Steps:
- Preheat the oven to 325 degrees F. Coat a 9-by-5-inch glass loaf pan with cooking spray. Mix together the sugar and pumpkin pie spice in a small bowl.
- Unroll the dough from each can and stack them on top of each other to make a double layer of dough. Press them together and roll the dough into a 12-inch square. Spread 4 tablespoons of the caramel evenly over the dough. Sprinkle the spiced sugar over the caramel, then sprinkle the pecans in an even layer, gently pressing them into the dough. Cut the dough into 16 small squares. Stack 4 of the squares on top of each other and repeat so you have 4 stacks of 4. Place each stack on its side in the prepared loaf pan (it should look like a row of books). Gently separate the dough layers so the dough fills up the pan. Sprinkle any pecan mixture that fell out over top of the dough.
- Cover the loaf pan with foil and bake until golden brown and puffed, about 50 minutes. Uncover and continue baking until the top is golden brown, about 15 minutes. Cool on a wire rack for 15 minutes.
- Transfer to a serving platter and drizzle with the remaining 2 tablespoons caramel sauce before serving.
CINNAMON PULL-APART BREAD FROM SCRATCH
Similar to Monkey bread, but a little different. I have seen so many that utilize pre-made things. I like homemade so here is my take. It looks long, but is actually really simple and worth it in the end - simply delicious.

Steps:
- Dough:.
- Active yeast in the warm water with the sugar, let sit for 5 minutes.
- Mix flour, salt, oil with the yeast.
- Use dough hook on mixer for 5-6 minutes. OR if by hand, flour a surface and hand and knead for 7-10 minute -- til elastic like.
- Coat a large bowl in oil, place dough in and flip to coat so it doesn't dry out, cover with clean dish cloth.
- Set in a warm place (60-80 degrees) to rise for 1 1/2-2 hours, or til doubled in size. I usually turn my oven on for 2 minutes on the lowest setting then turn off and use it to raise my dough.
- Sauce:.
- In a small bowl, mix sugar and cinnamon, set aside.
- In a small sauce pan heat butter, brown sugar and water.
- Preheat Oven to 350.
- Once dough is risen, punch down. Make small balls of dough about 2-3cm in diameter. Coat in sugar-cinnamon mixture, placing in a bundt pan, and repeat til all your dough is gone.
- Pour heated mixture over dough balls, bake for 25-30 min at 350.

- In the bowl of a stand mixer fitted with the hook attachment, combine water, yeast, sugar, eggs, vanilla extract, butter, flour, and salt. Mix on low speed for 3 minutes. Increase the speed to medium, and mix until the dough is smooth and pulls away from the side of the bowl, about 8 minutes.
- On a generously floured surface, roll the dough into a large rectangle 12- by 20-inches in size. Cut the rolled dough into 4- by 2-inch rectangles, to make 30 pieces. If they shrink in size after cutting, do not worry.
- Working with 5 pieces of dough at a time, spoon the Cinnamon-Pecan filling over one piece of dough to generously coat. Lay another piece of dough on top and repeat until you have a stack of 5 pieces of coated dough. Repeat the process with the remaining 25 pieces of dough to make 6 stacks.
