LEMON BUTTER SAUCE FOR FISH

Lemon Butter Sauce for Fish image

Recipe VIDEO above (helpful for pre-post browned butter). A Lemon Butter Sauce with Crispy Pan Fried Fish that would be perfectly at home in a posh restaurant, yet is so quick to make at home! Browning the butter gives the sauce a rich, nutty aroma which pairs beautifully with fresh lemon, as well as thickening the sauce and giving it a gorgeous golden colour.

Provided by Nagi

Time 15m

Number Of Ingredients 9

60 g / 4 tbsp unsalted butter (, cut into pieces)
1 tbsp fresh lemon juice
Salt and finely ground pepper
2 x thin white fish fillets (120-150g / 4-5oz each), skinless boneless (I used Bream, Note 1)
Salt and pepper
2 tbsp white flour
2 tbsp oil ((I use canola))
Lemon wedges
Finely chopped parsley, optional

Steps:

  • Place the butter in a light coloured saucepan or small skillet over medium heat.
  • Melt butter then leave on the stove, whisking / stirring very now and then. When the butter turns golden brown and it smells nutty - about 3 minutes, remove from stove immediately and pour into small bowl. (Note 2)
  • Add lemon juice and a pinch of salt and pepper. Stir then taste when it has cooled slightly. Adjust lemon/salt to taste.
  • Set aside - it will stay pourable for 20 - 30 minutes. See Note 3 for storing.
  • Pat fish dry using paper towels. Sprinkle with salt & pepper, then flour. Use fingers to spread flour. Turn and repeat. Shake excess flour off well, slapping between hands if necessary.
  • Heat oil in a non stick skillet over high heat. When the oil is shimmering and there are faint wisps of smoke, add fish. Cook for 1 1/2 minutes until golden and crispy on the edges, then turn and cook the other side for 1 1/2 minutes (cook longer if you have thicker fillets).
  • Remove immediately onto serving plates. Drizzle each with about 1 tbsp of Sauce (avoid dark specks settled at the bottom of the bowl), garnish with parsley and serve with lemon on the side. Pictured in post with Kale and Quinoa Salad.

LEMON BUTTER SAUCE

Lemon Butter Sauce image

Provided by A Family Feast

Categories     sauce

Time 15m

Number Of Ingredients 8

12 tablespoons unsalted butter, cut into thin pats
2 tablespoons white wine (we used Chardonnay)
2 tablespoons finely minced shallots
½ cup freshly squeezed lemon juice
Large pinch kosher salt
Few grinds fresh black pepper
Small pinch cayenne
2 tablespoons fresh flat leaf parsley, chopped fine

Steps:

  • Cut the butter into thin pats and lay out on a dinner plate and place the plate in the freezer.
  • In a medium to large sauté pan, heat over high heat and once hot, add the wine and shallots. (Careful - the wine will splatter.). We do not suggest using a nonstick pan for this recipe.
  • Stir for 30 seconds then add the lemon juice and cook until the lemon juice is reduced by half, about 1-2 minutes.
  • Lower to medium low and start whisking in pats of ice-cold butter a few at a time. Whisk continually and only add the next few pats of butter after the first few have melted. Keep this up until all of the butter is in and whisked into the sauce.
  • Remove from heat and add in the salt, pepper, cayenne and parsley and serve immediately.
  • To hold the sauce warm until serving, heat a pan with a little water to hot. Pour the freshly made sauce into a small metal or glass bowl and place in the water to keep warm. The sauce must stay warm to maintain the emulsification.

EASY LEMON CREAM SAUCE (MULTI PURPOSE)

Easy Lemon Cream Sauce (Multi Purpose) image

Heavy cream based lemon sauce perfect for flat strand pastas such as pappardelle and linguine, vegetables, fish, chicken and even simply prepared red meats

Provided by CraftBeering

Categories     Cooking Tips and How Tos

Time 22m

Number Of Ingredients 5

2 cups chicken stock*
1 garlic clove, minced
1 1/2 lemons, juice of (about 5-6 tbsp, adjust to taste)
1 1/2 cups heavy cream**
1/2 tbsp corn starch (optional)***

Steps:

  • In a sauce pan over medium-high heat combine the chicken stock (or base), minced garlic, lemon juice and heavy cream. Stir well and bring the mixture to a gentle boil.
  • Reduce the heat to medium-low and simmer the sauce, until it thickens to your desired consistency. This may take 20 minutes when using stock because there us more liquid that needs to evaporate, less time when using chicken base.***
  • After you are satisfied with the consistency of the creamy lemon infused sauce, taste it and season with salt and pepper as needed.

LEMON SAUCE (FOR FISH)

Lemon Sauce (For Fish) image

I made this lemon sauce a few days ago for some halibut I pan fried. I thought it came out pretty tasty, so I thought I'd share.

