Ingredients

12 oz melted ice cream
2 cups sifted flour
2 lbs sliced into ½ inch rings and separated Spanish onions
8 oz cornmeal

Steps:

Wash the sliced onions in water.
Toss the onion rings in separate bowls of flour, melted ice cream, and cornmeal, while making sure you coat them evenly.
In a large pot, heat vegetable oil to 350 degrees F.
Deep fry the onion rings in vegetable oil for 1 to 2 minutes, or until golden brown.
Drain excess oil. Arrange on a platter and garnish with bell pepper, carrots, and spring onions.
Serve while hot!

2 vidalia onions
2 cups flour
2 cups white cornmeal
4 cups Crisco cooking oil (or enough for your personal fryer)
2 quarts ice water, divided

Steps:

Slice onions 1/2 inch thick.
Place rings into bowl of ice water.
Take out rings one at a time and coat with flour.
Gently dip ring into 2nd bowl of ice water, and then coat with corn meal.
Drop into hot oil and fry until golden.
Drain on paper towels.

2 large sweet onions, sliced
1/2 cup flour (for coating onions)
oil (for frying)

Steps:

Mix egg, oil, and milk on low speed of mixer for 1 minute.
Add dry ingredients and mix until smooth.
Coat onions in flour.
Dip in batter.
When one side is golden turn to the other side.
Fry in hot oil 375* until desired shade of brown.

Place three containers in a row. In the first container, place the flour, in the second container, place the melted ice cream, and in the third container place the cornmeal.
Prepare onion rings by shaking off the water, dip onion into the flour, shake off excess flour. Dip into the melted ice cream, and then dip into the cornmeal. Gently shake off excess cornmeal. Place the onion ring on a cookie sheet to dry for a few minutes before frying.
