- 1. Place marinade ingredients in a blender and puree until smooth. Add marinade and chicken to a large Ziploc bag. Refrigerate for 6-8 hours, turning occasionally. Remove chicken and discard marinade. Grill over medium heat for 5-7 minutes on each side.
- 2. These are the wraps I made with the grilled chicken. I sliced the breasts, topped them with a black bean and corn salsa, and spooned a cumin sour cream sauce on top. Wrapped it all up in a flour tortilla. Yum!

- Place the sturgeon and the salt in a bowl and cover with water, let sit for about 10 minutes and rinse.
- To make the seasoning mix, put all the ingredients for the mix in a mini food processor and pulse until crushed and mixed. The coriander seeds will not be completely powdered and should be partially crushed. You can also use a mortar and pestle instead of the mini food processor.
- Rub the olive oil and spicy coriander seasoning all over the fish and let marinate in the refrigerator for a couple of hours.
- Pre-heat oven to 400 F (skip if only grilling)
- Heat the grill and place the sturgeon on the grill, grill for about 5 minutes per side.
- Transfer to oven safe dish and bake for about 15-20 minutes.
- Serve immediately with the lime cilantro butter sauce

- Make the cilantro lime marinade. In a small food processor, pulse together the cilantro, lime zest and juice, garlic, olive oil, salt, black pepper, and red pepper flakes. Add additional olive oil as needed until you reach a smooth consistency.
- Marinate. Place the salmon portions in a gallon-sized zip-top bag. Add the marinade to the bag, press out any excess air, and seal. Marinate in the refrigerator for 1-2 hours (not any longer.)
- Preheat. When ready to cook the salmon, prepare your grill for indirect cooking at medium heat. Your target temperature in your grill should be around 375 to 400 degrees F.
- Grill. Remove the salmon from the marinade and place it on your grill, skin side down. Use a spoon to spread any additional marinade on top of the salmon. Grill for 8-10 minutes (without flipping) or until the salmon is done. Your salmon is finished when the internal temperature reaches 145 degrees F. The flesh will appear opaque and flake easily with a fork.
- Enjoy. Serve immediately with freshly sliced lime wedges and additional cilantro, if desired.

- Trim any fat from the chicken thighs and place in a large freezer bag. To the bowl of a food processor, add the lime juice, lime zest, cilantro, olive oil, honey, cumin, salt and pepper and whiz to combine, about 30 seconds. Reserve 1/3 cup of the marinade and pour the rest into the bag with the chicken. Refrigerate for 30 minutes up to overnight.
- Prepare a grill on medium high at 450°F, leaving one side of the grill on low or off. Grill the chicken for 5-6 minutes per side, basting each side the last time it's turned. Once each side has seared, if the chicken pieces seem to be getting too charred, move the chicken pieces to the cooler side of the grill to cook.
- To redistribute the juices, let the chicken sit for 5 minutes before serving. Serve with lime wedges and additional cilantro and drizzle the rest of the reserved marinade before serving.

- Combine chiles, canola oil, cilantro, lime zest and juice, garlic, jalapeno, honey, salt, and pepper in a 1-gallon freezer bag and seal completely. - Season halibut with salt and pepper one hour before cooking. Place in refrigerator.
- Lightly oil a non-stick pan with canola or vegetable oil. Over high heat, sear each side of the halibut filets for five seconds each.
- Searing the filets will cook a fine layer on the outside of the fish so that it will not stick to the barbecue. Because of the moistness and flakiness of halibut, this will prevent the halibut from sticking and falling through the grates of your barbecue grill. This is a great tip when barbecuing all types of fish, but works especially well with halibut.
