter 2-9x13 inch pans. I use a large (14") round cake pan.
- 3. Mix together brown sugar, cinnamon and apple pie spice and set aside.
- 4. Prepare pie crust. On a lightly floured surface, roll pastry into a large rectangle.
- 5. Peel and cut apples into quarters or halves if you prefer a larger piece of apple.
- 6. Cut pastry into squares large enough to wrap each individual apple quarter or half.
- 7. Place one apple quarter or half in center of one of the pastry cut sections. Add 1 Tablespoon of the brown sugar mixture and 1 teaspoon butter.
- 8. With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish. Dumplings can be frozen at this point.
- 9. In a saucepan, combine apple cider, water, and white corn syrup. Place over medium heat, and bring to a boil. Carefully pour over dumplings.
- 10. Bake in a preheated oven 50-60 minutes. In my oven, I bake for 60 minutes. The crust needs to be slightly golden in color. Place in dessert dishes with some sauce spooned over the top and a scoop of ice cream if you like.
- 11. TO MAKE PASTRY: 3 cups of all purpose flour 1 Cup plus 2 Tablespoons solid Crisco Shortening 12 Tablespoons (3/4 cup) of ice water 1 teaspoon of salt
- 12. Add flour and salt together. Cut Crisco into flour until crumbly. Add ice water and stir until combined.
- 13. Turn pastry dough out onto slightly floured board. Knead about 3 turns and sprinkle lightly with flour. Roll out dough into large rectangle.
APPLE CIDER-CARAMEL DUMPLINGS
This may not be the dish you think of when you see the words "apple dumplings," but this delicious dessert couldn't be simpler to make, or more comforting to eat. It starts with a basic dumpling batter. Just stir together the ingredients, then cook them in liquid on the stovetop until they become fluffy all the way through. Poaching the dumplings in a combination of apple cider, brown sugar and cinnamon means they take on a jammy exterior and absorb some of sweetness in the process. As the dumplings cook, they release some starch into the liquid, which thickens the poaching liquid into a sauce. It's topped with a lightly whipped vanilla cream, which has a consistency similar to melted ice cream and coats each and every bite.

- Make the apple cider-caramel sauce: In a medium pot, heat the cream and butter over medium until the butter is melted. Add the brown sugar and bring to a simmer over medium-low. Once simmering, cook, stirring constantly for 2 minutes. Add the apple cider and stir well to combine. (The sugar will seize, but just keep stirring and it will dissolve back into the liquid.) Add the cinnamon sticks and salt, and bring to a simmer over medium-low heat.
- While the mixture comes to a simmer, make the dumplings: In a medium bowl, whisk together the flour, brown sugar, baking powder, salt and nutmeg. Make a well in the center and add the milk, melted butter, egg and vanilla. Whisk to combine, then switch to a spatula or wooden spoon as the mixture comes together.
- Reduce the heat to a low simmer. Add a single layer of tablespoon-size scoops of batter to the pot (about 5 to 6 dumplings), cover the pot and set a timer for 8 minutes. (If desired, you can test one dumpling by cutting it in half to make sure it's cooked through.)
- After each batch, use a slotted spoon to drain and transfer to a medium bowl. Cover the bowl with plastic wrap or foil to help keep the dumplings warm. Repeat with the remaining batter, poaching the dumplings in batches until all of the batter is used. (The poaching liquid will thicken slightly and decrease as you cook the dumplings, even with the pot covered.)
- Once all the dumplings are fully cooked and removed from the pot, add the apples to the pot and simmer on low heat, uncovered, for 20 to 30 minutes, depending on how toothsome or soft you like your apples.
- While the apples cook, make the whipped cream: In a medium bowl, whisk the cream, confectioners' sugar and vanilla until it thickens enough to coat a spoon, but is still fluid. Chill the whipped cream until ready to use.
- Divide the warm dumplings among serving dishes. Spoon the sauce, apples and cream sauce over each portion and serve immediately.
CINNAMON APPLE SYRUP
Steps:
- In a small saucepan, combine the cornstarch, cinnamon and salt. Gradually stir in water and apple juice concentrate until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in vanilla. Serve warm. Refrigerate leftovers.

Got this in a recipe swap a few years ago from a woman who owned a small diner. She says customers really enjoyed these, maybe you will too. Eat warm from the oven or re-heat in microwave, scrumptious with vanilla ice cream. Ovens vary so bake time is a guess.

- Mix flour and salt. Cut in shortening until mixture is crumbly. Add enough water to make dough. Divide dough into 6 equal parts. Keep covered while making filling.
- Peel and slice apples. Sprinkle with cinnamon and sugar. Set aside.
- Put syrup ingredients in medium saucepan. Boil for 3 minutes.
- Roll each pastry piece into a circle. Place apples in center of each circle. Wet edges of pastry and bring up edges around the apples. Pinch to seal.
- Place dumplings in a 9x12 baking dish. Pour syrup over the top of dumplings.
- Bake at 425° about 5 minutes or until crust just starts to brown. Reduce temperature to 350° and bake 30 minutes or until crust is golden brown.
CIDER BASTED APPLE DUMPLINGS

- 1. Preheat oven to 350 degrees F. Generously coat an 8"X8" baking dish with cooking spray. Set aside. (If apples are large and do not fit, use a bigger baking dish.)
- 2. Simple Cider Syrup: Combine the sugar, cinnamon, water and apple cider in a small saucepan. Mix well and bring to a boil. Let boil, stirring often, for 5-6 minutes. Remove from heat and set aside to cool.
- 3. Pastry: In a large bowl, stir together the flour and salt. Using a pastry blender, cut in shortening until crumbs are formed and pieces are the size of small peas. Sprinkle 1 tablespoon of water at a time over flour mixture. Gently toss with fork and push moistened dough to side of bowl. Repeat until dough holds together. Divide into 4 equal portions, forming each into a ball and flatten out to make 4 discs. Cover and set aside.
- 4. Apple prep: Peel apples, cut in half and remove seeds. Place 1 teaspoon of butter into each of 4 apple half acvities. Divide cinnamon-sugar evenly between apples, placing other half of apple on top of "filled" half. Press lightly together (butter should act as a "glue" to hold halves together). Set aside.
- 5. To prepare pastry: On a lightly floured surface, roll each douch disc into a circle about 1/8" thick. Place a filled apple in center of each dough circle. Moisten edges of pastry with water and bring dough up around apples, being careful not to tear pastry. Press edges together on top of apple to seal.
- 6. Place wrapped apples in prepared baking dish. Gently pour cider syrup evenly over apples and sprinkle with sanding sugar. Bake for 55-60 minutes or until pastry is golden.
- 7. Serve warm
