CINNAMON BAKED PEARS
Steps:
- Preheat oven to 350°F
- Halve the pears and scoop out the seeds and core. Place skin side down in a heatproof baking dish.
- Melt butter and whisk with maple syrup, cinnamon, and nutmeg.
- Drizzle maple syrup sauce over the pears.
- Cover tightly with aluminum foil and bake for about 40 minutes for more ripe pears, or up to 75 minutes for less ripe pears. The syrup should be caramelized and the pears are soft but not mushy.
- Allow to cool for about 5 minutes and then spoon into serving dishes.

Steps:
- Pre-heat oven to 350 degrees F
- Using as many pears as you like, slice the pears in half and gently scoop out the seeds using a small cookie scoop or spoon.
- Place the pears cut side up on a baking pan or in an oven-proof dish and drizzle each halve pear with 1/2 tsp maple syrup and sprinkle with 1/4 tsp sprinkle cinnamon.
- Bake until soft and tender, about 25-30 minutes.
- Serve warm with your choice of toppings.

POACHED PEARS IN HONEY, GINGER AND CINNAMON SYRUP

- In a saucepan large enough to hold all the pears, combine the wine, Simple Syrup, cinnamon stick halves, honey, and ginger. Scrape in the seeds from the vanilla bean and add the bean and seeds to the saucepan. Bring the mixture to a simmer, stirring occasionally, until the honey has melted. Add the pears and simmer for 15 to 20 minutes, turning occasionally, until the pears are tender. Remove the pears from the liquid and allow to cool.
- Continue to simmer the liquid until it thickens and is reduced by half, about 15 to 20 minutes. Cool to room temperature. Remove the cinnamon stick halves and the vanilla bean and discard.
- Place each pear on a small serving plate with a scoop of vanilla ice cream. Drizzle with the honey, ginger and cinnamon syrup. Serve immediately.
- In a small saucepan, combine the sugar and water over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool.

- Core pears but do not peel.
- Place in greased 9" square pan.
- Combine oats, sugar, spices and butter until crumbly.
- Stuff pears letting excess fall into pan.
- Pour 3/4 cup apple juice into pan.
- Bake at 350 degrees for one hour, basting after 30 minutes. Add more juice if necessary.
- Cool 30 minutes before serving.
BAKED PEARS WITH CURRANTS AND CINNAMON

- Preheat the oven to 375 degrees F.
- Place the pears, cut-side up, in a shallow 2-quart baking dish. Sprinkle with the sugar and cinnamon, and add a small pat of coconut oil to each pear half. Pour the wine into the bottom of the baking dish, being careful not to disturb the pears. Sprinkle the currants over the pears -- it's OK if some fall into the wine. Place in the oven and cook until fork tender, about 50 minutes.
- To serve, set pears on a plate and dollop with mascarpone. Drizzle with some of the juices and currants from the baking pan.

- Peel the pears and leave whole.
- Stab the lemon rind with the cloves.
- Put the pears, lemon zest, cinnamon sticks and sugar in a large pan and pour in the red wine and liqueur.
- Add enough water to just cover the pears.
- Bring to the boil and leave the pears to simmer, covered, for 2.5 hours until tender.
- Serve: Lift the pears carefully out of the pan, serve on a plate with some cinnamon ice cream and thick whipped cream.
BAKED PEARS WITH ORANGE CINNAMON SAUCE
The flavours in this dish remind me of Christmas, and for that reason it would be a nice desert around the holidays, but we like it any time of year. It's easily doubled to serve more people.

Steps:
- Core and halve the pears.
- Place them face down in a greased baking dish.
- Whisk together the orange juice, cornstarch, cinnamon, cloves, sugar and water.
- Pour over the pears.
- Sprinkle over the raisins.
- Cover the baking dish with aluminium foil and bake in a 425 F or 220 C oven for 25 minutes.
- This is the time needed to bake fairly hard pears, so if yours are soft you may be able to take them out after 10-15 minutes.
- Take the dish out of the oven.
- Using a spoon, scoop up any juice on the bottom of the pan and drizzle it over the pears.
- Sprinkle over the brown sugar.
- Turn on the top element of the oven and put the pears back in the oven for a couple minutes until they start to brown on top.
- Remove from the oven.
- Divide between two bowls and serve topped with a scoop of vanilla ice cream.

BAKED PEARS WITH CURRANTS AND CINNAMON
Steps:
- Preheat oven to 350°F. Using apple corer, cut through stem of each pear and all the way through pear to base to remove core. Trim bottoms so that pears stand straight. Arrange pears in 15x10x2-inch glass baking dish. Combine sugar, brown sugar and cinnamon in medium bowl. Add currants. Fill pear cavities with half of sugar mixture. Stir cup water into remaining sugar mixture; pour around pears. (Can be made 8 hours ahead. Cover; chill.)
- Bake pears uncovered until tender and sauce is syrupy, adding more water to dish by 1/4 cupfuls if syrup becomes too thick and basting occasionally, about 50 minutes. Serve pears warm with syrup.
