This chili, usually served over spaghetti pasta, is quite different from the more common Southwest-style spice profile.

Provided by John Mitzewich

Categories     Dinner     Entree     Lunch

Time 11h50m

Yield 8

Number Of Ingredients 15

1-quart water, more as needed
2 pounds ground beef
2 cups crushed tomato
2 yellow onions, diced
4 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon unsweetened cocoa
1/4 cup chili powder
1 teaspoon cayenne
1 teaspoon cumin
2 tablespoons cider vinegar
1 bay leaf
1/4 teaspoon cloves, ground
1 teaspoon cinnamon
1 1/2 teaspoons salt

Steps:

  • Gather the ingredients.
  • Add the water and beef to a 4-quart pot.
  • Bring to a simmer while stirring, until the ground beef is in very small pieces. Simmer for 30 minutes.
  • Add the crushed tomatoes, onions, garlic, vinegar, Worchestershire sauce, bay leaf, chili powder, cocoa powder, cayenne, cumin, cinnamon, cloves, and salt. Stir well and simmer on low, uncovered, for 3 hours.
  • Stir occasionally to avoid ingredients sticking to the bottom or sides of the pot.
  • Add water as needed if the chili becomes too thick. Once the cooking time has passed, remove from heat and allow the chili to cool off, covered, to room temperature.
  • Keep covered and fefrigerate the chili overnight. The next day, remove the layer of fat that has formed on top before reheating and serving over pasta or hot dogs.

A savory chili that is served over spaghetti and generally topped with shredded cheddar cheese and onions. You also can add kidney beans to the pile. This is great if you make the chili a day ahead of serving. If you've never had Cincinnati Chili be sure to try it! The cocoa mellows the other spices. If you like a real spicy chili add more red pepper or chili powder.

CINCINNATI STYLE CHILI (SKYLINE) (GLUTEN-FREE)

Cincinnati Style Chili (Skyline) (Gluten-Free) image

Recipe is from my grandmother. It's all part of a family tradition. Every year on Thanksgiving, our entire extended family gets together at a state park and stay in cabins; usually in West Virginia, Kentucky, or Indiana. Instead of turkey on Thanksgiving day, we all have Cincinnati Chili. Although this recipe calls for ground beef, it can be made with ground turkey instead. If you've ever had Skyline Chili or Goldstar from Cincinnati, this recipe is a little different. It has a kick behind it that Skyline and Goldstar don't have.

  • Skyline. Skyline is a household name in Cincinnati. The company was started by a Greek immigrant in 1949, and Skyline now has several locations throughout the city.
  • Gold Star. Gold Star is a contender for the best chili in Cincinnati. This chain is in fierce competition with Skyline, although fans of the chain argue that it has a richer sauce and will save you a buck or two compared to Skyline.
  • Zip's Cafe. Although Zip's is known for their gourmet burgers, the single bowl of chili on the menu is a hidden treasure. Don't be expecting Coneys or 3-ways here; the magic is in the simple chili recipe itself.
  • Pleasant Ridge. This late-night chili shop is open until 4:30am, making it a good stop for not-so-sober patrons to stop by for some greasy food on their way home.
  • Price Hill. This family-owned chili shop boasts large portion sizes and a welcoming atmosphere. For a truly magical experience at Price Hill, try the chili cheese served over their home fries.
  • Blue Jay Restaurant. This unassuming diner isn't known for its chili, but you should still add Blue Jay to your bucketlist. The sharper cheese and slight heat of the chili make the dish stand out from other Cinci options.
  • Empress. Empress Chili has its claim to fame by being the oldest chili shop in Cincinnati. Empress also serves chili pizza—sounds more weirdly delicious the longer that you think about it.
  • Camp Washington. This mom-and-pop shop is decorated to look like a 1950s parlor —featuring checkered floors and booths. Camp Washington is open 24 hours a day, so you can get your chili fix at any time of the night.
  • Chili Time Restaurant. Chili Time puts a unique spin on the Cincinnati tradition with their Chili Cheese sandwich. The chili doesn't have as much spice as many other Cinci places, so it's ideal for visitors that prefer milder dishes.
  • Blue Ash Chili. Blue Ash Chili also offers a 6-way chili, which features fried jalapeño peppers. Guy Fieri ordered the dish when he stopped by for a visit, so you know it's good.

  • In a separate pan, cook the ground beef over medium heat, mashing with a potato masher as it's cooking to result in a very finely ground consistency. To keep the consistency of traditional Cincinnati chili, you are NOT looking to brown the meat. This is why you need the heat lower and continual mashing as it's cooking. If you can have your butcher finely ground the meat, much more than what you typically find in a grocery store, you'll be much closer to the final consistency needed for Cincinnati style chili.

  • Goetta grilled cheese. Who doesn’t love a good grilled cheese? What makes this better is a lovely slice of goetta that has been fried crisp before becoming part of this ooey, gooey, delicious sandwich.
  • Goetta sliders. While these are similar to the grilled cheese, the ketchup and the bun give it a different taste. In fact, when I tried it, I thought it tasted a little like a White Castle cheeseburger.
  • Goetta breakfast casserole. This is one of those recipes that so many families have, and most will not give them up. Fortunately, Melissa and Shelley at Stockpiling Moms were gracious enough to share this one.
  • Goetta hash. This is a simpler version of the breakfast casserole that you can cook on the stove top in your favorite cast iron skillet. You simply cook one pound of goetta and one pound of hash browns.
  • Goetta shepherd’s pie. If you’ve eaten Shepherd’s pie and goetta, you know that goetta is made for this dish. It actually cuts the cooking time because the meat and oats are already cooked.
  • Goetta queso. This dish is so yummy and cheesy, and there are two ways to make it. The first is a stove top version. Cook 1 pound of goetta until crispy.
  • Homemade Cincinnati Chili. If you don’t know The Food Hussy, you need to. Heather Johnson is the face and force of nature behind the Food Hussy and she makes some amazing copycat recipes.
  • Skyline Chili Dip. This might be the most iconic Cincinnati food appetizer ever. Nearly every Super Bowl party has some version of this dish. It’s easy to make.
  • Loaded Skyline Dip. Speaking of making this dish your own, that’s what Karen at Soup Addict did with her Loaded Skyline Dip recipe. While most people serve their dip with regular tortillas, Karen went a step further and used Frito’s Scoops.
  • Meatballs with Montgomery Inn Sauce. Montgomery Inn is a Cincinnati tradition like no other. Presidents and celebrities make special stops to get a taste of Montgomery Inn.

  • Stir in the remaining chili ingredients, breaking up the ground beef with a spatula until it's well crumbled. Simmer for 20-25 minutes or so, until thickened some - you don't want it too thick, there needs to be enough "sauce" to coat the pasta.
