Punch is both festive and effortless for large holiday parties and the flavour is fresh and fruity. This recipe can be prepared early in the day and brought out of the fridge when guests arrive.Adapted from The Bartender's Guide by Trader Vic, 1947.Courtesy of Jackie Kai Ellis.

Number Of Ingredients 5

8 oz dark rum
3 oz fresh lemon juice
4 oz simple syrup
12 oz apple juice or apple cider
orange slices and frozen cranberries for garnish

Steps:

  • Combine all ingredients in a punch bowl and stir to combine.
  • Add ice in a clear plastic bag to chill the punch but prevent it from diluting.
  • Add orange slices and cranberries for garnish.

Number Of Ingredients 20

1 cup hot water
1/4 cup granulated sugar
1/4 cup finely chopped fresh ginger
7 whole cloves
1 stick cinnamon
1/4 teaspoon freshly grated nutmeg
1 quart hard cider
1/2 cup applejack
1/2 cup brandy
8 slices Gala, Braeburn, or Red Delicious apple
1 cup hot water
1/4 cup granulated sugar
1/4 cup finely chopped fresh ginger
7 whole cloves
1 stick cinnamon
1/4 teaspoon freshly grated nutmeg
1 quart hard cider
1/2 cup applejack
1/2 cup brandy
8 slices Gala, Braeburn, or Red Delicious apple

Steps:

  • Place the hot water in a small stainless steel saucepan and add the sugar, ginger, cloves, cinnamon and nutmeg to the pan. Bring to a boil, place a lid over the saucepan and reduce to a simmer. Continue to simmer until the flavors have married, about 20 minutes. Remove from the heat, strain through a fine-mesh sieve into a non-reactive bowl and allow to cool. Once cool, add the cider, applejack and brandy to the bowl. Stir to mix well and refrigerate for at least 2 hours, and up to 5 days. Serve in a small punch bowl with an ice mold, if desired, and garnish each glass with an apple slice.

Steps:

  • Combine all ingredients in a pan with the exception of the sugar and ginger ale.
  • Sweetn to taste and then chill.
  • When ready to use add ginger ale and serve.
  • Serve very cold.

  • Combine 4 cups apple cider, 1 cinnamon stick, 3 whole cloves and a pinch of salt in a saucepan. Halve 1 orange; squeeze the juice into the pan and add the peels. Bring to a simmer, then remove from the heat and let steep 10 to 15 minutes. Strain into a pitcher and add 3/4 cup apple brandy or bourbon. Chill at least 2 hours or overnight. Serve in tall glasses on the rocks or reheat and serve warm in punch mugs. Garnish with orange slices.

1 cup sugar
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 bottle (64 ounces) apple cider or juice, divided
1 can (12 ounces) frozen orange juice concentrate
1 liter ginger ale, chilled
Orange slices, optional

Steps:

  • Place sugar, spices and 1 cup cider in a saucepan; cook and stir over medium heat until sugar is dissolved. Remove from heat; stir in juice concentrate until melted., Transfer to a large pitcher. Stir in remaining cider. Refrigerate, covered, until cold., To serve, pour cider mixture into a punch bowl. Stir in ginger ale. If desired, garnish with orange slices.
