SWEET PINEAPPLE CIDER

I think the best thing about this recipe is that you can make it hours ahead of time so you can spend more time with your guests. And you can keep it warm on the stovetop or in a slow cooker throughout the party. -Mary Price, Youngstown, Ohio

Yield 12 servings (3/4 cup each).

Number Of Ingredients 5

2 small apples, divided
10 whole cloves
1 bottle (48 ounces) unsweetened apple juice
4 cans (6 ounces each) unsweetened pineapple juice
2 cinnamon sticks (3 inches)

Steps:

  • Core and cut one apple into 10 slices. Insert one clove into each slice. In a Dutch oven, combine juices. Add apple slices and cinnamon sticks. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until flavors are blended. , Discard apple slices and cinnamon sticks. Core and cut remaining apple into 12 slices. Ladle cider into mugs; garnish with apple slices. Serve warm.

ok, i haven't made this cake in about 8 yrs. just found the recipe again, originally came from my mother, who got it from her mother in law. made it once with my mom and it was wonderful, but took some work. hope you enjoy it as much as i did

2 1/4 cup(s) self rising flour
1 1/2 cup(s) sugar
3/4 cup(s) shortening
3/4 cup(s) milk
1 teaspoon(s) vanilla extract
3 - eggs, separated
TOPPING
2 cup(s) sugar
1 can(s) pineapple,crushed
2 tablespoon(s) water
3 - egg whites

Steps:

  • Grease 2 9" cake pans. Heat oven to 375. Sift flour and measure, then sift together sugar and flour. Add shortening and 1/2 c. milk, vanilla and 1 egg. Beat 2 min. on low. Add remaining milk and the 2 eggs. Beat. Pour into pans, bake 25 - 30 min, or until toothpick inserted comes out clean. Let stand 5 min, remove.
  • TOPPING: Drain pineapple, reserving half the juices. Combine remaining with 2c. sugar and 2 tbs. water in small pot, cook until thickened. Pour slowly over stiffly beaten egg whites. Sprinkle reserved juice over cake layers to soften, distributing pulp over bottom layer. Add frosting, place top layer over, repeat.