Provided by Ohmikeghod

Categories     < 30 Mins

Time 16m

Yield 4 serving(s)

Number Of Ingredients 5

1 head garlic (approx 9 cloves)
2 tablespoons butter
2 teaspoons flour
2 tablespoons lemon juice
1/4 cup milk

Steps:

  • When I originally wrote this recipe, I really didn't think about the garlic much. I was using peeled garlic. If you use a head of garlic, do yourself a favor: Cut the head in half across the grain, and either use a garlic roaster, or wrap the head in foil tightly and bake for an hour at 250; That will loosen the cloves, and roasting will impart more flavor. Just squeeze each clove into the pan. OR (original instruction) mince the garlic until it's very fine.
  • Melt the butter in a small pan.
  • Add the minced garlic. brown the mixture.
  • Add the flour and whisk to form a roux.
  • Add the lemon juice and milk. Continue whisking until the sauce is smooth.
  • Hey! you're done! Pour a bit over your fish and enjoy!

ROASTED CHICKEN WITH FISH-SAUCE BUTTER

Roasted Chicken With Fish-Sauce Butter image

Roasting chicken thighs in a hot oven is a hands-off way to achieve two of life's greatest pleasures: crispy skin and golden schmaltz. And you want that chicken fat because it will crisp hand-torn bread into croutons. This meal is made even more lovely thanks to a bold but balanced fish-sauce butter that you whip up on the stovetop while the rest of the meal takes care of itself in the oven. Be sure to start with cold butter; the gradual melting of the fat helps thicken the sauce without breaking it.

Provided by Eric Kim

Categories     dinner, weeknight, poultry, main course

Time 45m

Yield 4 servings

Number Of Ingredients 9

4 bone-in, skin-on chicken thighs (about 2 pounds)
Kosher salt and black pepper
2 tablespoons olive oil
3/4 pound bread, crusts removed, bread torn into bite-size pieces (about 4 cups; see Tip)
1 tablespoon dark brown sugar
1 tablespoon fish sauce
1 tablespoon lemon juice
3 tablespoons cold unsalted butter, kept whole
Cilantro leaves with tender stems, for serving

Steps:

  • Heat oven to 450 degrees. Pat the chicken dry with paper towels and season lightly with salt and pepper. (The fish-sauce butter is plenty salty, so don't overdo the salt here.) Arrange the chicken skin-side up on a sheet pan and drizzle the oil over the chicken skin, coating it evenly. Roast until the chicken is light gold and the sheet pan is pooling with hot, rendered chicken fat, about 25 minutes.
  • Take the sheet pan out of the oven, scatter the bread around the chicken and toss gently to coat in the chicken fat. Place the pan back in the oven and roast until the chicken is golden, crispy and sizzling (you'll hear it), about 15 minutes.
  • While the chicken roasts, combine the brown sugar, fish sauce and lemon juice in a small saucepan and bring to a simmer over medium heat. Cook, occasionally swirling the pan or stirring the sauce with a wooden spoon, until bubbling vigorously and the mixture has reduced by about half, 2 to 3 minutes. This part is fun: Turn off the heat and add the butter, constantly swirling the pan or stirring with a wooden spoon, until all of the butter has melted and incorporated into the fish sauce mixture.
  • To serve, scatter the cilantro all over the chicken and bread and spoon some of the fish-sauce butter over each chicken thigh, reserving some to add to each plate for dipping the chicken and croutons while eating (which is divine).

Lemon Garlic Sauce image

This easy lemon garlic sauce only takes 15 minutes to make, and is the perfect accompaniment for fish and seafood. A healthier version of the traditional recipe.

Provided by Tonje

Time 15m

Number Of Ingredients 10

1/2 cup chicken stock
1/2 cup milk
1 tablespoon butter
1 tablespoon all-purpose flour
3 garlic cloves
3 lemons ((juice only))
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon apple cider vinegar
1/2 teaspoon dried parsley

Steps:

  • Melt butter in a pot on the stove top over medium heat.
  • Add flour. Quickly whisk the flour and butter together to form a paste, and cook this for a few seconds while stirring.
  • Combine milk and chicken stock, and pour a splash of the liquid into the pot. Whisk until the liquid is incorporated into the flour paste, then add a little more. Continue to gradually add liquid until the sauce has an even, smooth consistency.
  • Add very finely diced garlic, apple cider vinegar and seasoning to the sauce, and keep whisking. The sauce will gradually thicken. Add additional seasoning, and lemon juice to taste. I like to squeeze half a lemon at a time, and then check to see if more is needed. Serve the sauce immediately.

It is a rich sauce where a little goes a long way. Add it sparingly and drizzle it over a dish rather than pour it. The sauce can also be used as dipping sauce for artichokes.
