PULLED PORK

Pulled pork image

The easiest pulled pork recipe you'll ever make. No tricky measurements involved, minimal ingredients and a mouth-watering smoky barbecue result

Provided by Emma Freud

Categories     Dinner, Main course

Time 8h15m

Number Of Ingredients 10

2 tsp smoked paprika
2 tsp ground cumin
2 tsp pepper
2 tsp brown sugar
1 tsp salt
2 medium mugfuls of cider
boneless shoulder of pork (about 2.5kg)
a mugful of a good smoky barbecue sauce
soft white rolls
coleslaw (see 'Goes well with...' below)

Steps:

  • Mix together 2 tsp each smoked paprika, ground cumin, pepper, and brown sugar, plus 1 tsp salt. Rub over the 2.5kg boneless shoulder of pork.
  • Put the pork in a big casserole dish, skin-side up, and pour in 2 medium mugfuls of cider.
  • Cover with a lid and cook in the oven at 150C/130C fan/gas 2 for anywhere between 4 and 8 hrs until falling apart. Check every few hours in case it gets dry - if it does, add another mugful of cider.
  • Take it out of the oven and put the meat in a big dish, leaving the liquid in the casserole.
  • Cut the skin off, then shred the meat using two forks. Ditch any fatty bits, and skim any excess fat off the surface of the sauce.
  • Add a mugful of a good smoky BBQ sauce to the casserole, mix it in, then ladle some into a bowl for dipping.
  • Put the pulled pork back in the casserole with the juices so it stays moist. Season to taste. Can be made one day ahead.
  • Serve in soft white rolls with coleslaw and the bowl of juices on the side for 'French dipping' the sandwich while you're eating.

JACKFRUIT PULLED "PORK" SLIDERS

Jackfruit Pulled

Trick your taste buds with one of my favorite vegan food hacks of all time. Jackfruit is a magical ingredient in that it has a similar texture to pulled pork and can take on whatever flavor you cook it in. After one taste, I bet you'll be amazed!

Provided by Kardea Brown

Categories     main-dish

Time 1h35m

Yield 12 servings

Number Of Ingredients 15

One 15-ounce can tomato sauce
1/2 cup vegan yellow mustard
1/2 cup firmly packed vegan dark brown sugar
1/3 cup vegan cane sugar
2 tablespoons apple cider vinegar
2 heaping teaspoons garlic powder
2 heaping teaspoons onion powder
2 teaspoons liquid smoke
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1 tablespoon canola oil
1 small onion, sliced (1 1/4 cups)
Two 14.1-ounce cans jackfruit, drained
12 slider buns
Dill pickle chips, for topping

Steps:

  • Make the smoky sweet BBQ sauce: Combine the tomato sauce, mustard, brown sugar, cane sugar, vinegar, garlic powder, onion powder, liquid smoke and smoked paprika in a small saucepan. Bring to a boil, then simmer until thickened, about 30 minutes. Set aside. Season to taste.
  • For the sliders: Heat the canola oil in a saucepan over medium-high heat. Add the onion and cook until it begins to brown, 3 to 4 minutes. Add the jackfruit and 1 1/2 cups of the Smoky Sweet BBQ sauce and bring to a boil. Stir well to combine, then cover and simmer for 20 minutes, stirring occasionally. Add water if the sauce becomes too thick.
  • After 20 minutes, remove the lid and shred the jackfruit with two forks. Increase the heat and cook until the jackfruit is well coated with BBQ sauce and heated throughout, another 3 to 4 minutes. Remove the pan from the heat. Divide the jackfruit evenly among the slider buns and top with pickles.

APPLE CIDER PORK POT ROAST

Apple Cider Pork Pot Roast image

Chunky apples, plus onion, thyme, and cider make this comforting pork braise especially appropriate for the holidays.

Provided by Sabrina Snyder

Yield Serves 12

Number Of Ingredients 8

1 (5-pound; 2.3 kg) boneless pork shoulder (6 pounds; 2.7 kg if bone-in)
1 teaspoon kosher salt
½ teaspoon coarsely ground black pepper
1 tablespoon vegetable oil
2 yellow onions, cut into 2-inch (5 cm) wedges
2 cups (475 ml) apple cider
2 tart apples (I like Granny Smith), cored and cut into 2-inch (5 cm) cubes
2 sprigs fresh thyme or 1 teaspoon dried thyme

Steps:

  • Preheat the oven to 325°F (165°C).
  • Season the pork with the salt and pepper.
  • Heat the oil in a large Dutch oven over medium-high heat. Once the oil is hot, add the pork and brown well on all sides, 3 to 4 minutes per side.
  • Remove the pork and add the onion wedges to the pot. Cook for a few minutes, letting them get a little color but being careful not to let them burn.
  • Return the pork to the pot, placing it on the bed of onions. Add the cider and 1 cup (235 ml) water and bring to a simmer, then wedge the apple pieces under the meat among the onions. Toss in the thyme.
  • Cover and transfer to the oven. Cook for 3 hours, or until the meat is fork-tender, shreds easily, and is a deep brown color; the apples will have caramelized.

3 BEST SUBSTITUTES FOR APPLE CIDER VINEGAR IN YOUR PULLED ...

From cookindocs.com
  • Lemon juice or lime juice. Lemon juice or lime juice can perfectly work as a substitute for apple cider vinegar in pulled pork. The acidity from these citrus fruits can also help break down the pork meat and add an extra flavor to your dish.
  • Wine vinegar. You can also make vinegar from either red wine or white wine. You will need some live vinegar to ferment wine with a proper ratio (like three parts of wine or other alcoholic beverages for one part of unpasteurized vinegar) if you want to make your own wine vinegar.
  • Rice vinegar. Rice vinegar is a staple in Asian cuisine. It is made by fermenting rice or noodles. However, when using rice vinegar for your pulled pork recipe, you better use the unseasoned type instead of the seasoned counterpart.
