CINNAMON CLOVE SYRUP

Steps:
- Bring the first 6 ingredients to a boil in a small saucepan over medium heat, stirring until sugar dissolves. Reduce heat to low and simmer until syrup is reduced to 3/4 cup, about 25 minutes. Cool, strain into a small bowl, add rum and stir to blend. Refrigerate until cold, at least one hour. (Syrup can be prepared 2 days in advance, keep refrigerated)
SPICE-INFUSED SIMPLE SYRUP
Celebrate seasonal spices with a simple syrup infused with cinnamon, cloves, star anise, orange peel, and black peppercorns.

- Bring sugar, 1 cup water, the peppercorns, cloves, cinnamon stick, star anise, and zest to a boil in a small saucepan. Reduce heat, and simmer 5 minutes. For milder flavor, remove star anise, and discard; simmer 10 minutes more. Remove from heat. Let cool completely. Pour through a sieve into a bowl; discard solids. ELDERBERRY SYRUP
This recipe is good for treating colds and the flu, and good on anything you would put syrup on, like waffles, pancakes, or ice cream. You may try blueberries, blackberries, or raspberries for different flavors.

- Place elderberries, water, cinnamon stick, cloves, and ginger in a saucepan over medium heat. Bring to a boil, reduce heat to low, and simmer for 30 minutes. Use a potato masher to mash berries to release juice; strain the mixture through a fine sieve, retaining juice and discarding the pulp. Let juice cool.
- Stir in honey until thoroughly combined and transfer to a lidded jar. Keeps in refrigerator 2 to 3 months.

CINNAMON SYRUP
This is an adaptation of a friend's recipe. My kids go crazy over this syrup when we have pancakes or waffles. It's also good on apple slices or strawberries. The only problem is that my kids always forget their manners and lick the leftover syrup off their plates.

- Stir together the white sugar, brown sugar, flour, and cinnamon in a small saucepan. Stir in vanilla extract and water. Bring to a rolling boil, stirring often. Continue to boil and stir until mixture thickens to syrup consistency. Remove from heat; cool 10 minutes before serving.

- Bring first 6 ingredients to boil in small saucepan over medium heat. Reduce heat to low and simmer until mixture is reduced to 3/4 cup, about 25 minutes. Cool. Strain mixture. Add rum and stir to combine. Refrigerate until cold, at least 1 hour. (Cinnamon-clove syrup can be prepared 2 days ahead. Keep refrigerated.)
- Scoop out enough melon balls from honeydew and cantaloupe to measure 4 cups total. Divide melon balls among 6 bowls. Top with syrup and serve.

- In a small sauce pot add water and cinnamon and bring to boil. Simmer for 10 minutes, and strain out cinnamon sticks. Bring water back to a boil, add sugar and stir until sugar is dissolved.
CINNAMON-CLOVE SYRUP
Use this spiced syrup to add depth to cocktails and nonalcoholic drinks (add a splash to club soda), for desserts and even for morning waffles.

- Keeping grapes on stems, poke each grape several times with a wooden pick and put in a large heatproof bowl. In a saucepan stir together remaining ingredients and bring to a boil. Pour hot syrup over grapes. Macerate grapes at room temperature, gently turning occasionally, 1 hour. Chill grapes, covered, at least 2 hours and up to 2 days.
